GROUND BEEF GYROS
This is a great summer meal and quick and easy to put together and tastes wonderful. Refreshing served with the cucumber sauce and is even low in fat. I think this came from Quick Cooking. It's a favorite in our house.

Steps:
- In a bowl, combine first 5 ingredients.
- Cover and refrigerate. (If possible overnight).
- In separate bowl, combine ground beef and seasonings.
- Mix well.
- Shape into 4 patties.
- Grill, covered, (you can also use a toaster oven or broil these) over medium to high heat for 10 to 12 minutes or until meat is no longer pink, turning once.
- Cut patties into thin slices.
- Stuff into pitas.
- Add lettuce,cucumber, tomato, and onion.
- Serve with yogurt sauce.
GROUND BEEF GYROS

- In a small bowl, combine the first 5 ingredients. Chill. In a large bowl, combine seasonings; crumble beef over mixture and mix lightly but thoroughly. Shape into 4 patties. , Grill, covered, over medium heat or broil 4 in. from the heat for 6-7 minutes on each side or until a thermometer reads 160°. 20-MINUTE GREEK GYROS WITH TZATZIKI SAUCE
Easy to make Greek gyros that take just 20 minutes from start to finish! We're using a combination of lamb and beef to make these gyros patties tender and delicious. Wrapped inside of a pita and topped with dill tzatziki, this meal it totally weeknight friendly!

- In a large bowl combine the ground lamb, beef, garlic, all spice powder, onions, salt, and pepper. Mix to combine. Shape the meat into 12 small patties. Alternately, you could just shape them into 4-5 larger ones. Set aside.
- In a small bowl, combine the ingredients for the tzatziki sauce. Add salt and pepper to taste. Set aside for serving.
- In a large skillet, heat 1 tablespoon of oil and fry the patties for 3-4 minutes (smaller) and 6 minutes (larger) or until they are cooked to desired doneness.
- to serve: Warm the pita bread, layer with meat patties, sliced onions, tomatoes, and lettuce. Top with tzatziki sauce and serve immediately.
EASY GROUND BEEF GYROS WITH TZATZIKI SAUCE

- Add the ground beef to a skillet over medium-high heat and cook until browned, about 5-7 minutes. Add the seasonings and 1/2 cup of water. Simmer over medium heat until the sauce has thickened around the meat, about 5 minutes.
- While the beef cooks, make the Tzatziki sauce. Start by squeezing the excessive liquid out of the grated cucumber, discarding the liquid. In a small bowl, mix the grated cucumber with the remaining ingredients.
- To assemble a gyro, layer a pita with lettuce, tomato, cucumber, onion, and ground beef, then finish with tzatziki sauce, fresh dill and feta cheese.

- To make the gyro meat, heat the oil in a large skillet over medium heat. Add the onion and cook until just starting to soften, about 3 minutes.
- Add the ground beef and cook until no pink remains.
- Stir in the garlic and cook until fragrant. Season with oregano, salt, and black pepper. Drain off most of the excess fat.
- To serve, pile the meat in warmed pita bread and top with tzatziki, tomatoes, lettuce, and banana peppers if desired.

BEEF GYROS RECIPE WITH AUTHENTIC GREEK TZATZIKI SAUCE
This Beef Gyro recipe with Authentic Greek Tzatziki Sauce is a delicious combination of flavors from red onion, garlic, marjoram, rosemary, oregano, salt and pepper that you can easily make at home.

- Place red onion in a food processor and process until finely chopped.
- Remove the onion from the food processor and place in a tea towel, squeezing to remove all the juices.
- Return the onion back to the food processor with the remaining ingredients and pulse for approximately 1 minute until you get a paste like consistency. TIP: The gyro beef mixture will form together in the food processor, similar to a ball of dough.
- Place mixture in a glass baking dish. Flatten and smooth the meat into a nice meatloaf.
- Place in a water bath and cook at 325°F for 60-75 minutes or you have an internal temp of 165°F-170°F.
- Once removed from the oven, drain the fat.
- Allow to cool for 5-10 minutes and place on a wire rack (I also put a pan under the rack to catch any drippings) and place a heavy object on top to compress the gyros meat. I used a cast iron skillet with 3 cans inside the skillet for additional weight.
- Remove the weight and let rest for 30 minutes.
- Slice the meat into desired sized slices.
- Place meat slices on a baking sheet and broil for 3-5 minutes until crispy!
- Serve in pita bread with lettuce, sliced onion, sliced tomato and this Authentic Greek Tzatziki Sauce.

- Heat oil in a large skillet over medium heat. Add onions first for 3-4 minutes until they start to soften. Then add ground beef and chop into small pieces and cook until no longer pink. A minute before the meat is done, add minced garlic. Drain fat
- Add in oregano, garlic powder, salt and pepper and mix well. Let heat for 1-2 minutes
- Add ground beef to pita pocket, followed by shredded lettuce and tomato.
