Quick and Easy, 3 Packet Pot Roast with Carrots and Onions. Mouthwatering, Delicious. Couldn't be easier!

1 2-3 lb Beef Roast
1 Cup Water or Beef Broth
1 pkg Brown Gravy
1 pkg Ranch Dressing Mix
1 pkg Zesty Italian Mix
1 sm bag Baby Carrots
1 sliced Yellow Onion
2 Tbs Corn Starch (*for Gravy)

Steps:

  • In a small bowl combine Brown Gravy, Zesty Italian, and Ranch Mix. Stir to combine.
  • Using 2/3 of the seasoning mixture. Cover roast with seasonings. You can add Salt and Pepper if you wish!
  • In Crock Pot or Instant Pot, pour 1 cup water or beef broth.
  • Use a rack and place carrots and onions on top.
  • Sprinkle remaining seasonings over Carrots and Onions.
  • Place roast on top of vegetables
  • Close Instant Pot lid, make sure pressure valve is closed. Set to Manual for 90 minutes.
  • Crock Pot: Cook on low for 6-8 hours
  • Remove Roast and Vegetables from Instant Pot or Crock Pot.
  • Remove 1- 1 1/2 cups reserve juices
  • In a small saucepan add 2 Tbls Corn Starch to reserve juices and heat over medium/high heat to thicken. Use gravy over roast and vegetables.

1 2-3 lb beef roast
1 TBSP of Olive Oil
1 Cup beef broth
1 pkg brown gravy
1 pkg ranch dressing mix
1 pkg Italian dressing mix
1 lb bag baby carrots
1 lb baby potatoes
1 - 2 TBSP corn starch

Steps:

  • Mix all 3 packets together and mix well so seasonings are all blended.
  • Rub seasoning mixture all over your meat. Coat it well.
  • Turn pot on to saute, add in olive oil and brown meat on all sides.
  • If any bits burnt on the bottom of your pan, remove meat from the pot, set aside. Pour 1 cup of beef broth into your pot and give it all a good scraping, removing all of those yummy bits into your broth. Put meat back into the pot.
  • Set your pot to manual high pressure for 60 minutes. *Do a quick release.
  • Remove your lid and add in your baby carrots and baby potatoes.
  • Set your pot to manual high pressure for 12 minutes. Do a quick release.
  • Remove your meat and veggies from the pot.
  • Place pot on saute and bring broth to a boil
  • Add in cornstarch slurry continue cooking for 1-2 minutes until you reach the desired thickness.
  • Pour juices over the meat and enjoy!

1 teaspoon salt
1 teaspoon dried marjoram
1 teaspoon dried rosemary
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon ground black pepper
½ teaspoon paprika
1 tablespoon vegetable oil
1 (3 pound) beef chuck roast, or more to taste
1 pound baby red potatoes
4 large carrots, chopped into large chunks
1 large yellow onion, sliced
4 cups beef broth
2 tablespoons Worcestershire sauce

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function.
  • Combine salt, marjoram, rosemary, garlic powder, onion powder, black pepper, and paprika in a small bowl. Rub mixture all over roast to coat all sides.
  • Drizzle oil into the preheated pot. Wait 30 seconds, then place roast into the pot; do not move the meat, allowing it to sear for 3 or 4 minutes. Turn the roast and sear again, 3 to 4 minutes. Repeat until all sides are browned, about 15 minutes total.
  • Add potatoes, carrots, and onion to the pot. Pour in broth and Worcestershire sauce. Close and lock the lid; set vent to sealing. Select high pressure according to manufacturer's instructions; set timer for 60 minutes for a 3-pound roast or 80 minutes for a 5-pound roast. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions for 10 minutes. Release remaining pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
  • Transfer roast, potatoes, carrots, and onions to a platter for serving.

This 3-Packet Pot Roast with gravy is tender, flavorful, and super easy to make. It's a set it and forget it meal the whole family will love.The slow cooker or instant pot can take a rather tough cut of meat and turn it into something mouthwatering and delicious! While this simple roast is cooking low and slow, it creates its own scrumptious savory gravy. And after all, gravy makes everything better!

3 pound rump or chuck roast ((or your favorite boneless beef roast))
1 packet beefy onion soup mix (dry)
1 packet brown gravy mix (dry)
1 packet ranch dressing/seasoning mix (dry)
1 cup beef broth
3 tablespoons corn starch
¼ cup cold water

Steps:

  • Place roast in the slow cooker (I use a 6 quart).
  • In a mixing bowl mix 3 packets with 1 cup beef broth and pour over roast.
  • Cover with the lid and cook on low for 8 to 10 hours or on high for 5 to 6 hours.
  • Remove from slow cooker and discard any fat and shred.
  • To thicken gravy, if desired, in a small measuring cup mix 3 tablespoons of corn starch and 1/4 cup of water. Turn the slow cooker to high and pour the slurry in. Stir until combined. Place shredded roast back into the slow cooker and allow to thicken (about 30 minutes).
  • If you want to sear the roast first, turn Instant Pot on Saute. When hot, add 1 tablespoon of vegetable oil and coat the bottom. Add in roast and brown on all sides. (Cut roast in half if larger so it will fit nicely into Instant Pot) - Optional
  • Press "Cancel" and pour beef broth into the bottom of the instant pot and remove any browned bits with a spatula (being sure to get under the roast too). I use a 6 Quart (If using a larger IP add the appropriate amount of liquid called for the size IP you are using).
  • Sprinkle all 3 packets over the roast.
  • Place on lid and make sure valve is in sealing position. Press "Manual Pressure" for 90 minutes.
  • Do a "Natural Pressure Release" for 15 minutes and then open the valve to release the remaining pressure manually.
  • Remove the lid and remove the roast to a serving plate.
  • To thicken gravy add 3 tablespoons of cornstarch to ¼ cup cold water and stir until dissolved. Pour cornstarch slurry into the Instant Pot and turn to saute. Simmer for 5 minutes to thicken.
  • Shred or slice roast and return to Instant Pot once the sauce has thickened.

1 cup salsa
1 ounce dry onion soup mix ((1 packet))
1 ounce dry Italian salad dressing mix ((1 packet))
1 ounce dry Au Jus mix ((1 packet))
2 ½ pounds beef roast (rump roast or chuck roast work great)
1 cup water
12 King's Hawaiian Rolls
4 ounces Swiss cheese slices ((6 slices halved))
¼ cup sour cream
2 Tablespoons chili sauce
1 ½ teaspoons creamy horseradish sauce

Steps:

  • In a medium-sized bowl, whisk together salsa, dry onion soup mix, Italian dressing mix, and Au Jus mix.
  • Place roast inside of the Instant Pot.
  • Pour the salsa mixture on top of the roast.
  • Pour in the water (don't mix it with the salsa mixture, just keep it separate).
  • Place the lid on top of the Instant Pot and move the valve to SEALING.
  • Press the MANUAL (PRESSURE COOK) button and set timer for 60 minutes (or 20 minutes per pound, depending on the size of your roast).
  • When the timer is done, let the pressure do a NATURAL RELEASE (it will take at least 20 minutes, but I even prefer to let the roast sit in there for a couple hours to make sure it is super tender).
  • Remove the lid and shred the roast with 2 forks. Mix the shredded beef in with the liquid in the Instant Pot.
  • Serve the roast on Hawaiian rolls with a piece of Swiss cheese and a spoonful of the homemade creamy sauce on top.
