4 rib lamb chops, 3/4 inch thick
1 teaspoon finely chopped rosemary, plus sprigs for garnish
Coarse salt and freshly ground pepper
1 tablespoon olive oil

Steps:

  • Season lamb chops with rosemary, salt, and pepper. Heat olive oil in a large skillet over medium heat. Add chops; cook until brown on the bottom, 4 to 5 minutes. Turn and cook until a meat thermometer reads 130 degrees (for medium-rare) and chops are evenly browned, 3 to 4 minutes more. Serve garnished with rosemary sprigs.

1 medium onion, sliced
1 teaspoon dried oregano
1/2 teaspoon dried thyme
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon pepper
8 lamb loin chops (about 1-3/4 pounds)
2 garlic cloves, minced

Steps:

  • Place onion in a 3-qt. slow cooker. Combine the oregano, thyme, garlic powder, salt and pepper; rub over the lamb chops. Place chops over onion. Top with garlic. Cover and cook on low for 4-6 hours or until the meat is tender.

8 lamb loin chops
2 tablespoons​ olive oil
4 cloves garlic (minced)
1 teaspoon black pepper
1/4 teaspoon red pepper flakes
1 tablespoon fresh rosemary (chopped)
1/2 teaspoon oregano
1/2 teaspoon thyme
Kosher salt (to taste)
2 tablespoons fresh parsley (chopped)
2 tablespoons fresh mint (chopped)

Steps:

  • Gather the ingredients.
  • In a large baking dish, toss the lamb with the olive oil, garlic, black pepper, red pepper flakes, rosemary, oregano, and thyme.
  • Once the chops are evenly coated, cover and refrigerate for at least 4 hours or up to overnight.
  • Preheat grill, grill pan, or broiler.
  • Remove chops from marinade and salt both sides generously.
  • Cook about 5 to 6 minutes per side for medium-rare (will vary depending on thickness).
  • Scatter with fresh parsley and mint.
  • Let rest for 5 minutes before serving.
