GARLIC SCAPE GOAT CHEESE DIP
Don't resist the garlicky goodness and spring-fresh flavor of this zippy dip! Serve with fresh vegetables or pita chips. If serving later, refrigerate, and pull out of refrigerator 1 hour before serving.

- Combine goat cheese, cream cheese, 5 garlic scapes, lemon zest, lemon juice, salt, and garlic in a bowl; mix with a fork until blended. Scoop into a serving bowl. Garnish with remaining garlic scape and toasted pecans.

BAKED GOAT CHEESE DIP

- Preheat the oven to 400 degrees F. Combine the goat cheese, cream cheese, parmesan and 2 tablespoons olive oil in a food processor and season with pepper; puree until smooth. Brush a 1-quart baking dish with olive oil, then spread the cheese mixture in the dish, mounding it slightly higher around the edge than in the middle. Bake until golden and heated through, about 15 minutes.
- Meanwhile, combine the tomatoes, chives, vinegar, garlic, the remaining 2 tablespoons olive oil and 1/2 teaspoon salt in a medium bowl. Spoon the tomato mixture on top of the dip. Serve with baguette slices.

Threw this one together for my wife and myself one night, it's become 'the thing I must bring' to every event ever since. The bowl *always* gets finished, no matter how much I make. Don't be shy with the garlic - most people love it STRONG!

- 1. In small saucepan heat oil over medium-high heat. Reduce heat to medium. Add garlic, rosemary, orange zest and red pepper. Cook, uncovered, for 3 to 5 minutes or until garlic is golden, stirring frequently.

MARINATED GOAT CHEESE SPREAD / DIP
A decedent spread that wins raves at potlucks and dinner parties. Rich and flavourful, it's perfect served with whole grain crackers or grilled bread. Thanks to my co-worker Melanie for the AWESOME recipe! Note that 1/2 cup of pesto can be substituted for the fresh herbs - it saves time and waste if you don't have a use for the rest of the herbs!

- Place garlic and oil in a pie plate. Cover and bake at 350° for 30 minutes. , Meanwhile, in a small skillet, saute onion in butter until tender and lightly browned. - Mix tomatoes, onion, basil, garlic, salt, and pepper together in a small bowl. Refrigerate bruschetta for at least 1 hour to allow flavors to blend.
- Remove bruschetta from the refrigerator and transfer to a small saucepan. Add goat cheese and Cheddar cheese. Cook over medium-low heat, stirring constantly, until cheese is melted and mixture is heated through, 15 to 20 minutes.

- Unwrap your goat cheese log and allow it to soften on the counter along with the cream cheese. It doesn't have to be melted, just soft enough to work with. Meanwhile, mine your garlic and fresh herbs.
- Using a food processor or electric hand mixer, combine all ingredients other than the fresh herbs in a bowl and whip until the texture is light and spreadable. This should happen fairly quickly and you will see a "dip" form before your eyes.
- Once the goat cheese dip is blended, use a wooden spoon to fold in the fresh herbs until mixed throughout.
- For serving, drizzle over 1-2 tablespoons of high-quality olive oil and additional chopped herbs. Eat with crusty bread, tomatoes, crackers, or fresh veggie sticks.
