1/2 teaspoon vanilla
1/4 cup packed brown sugar
1/4 cup butter
2 teaspoons cinnamon
1/4 teaspoon nutmeg
2 tablespoons molasses
1/4 cup walnuts (chopped)
1/2 cup raisins

Steps:

  • Bring water and salt to a rolling boil.
  • Stir in oats, reduce heat and simmer uncovered for 5 minutes, stirring occasionally.
  • Remove from the heat and add the remaining ingredients. Stir until well combined. Serve hot.

3/4 cup dark brown sugar
2 eggs
1 cup butter, softened
3/4 cup granulated sugar
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon cream of tartar
1 teaspoon vanilla extract
2 cups rolled oats
1 1/2 cups all-purpose flour
1/2 cup whole wheat flour
1 cup whole fresh or frozen cranberries

Steps:

  • Step 1: Sweeten the Mix Preheat oven to 350 degrees F. In a mixing bowl cream the butter with the granulated and brown sugars. Add the eggs and stir. Little Hands Tip: After you've gotten the batter started, let your child have a try with the spoon. Take turns mixing until the ingredients are blended together.
  • Step 2: Get Spicy Add the cinnamon, baking soda, cream of tartar and vanilla to the mixture. Then stir in the oats. Little Hands Tips: Let your child help measure out dry ingredients like sugar and oats and put them into the bowl. Talk as you measure together. For example, ask: "If we have one cup of oats, how many more do we need to make two?"
  • Step 3: Red, Healthy Cranberries Mix in the all-purpose and whole wheat flours. Then add the cranberries. Little Hands Tip: Talk about how cranberries are a kind of fruit that is good for our bodies. Cranberries are filled with Vitamin C that helps us stay healthy. What other fruits are red?
  • Step 4: Give It Some Love Put a spoon of batter down on the cookie tray, put the cookie cutter around it and press the dough into the shape (you can flour the cutter to keep it from sticking.) No cookie cutter? No problem! These can be made as traditional round cookies, too. Bake 8 to 10 minutes.
  • Step 5: Share with Someone Special! While you eat these sweet treats with your little sweetheart, talk together about the people you love and care about.

1 cup fine cornmeal
1 cup unsweetened soy milk or coconut milk
3¼ cups water
1 cinnamon stick
¼ teaspoon ground nutmeg
2 teaspoons vanilla extract
¼ cup condensed coconut milk

Steps:

  • In a medium mixing bowl whisk together the cornmeal and 1 cup water, set aside.
  • Bring to a boil the remaining 2¼ cups of water, 1 cup of soy milk and the cinnamon stick.
  • Pour the cornmeal mixture into the boiling water and whisk until well combined, reduce heat and continue to whisk, ensuring no lumps, until the cornmeal thickens. Remove the cinnamon stick.
  • Add the nutmeg, vanilla extract and 3 tbsp condensed coconut milk, cook for another 2 minutes.
  • Remove from the heat and adjust thickness by adding more soy milk if needed. Adjust sweetness by adding more condensed milk if required.
  • Serve hot topped with fresh fruit, a sprinkle of ground cinnamon and a dash of soy or coconut milk.

This oatmeal rolls recipe is great for any time of day! You can have them with your favorite spreads or as a side dish for lunch and dinner.

½ cups (100-110 degrees F) warm water
2 cups room temperature water
1 cup quick-cooking oats
3 tbsp butter
½ oz active dry yeast
1 tbsp sugar
4 cups all-purpose flour
1½ tsp salt
⅓ cup firmly packed brown sugar
1 egg yolk
2 tbsp milk

Steps:

  • Bring 2 cups of water to a boil in a medium saucepan.
  • Stir in the oats and butter. Boil, stirring constantly for 1 minute.
  • Remove from heat and let cool to 110 degrees F.
  • Stir together the yeast, ½ cup warm water, and 1 tablespoon of sugar in a small bowl. Let it stand for 5 minutes.
  • In a large bowl, beat together the oats, yeast mixture, flour, salt, and brown sugar at medium speed with an electric mixer until smooth.
  • Turn the dough onto a lightly floured surface and knead for about 5 minutes until smooth and elastic.
  • Place in a well-greased bowl. Turn to evenly grease the top.
  • Cover and let it rise in a warm place (at 85 degrees F) that is free from drafts, for 1 hour or until the dough is doubled in bulk.
  • Mix the egg yolk and milk then set aside.
  • Once the dough is doubled, punch it down and divide it in half. Shape each portion into eighteen 1½-inch balls.
  • Place evenly into 2 lightly greased 9 by 1.75-inch round cake pans or any other shape of the pan. Sprinkle with quick-cooking oats on top.
  • Cover and let it rise in a warm place again, about 30 minutes or until doubled in bulk.
  • Brush some egg wash and bake at 375 degrees F for 15 minutes or until golden brown. Let cool then serve!
