MEDITERRANEAN-STYLE BAKED GROUPER WITH TOMATOES AND OLIVES



Mediterranean-Style Baked Grouper with Tomatoes and Olives image

Easy baked grouper recipe, prepared Mediterranean-style with a few spices and bold fresh flavors, including garlic, lemon juice, tomatoes and olives. 1 1/2 lb grouper fillet (or a similar fish)
kosher salt
1 tbsp dry oregano
1 to 1 1/2 tsp ground cumin
1 tsp sweet paprika
1/2 tsp black pepper
4 large garlic cloves, minced
Juice of 1 large lemon, more for later
Extra virgin olive oil (I used Early Harvest Greek extra virgin olive oil)
6 to 8 oz cherry tomatoes, halved
6 to 8 pitted kalamata olives, sliced
Chopped fresh dill (about 1/4 oz or so)

Steps:

  • Heat oven to 400 degrees F.
  • Pat the fish dry and season with salt on both sides. In a small bowl, combine the spices (cumin, oregano, paprika, and black pepper), and season the fish with the spice mixture on both sides.
  • Place seasoned fish in a lightly-oiled baking dish. Add minced garlic on top, then add lemon juice and a generous drizzle of extra virgin olive oil (I used Early Harvest Greek EVOO). Arrange cherry tomatoes and olives on top of the fish fillets.
  • Bake in heated oven for 12 to 13 minutes, or until the fish is opaque and easily flakes with a fork.
  • Remove from heat and add fresh dill (or your favorite herb). Enjoy!

Oven-Baked Grouper Recipe - Easy Crispy Panko Coated Fillets image

Crispy Oven Baked Grouper checks all of the boxes; it's quick, it's easy, it's foolproof, and every last bite of the fish is pure crunchy, flaky, deliciousness!

4 Tbsp unsalted butter
1 clove garlic ((small clove, minced))
3/4 tsp fresh thyme (may substitute 1/4 tsp dried thyme)
1 cup panko breadcrumbs
1/4 tsp kosher salt
1/8 tsp ground black pepper
1/4 cup mayonnaise
1/2 tsp lemon zest
4 fresh grouper fillets ((1 to 1-1/2 inches thick) (skinless))

Steps:

  • Preheat the oven to 300 degrees F.
  • Melt butter in a small skillet over medium heat. Add garlic and thyme and cook for about 30 seconds. Stir in panko and pepper and cook until the panko is golden brown, which should take about 6 minutes. Remove from the heat and set aside.
  • Combine mayonnaise and lemon zest in a small bowl.
  • Use a paper towel to pat dry the fish fillets and season to taste with salt and pepper.
  • Set a wire baking rack inside a rimmed baking sheet and spray with non-stick cooking spray.
  • Use a pastry brush and coat the tops and sides of the fish fillets evenly with a thin layer of the mayonnaise mixture.
  • Dredge the fillets in the panko breadcrumb mixture and make sure the top and sides are evenly coated. Do not coat the bottom.
  • Place the fillet, panko side up, on the baking rack and repeat with the remaining fillets.
  • Bake the fillets for about 30-35 minutes, or until a meat thermometer inserted in the thickest part of the fillet registers 140 degrees and the fish flakes easily when a fork is inserted.

2 lbs grouper fillets
2 tablespoons butter
2 tablespoons olive oil
1 tablespoon grated fresh parmesan cheese
1/4 cup finely chopped fresh herb, such as tarragon,thyme,basil or chives
lime juice (optional)
2 1/2 tablespoons paprika
1 tablespoon salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon red pepper flakes
1 tablespoon dried oregano leaves
1 tablespoon dried thyme

Steps:

  • Add essence ingredients together and mix well, can keep in well sealed jar for 3-6 months.
  • Heat oven to 400.
  • Mix butter, oil, parmesan and essence in small bowl, whisk till smooth.
  • Brush generously on fillets.
  • Bake for 15-20 minutes, basting fish with sauce a couple of times.
  • Top with herbs in last 5 min of cooking, cook till fish is flaky.
  • Sprinkle with lime juice.
  • Serve.

1 teaspoon salt

¼ cup key lime juice
¼ cup fresh orange juice
12 slices lime
8 oranges

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Lightly butter a 9x13-inch glass baking dish and set aside.
  • Season the grouper fillets with salt, lemon pepper, garlic powder, and onion powder; place into prepared baking dish. Spread about 2 tablespoons of softened butter over the top of each fillet. Pour in the lime and orange juices, then cover each fillet with 3 slices of lime and 2 slices of orange.
  • Bake in preheated oven until fish is opaque and flakes easily with a fork, about 15 minutes.

2 tablespoons lemon juice
¼ teaspoon garlic salt
½ teaspoon dried parsley
⅛ teaspoon paprika
¼ teaspoon ground white pepper
2 pounds grouper fillets
2 tablespoons mayonnaise
⅛ teaspoon paprika

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Combine melted butter and lemon juice in a small bowl. Brush 2 tablespoons of this mixture on a piece of foil placed on the broiler pan.
  • Mix together garlic salt, parsley, paprika and white pepper. Sprinkle spice mixture on both sides of fillets.
  • Bake fillets until meat flakes, about 10 minutes. Brush fillets again with lemon butter and spread with mayonnaise. Sprinkle with paprika before serving.

Steps:

  • PLACE FISH IN A LARGE DISH.
  • COMBINE TEQUILA, TRIPLE SEC, LIMEJUICE, SALT, GARLIC AND 1 TABLESPOON OIL AND POUR OVER FILETS AND RUB INTO FISH.
  • COVER AND MARINATE FOR 1/2 HOUR AT ROOM TEMPERATURE, TURNING FILLETS ONCE.
  • COMBINE TOMATOES, ONIONS, CHILES, CILANTRO, SUGAR AND SALT TO TASTE.
  • HEAT THE GRILL TO VERY HOT.
  • REMOVE FILLETS FROM MARINADE, PAT DRY AND RESERVE MARINADE.

Actual cooking time is just 5 minutes or so, depending on the thickness of your fish. If you can't find grouper, try for snapper, amberjack, or mahi mahi. **Prep time does not include marinating time.**

1 tablespoon basil pesto
1 tablespoon butter, melted
1 tablespoon lemon juice, fresh squeezed
1 garlic clove, minced
1/4 cup breadcrumbs

pepper, to taste
red onion, thinly sliced

Steps:

  • Preheat oven to 350. Spray a baking pan with non-stick spray.
  • In a small bowl combine melted butter, lemon juice, and garlic. Once combined stir in bread crumbs. Set aside.
  • Pat fish dry, salt and pepper to taste. Spread with Basil Pesto. Top with thinly sliced red onions. Top this with the bread crumb and butter mixture. Lightly pat into place once all of the mixture is on top of the fish.
  • Bake for 30 minutes or until fish flakes.
