1 package (10 ounces) frozen sweetened raspberries, thawed
2 tablespoons sugar
1 tablespoon thawed orange juice concentrate
2 cups heavy whipping cream
6 ounces white baking chocolate
1 teaspoon vanilla extract
1/4 cup milk chocolate chips
1 teaspoon canola oil

Steps:

  • In a blender, combine the raspberries, sugar and orange juice concentrate; cover and process until smooth. Press through a sieve; discard seeds. Refrigerate sauce. , In a large saucepan cook and stir cream and white chocolate over low heat, until chocolate is melted. Stir in vanilla. Transfer to a large bowl. Cover and refrigerate for 6 hours or until thickened, stirring occasionally. , Beat cream mixture on high speed until light and fluffy, about 1-1/2 minutes (do not over beat). Just before serving, melt chocolate chips and oil in a microwave or saucepan. Spoon 2 tablespoons of raspberry sauce on each plate. Pipe or spoon 1/2 cup chocolate mousse over sauce; drizzle with melted chocolate. Store leftovers in the refrigerator.

1 (10 ounce) package frozen raspberries, thawed
2 tablespoons white sugar
2 tablespoons orange liqueur
1 ¾ cups heavy whipping cream
6 ounces white chocolate, chopped
1 drop red food coloring

Steps:

  • Process berries in a blender or food processor until smooth. Strain mixture into a small bowl, and discard seeds. Add the sugar and liqueur, and stir until sugar dissolves. Makes 1 cup of sauce.
  • In a heavy saucepan on low heat, warm 1/4 cup of the cream and the white chocolate, stirring constantly until chocolate melts. Let mixture cool until it is lukewarm. Stir in 1 tablespoon of raspberry sauce, and the food coloring. Transfer to a large bowl.
  • In a medium bowl, whip remaining 1 1/2 cup cream to soft peaks. Fold into melted chocolate mixture, one-third at a time, until no streaks remain.
  • Layer into parfait dishes, and serve with the sauce. May also be used to fill or ice a cake.

1 cup sugar
Two 4-ounce packages instant chocolate pudding mix
2 pints fresh raspberries, rinsed
20 small dessert goblets

Steps:

  • In a large work bowl, whip the cream with an electric mixer. As cream begins to thicken, slowly add the sugar and continue to whip until soft peaks form. Add the pudding mix and whip just until well blended.
  • Place a few raspberries in the bottom of each glass. Spoon a layer of mousse over berries and repeat layering raspberries and mousse until glasses are filled. Top with a few raspberries, cover with plastic wrap, and chill in refrigerator for at least 1/2 hour or until serving.

250 g white chocolate, chopped
2 medium eggs
1 teaspoon vanilla extract
2 teaspoons gelatin
1/4 cup water
1 pint raspberries
caster sugar, to taste

Steps:

  • Combine the cream and chocolate in a saucepan, and stir over low heat until the chocolate is melted.
  • Blend the eggs and vanilla extract until smooth.
  • Pour in the chocolate mixture slowly and continue to blend as you pour.
  • Now pour the Chocolate Mousse mixture into 6 lightly greased moulds.
  • Cover and refrigerate until set.
  • Prepare the Raspberry Coulis by pureeing the raspberries with caster sugar to taste then sieve.
  • TO SERVE: unmould the White Chocolate Mousses onto serving plates,and pour Raspberry Coulis around each mousse.
  • Garnish each plate with a couple of fresh mint leaves and 2-3 raspberries.

1 teaspoon fresh lemon juice

12 ounces frozen raspberries
1/3 cup granulated sugar
1 teaspoon cornstarch

Steps:

  • In microwavable bowl, with microwave on High (100%), melt the white chocolate, stirring every 30 seconds until smooth (about 2 minutes).
  • Add the marshmallow creme and stir with wooden spoon until blended.
  • In large bowl, beat the cream cheese with an electric mixer on medium speed until creamy.
  • Add the white chocolate mixture and beat until smooth.
  • Stir in the lemon juice.
  • Using a rubber spatula, fold in the nondairy whipped topping.
  • Combine frozen raspberries and sugar in medium saucepan.
  • Bring to a boil over medium-high heat, stirring consrantlv.
  • Set aside about 1 tablespoon of the raspberry liquid.
  • Boil raspberry mixture, stirring occasionally, until volume is reduced by half, about 8 minutes.
  • Combine reserved raspberry juice and cornstarch and mix until smooth; add to raspberry mixture.
  • Cook and stir until thickened, about 1 minute.
  • Remove from heat and let cool.
  • Spoon half of the mousse into eight wine glasses.
  • Layer half of the raspberry compote over the mousse layer.
  • Repeat the layering with the remaining mousse and compete.
  • Cover and chill at least 1 hour.
  • This mousse tastes even better if you allow it to chill overnight.

