This pumpkin bread is beautiful enough to give as a present--and it requires only three ingredients! The secret is in using pumpkin pie filling, which is already generously spiced and sweetened. Combine it with cake mix and you get a ton of flavor with very little effort.

Steps:
- Preheat the oven to 350°F. Line a 9-by-5-by-3-inch loaf pan with parchment paper (see Cook's Note), leaving a 2-inch overhang on the 2 longer sides.
- Whisk together the pumpkin pie mix and eggs in a large bowl until smooth. Whisk in the spice cake mix until just combined and no lumps remain.
- Transfer to the prepared loaf pan, smoothing out the top with a small offset spatula. Bake until deep golden brown and a toothpick inserted in the center comes out clean, about 45 minutes.
- Transfer the pan to a wire rack to cool slightly, about 10 minutes. Use the parchment overhang to lift the pumpkin bread out of the pan and onto the wire rack to cool completely.

Normally, I'm a pretty decent cook, but I've never been able to get pumpkin bread right. This recipe is fool-proof and so easy that my 11-year-old can make it!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan and 24 mini-muffin cups.
- Stir cake mix and sugar together in a large bowl. Beat pumpkin, eggs, and milk with the cake mix mixture until you have a smooth batter. Stir chocolate chips through the batter.
- Drop batter into prepared muffin cups with a small cookie scoop. Pour remaining batter into greased bread pan.
- Bake muffins in preheated oven until tops of muffins are golden and spring back when lightly pressed, 12 to 14 minutes.
- Bake bread in preheated oven until top is golden and springs back when lightly pressed, 55 to 60 minutes.

CAKE MIX PUMPKIN BREAD
I wanted something quick and easy to make that tasted like pumpkin spice. I found this recipe on the internet and it came together quickly and easily. Definitely hit the mark for pumpkin spice taste.

Steps:
- 1. Preheat oven to 350^ and grease (or spray with cooking spray) a 9' x 5" loaf pan.
- 2. In a large bowl, completely mix the box of cake mix and the can of pumpkin, making sure any lumps are broken up and blended in.
- 3. Add 1/2 to 1 cup of semi-sweet chocolate chips and 1/2 to 1 cup chopped pecans (if using); blend well.
- 4. Pour batter into prepared pan (top with additional chocolate chips, if desired) and bake for 50-60 minutes or until it tests done with a toothpick.
- 5. When you remove loaf from oven, allow to sit in pan for around 5 minutes before removing from pan.
- 6. NOTE: I used 1 cup of chocolate chips in the batter. I felt like there were too many. The chocolate flavor overpowered the pumpkin spice flavor. In the future I will only use 1/2 cup. Also, I sprinkled additional chips on top, but this makes it difficult to tip out of the pan without making a big chocolate mess on your counter top.
