Tex-Mex Mozzarella Stick Nachos image

When you swap in mozzarella sticks for tortilla chips in nachos, you get double the layer of oozy, melted cheese.

One 24-ounce box frozen mozzarella sticks, such as Farm Rich
1 cup queso sauce, warmed
1/3 cup black beans, rinsed and drained
1 avocado, cut into 1/4-inch pieces
1/4 cup fresh cilantro leaves
1/4 cup pickled jalapenos

Steps:

  • Cook the mozzarella sticks according to the package directions, then transfer to a platter. Pour the queso over the top and sprinkle with the black beans, avocado, cilantro and jalapenos.

Enjoyed these nachos as an appetizer in several restaurants in the Dallas/Fort Worth area. These are authentic. No velveeta cheese sauce here. Number of servings is approximate and depends on your appetite.

1 (12 ounce) package yellow corn tortilla chips (like Doritos plain)
2 cups grated longhorn colby cheese or 2 cups grated mild cheddar cheese
1 (4 ounce) can slivered jalapenos or 1 (12 ounce) jar canned jalapeno slices

Steps:

  • Spread tortilla chips on a cookie sheet completely covering cookie sheet so that edges of chips are touching and occasionally overlapping a little.
  • Evenly spread grated cheese over tortilla chips.
  • Last sprinkle slivered jalapenos over grated cheese, if using jalapenos slices, try to place one slice on each chip.
  • Run under broiler, watching carefully until cheese is melted. Serve Hot.

8 cups tortilla chips (about 8 oz.)
1 can (15 oz.) chili
1/2 lb. (8 oz.) VELVEETA, cut into 1/2-inch cubes
2 tomatoes, chopped
2 green onions, sliced
1/2 cup sliced black olives

Steps:

  • Spread half the chips onto large microwaveable plate; top with layers of half each of the chili and VELVEETA. Repeat layers.
  • Microwave on HIGH 3 to 4 min. or until VELVEETA is melted.
  • Top with remaining ingredients.
