APPLE FRITTERS (FRIED APPLE DONUTS)

Apple Fritters (Fried Apple Donuts) image

Old fashioned, quick and easy apple fritters recipe with vanilla glaze, homemade with simple ingredients in 30 minutes. Loaded with apples and cinnamon.

Provided by Abeer

Categories     Breakfast

Number Of Ingredients 15

2 Eggs (Large)
2 tbsp Brown sugar
1 tsp Vanilla extract
1/4 cup Milk (2% or Whole)
1 cup All-purpose flour
2 tsp Baking powder
1.5 tsp Cinnamon powder
2-3 cups Apples (Peeled, Cored, Diced small)
2 tsp Lemon juice
Vegetable oil (Or corn oil or canola oil, For frying)
2 cups Powdered sugar
2-3 tbsp Milk (2% or Whole)
1/2 tsp Vanilla extract
1 cup Granulated sugar
1 tbsp Cinnamon powder

Steps:

  • In a large mixing bowl, add eggs, sugar, vanilla extract, milk and mix until smooth.
  • Add flour, baking powder, cinnamon powder and mix until just combined. Keep aside.
  • In another bowl, mix together apples and lemon juice.
  • Add these lemon apples into the flour mixture and mix everything together with a large wooden spoon or spatula.
  • Heat oil until temperature reaches 375 degrees F. This is very important. Read my tips above to understand the reasoning.
  • Then, scoop out large spoonfuls of this batter and gently slide them into the hot oil.
  • Cook until one side is golden brown. Then, flip it over and cook the other side until golden brown too.
  • Remove them from the oil with a slotted spoon and place them on a cookie tray, lined with paper towels to absorb excess oil and allow them to cool down.
  • While excess oil is being absorbed, prepare glaze by mixing together powdered sugar, milk and vanilla extract until mixture is thick and smooth.
  • Also, prepare the cinnamon sugar by mixing together granulated sugar and cinnamon powder.
  • Dunk each fritter in the glaze to completely coat it. Place fritters on wire rack to air dry and set OR if you are planning on coating the donuts in cinnamon sugar, they need to be coated white they are still hot or else the sugar won't stick to them.
  • Enjoy!

30-MINUTE APPLE FRITTERS

30-Minute Apple Fritters image

Doughnut meets beignet in this quick and easy recipe for 30-Minute Apple Fritters dusted with confectioners' sugar or dunked in caramel.

Provided by Kelly Senyei

Time 30m

Number Of Ingredients 12

Vegetable oil, for frying
2 cups all-purpose flour
2 Tablespoons sugar
4 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup milk
1 large egg
1/4 cup (1/2 stick) unsalted butter, melted
1 1/2 cups peeled and small diced apples (about 2 medium apples, See Kelly's Notes)
Confectioners' sugar, for serving
Deep-fry thermometer

Steps:

  • Line a baking sheet with paper towels.
  • Add several inches of vegetable oil to a large heavy-bottomed stock pot set over medium heat. (There should be at least 3 inches of space between the top of the oil and the top of the stock pot.) Attach the deep-fry thermometer to the side of the pot and begin heating the oil while you make the batter.
  • In a medium bowl, whisk together the flour, sugar, baking powder, cinnamon and salt.
  • In a separate small bowl, whisk together the milk and egg. Add the wet ingredients to the dry then add the melted butter and stir together the batter just until combined. Fold in the diced apples.
  • Once the oil has reached 350ºF, use a small ice cream scoop (or two small spoons) to drop about 1-tablespoon scoops of dough into the oil, careful not to overcrowd the pan. Fry the fritters, flipping them in the oil until they're golden brown on all sides, about 2 minutes total. Using a slotted spoon, transfer the fritters to the paper towel-lined baking sheet. Repeat the scooping and frying process with the remaining batter, returning the oil to 350°F between each batch.
  • Allow the fried fritters to cool slightly before dusting them with confectioners' sugar and serving immediately.

NOTHIN' TO FRET ABOUT APPLE FRITTERS

Nothin' to Fret about Apple Fritters image

Time 18m

Yield 20 apple fritter rings

Number Of Ingredients 7

Vegetable oil, for frying
4 apples, Red or Golden Delicious or, 2 of each
2 teaspoons lemon juice (1 wedge will do)
2 cups complete pancake mix, any brand
1 1/2 cups water
1/2 teaspoon ground nutmeg, or equivalent of freshly grated
1/2 cup confectioners' sugar

Steps:

  • Heat 1-inch vegetable oil on moderate to medium high heat. If you wish to test the oil, add a 1-inch cube of bread to hot oil. If it turns deep golden brown in color in a count of 40, the oil is ready.
  • Core apples with an apple corer. Cut into 1/4-inch thick slices across, forming apple rings. Sprinkle sliced apples with the juice of a wedge of lemon to prevent browning.
  • Mix together pancake mix and water, season with nutmeg. Place confectioners' sugar in a sifter or a tea strainer. Place a piece of cardboard or brown paper sack on a work surface for draining fritters. Working in small batches of 5 to 6 slices, coat rings of apple in batter, and fry for 2 to 3 minutes, until evenly golden brown. Transfer to paper bag or towels to drain. When all the fritters are cooked, let oil cool before discarding.
  • Top fritters with confectioners' sugar and transfer to a serving platter.
