3 WeightWatchers Points: Split Pea & Ham soup image

Number Of Ingredients 8

1 onion (roughly chopped)
low-calorie cooking spray
1 large carrot (sliced)
1 stick of celery (chopped)
A few leaves of spring greens (optional)
200 g shredded ham hock
350 g split green peas (rinsed)
1.8 ltr chicken stock (from a cube)

Steps:

  • Spray a large saucepan with the cooking spray and cook the onion on a medium heat until it begins to soften. You don't need to be too precise about the chopping, as it's all going in the blender later.
  • Add the carrot and celery and continue to fry for a few minutes until starting to soften.
  • Then add all the other ingredients.
  • Bring to the boil, cover and simmer for about 45 minutes, until the lentils are soft. Cool slightly then blend in batches and serve straight away.

2 tablespoons butter
½ onion, diced
2 ribs celery, diced
3 cloves garlic, sliced
1 pound ham, diced
1 bay leaf
1 pound dried split peas
1 quart chicken stock
2 ½ cups water
salt and ground black pepper to taste

Steps:

  • Place the butter in a large soup pot over medium-low heat. Stir in onion, celery, and sliced garlic. Cook slowly until the onions are translucent but not brown, 5 to 8 minutes.
  • Mix in ham, bay leaf, and split peas. Pour in chicken stock and water. Stir to combine, and simmer slowly until the peas are tender and the soup is thick, about 1 hour and 15 minutes. Stir occasionally. Season with salt and black pepper to serve.

  • Combine the split peas, water, ham hock, onion, celery, carrot, garlic, thyme and 1 litre (4 cups) water in a large saucepan over high heat. Bring to the boil. Reduce heat to low and simmer, covered, for 1½ hours, skimming any froth from the surface if necessary.
  • Using tongs, remove the ham hock from the soup. Allow to cool slightly before removing the meat from the bone. Discard bone. Shred meat with a fork and set aside. Add ¾ cup (90g) of the frozen peas to the soup and simmer for 10 minutes or until peas are tender.
  • Using a stick blender or food processor, puree soup until almost smooth. Return soup to the pan. Add the remaining peas and shredded meat and stir over low heat until heated through. Season with salt and freshly ground black pepper. Serve.
