Steps:
- Melt the butter in a saucepan over medium heat. Add the oats and toast for about 2 to 3 minutes, stirring often, until fragrant. Add the salt and cinnamon. Turn the heat to low and carefully pour in the water or milk, stirring. Cover and cook for 5 minutes until tender, then remove from the heat. Serve immediately for a chunky texture, or stir in another 1/2 cup milk for a creamier body. The texture is intentionally chewy (not gloppy or soggy!). Top with desired toppings and serve. Store refrigerated for up to 2 week.
- Bring water and milk to a boil. Watch to make sure that it does not boil over. Once just boiling, add the steel cut oats, salt and cinnamon and stir. Bring to a simmer. Simmer 20 to 25 minutes until the oats are creamy and tender. Serve immediately with desired toppings. Stores refrigerated up to 1 week: it will become very thick, so stir in some milk or water when reheating.

Steps:
- First, decide which flavor you are going to make. Then, mix together the dry ingredients in a microwave-safe single serving container such as a jar or zip-top sillicone bags (like we used). If you'd like to prep multiple servings, now is the time to do that!
- Then, add 2/3 cup of liquid (water, or any kind of milk will work) to each serving, stirring dry and wet ingredients together.
- Microwave on high for 90 seconds. Alternatively, you can stir in boiling water and skip the microwave.
- Remove from microwave and stir. Serve, and enjoy.

- To make the instant oatmeal mix, put the oats, dried fruit, nuts, and cinnamon into a large jar or resealable bag with a bit of extra room. Shake well until all the ingredients are thoroughly combined.
- To prepare one serving of oatmeal, scoop 1/3 cup of the Oatmeal Mix into a deep, microwave-safe cereal bowl. (If the bowl is too shallow, the oatmeal may overflow when it cooks.) Add 2/3 cup water and stir well.
- Place the bowl in the microwave and cook on high for about 2 minutes, until the water is absorbed and the oats are tender. Remove the bowl from the microwave and stir in a pinch or two of kosher salt. The oatmeal will thicken as it cools. If you prefer thicker oatmeal, scale back the water by 1 or 2 tablespoons. Add milk and maple syrup.

- Toast Steel Cut Oats: Heat up your pressure cooker over medium heat (Instant Pot: press Saute button). Melt 1 tbsp (14g) unsalted butter in the pressure cooker and toast 1 cup (160g) steel cut oats until fragrant (~ 2 minutes).
- Pressure Cook Steel Cut Oats: Add 2 roughly sliced gala apples, 1 tsp (5ml) vanilla extract, 1 cinnamon stick, ½ tsp nutmeg, ½ tsp allspice, ½ tsp grated fresh ginger, and a pinch of salt in the pressure cooker. Give it a quick mix and pour in 2 ½ cups (625ml) cold water. Make sure all the steel cut oats are submerged in the mixture and nothing is sticking to the bottom. Close lid and pressure cook at High Pressure for 10 minutes, then Full Natural Release (~12 minutes). Open the lid carefully.
- Thicken Oatmeal: The oatmeal will look watery when you first open the lid. Give it a few quick stirs with a silicone spatula to break down the apple slices and thicken the oatmeal.
- Serve: Sweeten the apple oatmeal accordingly with your choice of sweetener (honey/maple syrup/brown sugar). Serve with thinly sliced apple. Drizzle more honey or maple syrup on the oatmeal if desired.