42 g Sugar
226 g White Chocolate (chopped )
320 g Cream (whipped to stiff peaks)

Steps:

  • Whip heavy cream to medium peaks and place in refrigerator.
  • Melt chocolate and allow to cool to just above body temperature. It should feel warm to the touch.
  • In the bowl of a stand mixer, fitted with the whisk attachment, beat yolks and sugar until tripled in volume and pale yellow. Add chocolate and beat well. This with thicken considerably. If it looks like it is breaking, just keep whisking. Move quickly to ensure it doesn't continue to thicken.
  • Sacrifice some whipped cream by adding a small amount of whipped cream to the chocolate mixture. Fold aggressively with the whisk to incorporate. Quickly then fold the chocolate into the rest of the whipped cream. Spoon immediately into containers. You can also pipe the mousse, but the resulting mousse will be a bit denser.

1 pound white chocolate (valhrona)
4 ounces heavy cream
1-ounce sweet butter
1 1/2 egg yolk
3 1/4 ounces heavy cream, warm
22 1/2 ounces heavy cream whipped, soft peaked
12 broken pieces chocolate phyllo (recipe follows)
4 ounces raspberry sauce
4 mint sprigs and fresh raspberries for garnish
2 cups fresh raspberries
1 tablespoon confectioners' sugar
2 tablespoons fresh lemon juice
1 pound butter
1 cup cocoa powder (brut)
5 sheets phyllo pastry dough
8 ounces granulated sugar (approximately)

Steps:

  • Melt the chocolate in a double boiler. Reserve at room temperature. In a saucepan, add 4 ounces heavy cream and 1-ounce butter, heat until butter is melted. Reserve. In a mixing bowl, add the egg yolks and whisk in the heavy cream and butter mixture, whisk until blended well. Then pour back into saucepan. Place on a low heat, heat until it thickens, be careful not to boil and not to curdle the yolks (making a creme anglaise). Let cool. Place the chocolate into a mixer with a paddle blade, add the creme anglaise, add the warm heavy cream, whip until cool. Fold in the soft peak cream until smooth (about 15 seconds). Place in a tightly covered plastic container, refrigerate overnight. Serve with crispy phyllo and raspberry sauce.;
  • In food processor, combine the raspberries, sugar, and lemon juice. Process to blend. Strain through a fine mesh sieve to remove seeds. Transfer to a sealed container. The sauce may be refrigerated for 2 to 3 days, or frozen up to a month.;
  • Preheat oven to 350 degrees. In a saucepan melt the butter. Remove from the heat and stir in cocoa powder. Take a sheet of phyllo pastry dough and brush with butter/cocoa mixture. Then sprinkle with granulated sugar and add another sheet of phyllo on top. Continue to layer the phyllo and brush with butter/cocoa mixture until 5 layers have been assembled. Place the phyllo layers between 2 pieces of parchment, then sandwich the paper/phyllo between 2 sheet pans. Place in oven and bake for 9 minutes or until crisp. May take longer in a conventional oven. Remove from the oven and let cool. Then remove the parchment paper and break up the phyllo into abstract pieces. On 4 plates, layer the mousse the phyllo then mousse, etc. until 3 layers are complete. Then drizzle the raspberry sauce around the mousse and garnish mint and fresh raspberrries.

2 (6 ounce) containers fresh raspberries
2 ½ ounces white chocolate, or as needed
2 cups all-purpose flour, or more as needed
1 tablespoon white sugar, or more to taste
½ teaspoon kosher salt
4 teaspoons baking powder
5 tablespoons ice cold unsalted butter
¾ cup milk
2 tablespoons sour cream
1 large egg
1 tablespoon milk

Steps:

  • Preheat the oven to 225 degrees F (110 degrees C).
  • Line a baking sheet with a silicone liner.
  • Place fresh raspberries about 1 inch apart on the prepared baking sheet.
  • Bake in the preheated oven for 4 hours, then turn oven off, leaving the berries inside for 8 hours, or overnight.
  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with a silicone liner.
  • Roughly chop dried raspberries into smaller pieces and measure out ½ cup for this recipe. Reserve any extra for another use.
  • Grate white chocolate on the fine side of a grater until you have ½ cup.
  • Whisk 2 cups flour, sugar, salt, and baking powder together in a mixing bowl. Grate cold butter into the flour mixture, tossing every so often to coat it with flour so it doesn't start to clump. When all butter has been added, work it into the flour with a pastry blender. Add grated white chocolate and toss with a fork to incorporate.
  • Whisk ¾ cup milk and sour cream together in a liquid measure, then pour that into the flour mixture. Mix with a fork until everything just barely comes together to form a shaggy dough.
  • Transfer dough to a generously floured work surface and without kneading, push and pack it together with your hands until it holds its shape, adding a little flour if it's too sticky. Press dough into a rectangle, about ¾-inch thick, and roughly twice as long as it is wide.
  • Sprinkle dried raspberries evenly over the dough. Spread berries out almost to the edges and press them into the dough gently. Using a bench scraper, lift one third of the dough from one of the shorter edges and fold it in over the center third; press it down and square off the edges. Repeat with the other side so your scone dough is three layers thick.
  • Cut the rectangle in half with the bench scraper, then cut each half into 2 triangles. Transfer scones to the prepared baking sheet.
  • Whisk egg and 1 tablespoon milk together. Brush egg wash over each scone and sprinkle with sugar.
  • Bake in the upper center of the preheated oven until browned, about 25 minutes.
  • Quickly and carefully transfer to a rack and let cool completely before serving, about 30 minutes.
