SPICED LENTIL TACOS

Steps:
- Heat oil in large skillet over medium-high heat. Cook onion, garlic and salt until onion begins to soften, 3 to 4 minutes. Add lentils and taco seasoning. Cook until spices are fragrant and lentils are dry, about 1 minute. Add broth; bring to a boil. Reduce heat, cover and simmer until lentils are tender, 25 to 30 minutes. Mix sour cream, chile and adobo sauce in a bowl. Uncover lentils and cook until mixture thickens, 6 to 8 minutes. Mash with a rubber spatula. Spoon 1/4 cup lentil mixture into each taco shell. Top with 2 heaping teaspoons sour cream mixture, lettuce, tomato and cheese.
SPICED LENTIL TACOS (VEGETARIAN)
This is a great recipe for those who want a vegetarian meal without fake "meat". This delicious and simple recipe is from Chef Jennifer Iserloh of New York City (aka "Skinny Chef") and was printed in this month's Self Magazine (February 2009). Following the recipe results in an al dente lentil with a little chew to mimic the texture of ground beef. If you want a softer lentil, you can cook them about 15 minutes longer (in step 1) with added broth until soft.

Reduce heat; simmer, covered, until lentils are tender, 25-30 minutes. , Cook, uncovered, until mixture is thickened, 6-8 minutes, stirring occasionally. Mash lentils slightly; stir in salsa and heat through. Serve in taco shells. Top with remaining ingredients.

SPICED LENTIL TACOS RECIPE - PLANT BASED

- Finely dice onion, shred carrots, mince garlic, shred cabbage, and chop cilantro. Halve lime and juice one half. Reserve other half for wedges.
- Heat a large skillet over medium heat. Once hot, add splash of vegetable broth, onion, and garlic. Sauté for 4-5 minutes, stirring frequently, or until tender and slightly browned.
- Next, add carrots, lentils, and vegetable broth. Bring to a boil, then reduce heat to simmer. Add in paprika, cumin, chili powder, tamari, coconut sugar, and nutritional yeast. Stir to combine.
- Cover and cook over medium-low heat for 20 min., stirring occasionally. Then remove the lid and cook for 5-10 minutes more or until the carrots are tender and the color has deepened and all water is absorbed. Stir occasionally and add more broth (or water) as needed if it dries up. Near the end of cooking, add lime juice and stir.
