BEEF AND BEAN BURRITO FILLING

I use this as a burrito filling and also for taco salads. Add some lettuce, tomatoes, cheese and sour cream...whatever you like...yum!

Number Of Ingredients 9

2 tablespoons oil
1 onion (chopped)
2 cloves garlic (minced)
2 lbs ground beef
1 tablespoon chili powder
1 teaspoon cumin
salt and pepper (to taste)
1 (8 ounce) can tomato sauce
1 (31 ounce) can refried beans

Steps:

  • Saute the onion in the oil until tender.
  • Add the beef and garlic and cook until meat is no longer pink.
  • Add the chili powder, cumin and other seasonings.
  • Stir in tomato sauce and simmer for five minutes.
  • Add refried beans and cook and stir until well blended.

This is derived and slightly adapted from the "Tofu-chiladas" recipe in "Vegetarian Meals for People on the Go" by Vimala Rodgers. If you're vegetarian, it's a nice alternative to beans in your Mexican food. My husband said I could probably pass it off to meat-eaters as eggs in a breakfast burrito. I would never try to fool anyone, though.

1 lb extra firm tofu
1/2 onion
1 garlic clove, crushed
2 teaspoons extra virgin olive oil
1/8 cup Braggs liquid aminos or 1/8 cup tamari
3 ounces tomato paste
1/2 teaspoon ground cumin
1 -2 tablespoon chili powder
14 ounces canned diced tomatoes

Steps:

  • Optional for more texture: Freeze tofu overnight. Thaw by boiling for 15 minutes.
  • Sauté onion and garlic in olive oil.
  • Add aminos, tomato paste and spices to pan. Stir well.
  • Squeeze the water out of the tofu with a dishtowel. Crumble it finely into the pan (so that it vaguely has the texture of ground beef). Cook, stirring occasionally, a few minutes or until slightly browned.
  • Drain most of the liquid off the tomatoes, then add to pan. Stir and cook a few more minutes.

1 teaspoon cayenne pepper

1 cup salsa

Steps:

  • Heat olive oil in a medium skillet over medium heat.
  • Stir in onion, garlic, and bell pepper; cook until tender.
  • Stir in mashed beans; Add the cornmeal.
  • Mix in cumin, paprika, cayenne, chili powder, and salsa.
  • Cover, and cook 5 minutes.
  • Serve as desired.

1 1/2 c dried aduki/adzuki beans
3 slice bacon, crisply cooked and set aside to drain (which was replaced with pancetta)
1 tsp salt
black pepper, to taste
salt-free garlic powder, to taste (or use fresh)
1 1/2 tsp chili powder, to taste
1 fresh bay leaf
1-2 Tbsp ponzu or mirin
more salt or soy sauce/braggs, for seasoning

Steps:

  • 1. Soak the aduki/adzuki beans in water overnight. After they have soaked, drain them and rinse several times. Place rinsed beans, cooked pancetta/bacon/veg bacon, salt, pepper, garlic powder, chili powder and bay leaf in the crock pot. Pour water over the beans. Cook on LOW 8-9 hours or HIGH 4-5 until tender. If I'm home all day, I set the crock pot to HIGH for about 2-3 hours then LOW until the beans are cooked.
  • 2. Drain and transfer beans to a serving bowl (save some of the cooking liquid to re-heat the beans the next day). Season to taste with salt, pepper, soy sauce/Braggs. Stir in about 2 tablespoons ponzu (mirin, rice vinegar, apple cider vinegar will work).
  • 3. Serve plain or over rice or use as a filling for burritos, steamed tortillas or taco shells. Another way to serve the beans as we did would be as a rice bowl. Line a serving bowl with greens (spinach, collard, turnip greens, arugula, etc.). Add a spoonful of beans, then rice. 1 green pepper, chopped
1 medium onion, chopped
2 garlic cloves, minced
1 envelope taco seasoning
1/4 cup water
8 flour tortillas
1 tablespoon vegetable oil
Taco toppings of your choice

Steps:

  • In a large skillet, cook the meat, green pepper and onion over medium heat until meat is no longer pink; drain. Add the garlic, taco seasoning and water. Simmer, uncovered, for 2 minutes. , Place four tortillas on a microwave-safe plate; microwave on high for 20 seconds. Place 1/2 cup of meat mixture on each; fold over sides and ends. Place seam side down in a greased 13-in. x 9-in. baking dish. Repeat with remaining tortillas and filling., Brush burritos with oil. Bake, uncovered, at 450° for 9-10 minutes or until lightly browned and slightly crisp. Serve with toppings.

This is my burrito filling recipe. I am bad about measuring and even worse about writing it down and changing it as I go. Feel free to taste test this and add stuff that your family enjoys! Please let me know your ideas! This uses my seasoning recipe #166030 166030. If you are using another, use the amounts specified for that particular one. The amount here would equal two, 1.25 store bought packets.

2 lbs ground turkey, cooked or 2 lbs cooked chicken, cut up and shredded
1 white onions or 4 -6 green onions, chopped
3 garlic cloves, minced
5 tablespoons taco seasoning, Using Taco Seasoning - Budget Friendly Seasoning for Tacos, Burritos..
6 ounces beer or 3/4 cup broth
14 ounces stewed tomatoes or 1 pint tomatoes, home canned
1/4 cup fresh cilantro stem, minced
1 teaspoon sugar (optional)

Steps:

  • Saute onion in a large skillet adding garlic and cilantro during the last minute or two.
  • Add meat and seasonings and stir well. Allow to saute for a minute or two, letting the meat absorb some of the flavors.
  • When it seems that it is really dry and the mixture is starting to stick add the tomatoes and liquid and scrape all the browned bits from the bottom. TONS of flavor there. Add sugar if using. ( The sugar makes the tomatoes taste more like home grown and home canned or even organic).
  • Reduce heat to simmer and cook for 20 minutes or so. When you are ready to use the mixture return heat to high and cook off almost all the liquid so that your filling is not runny or wet.
  • Use to fill tortillas or in a casserole.

The East meets the West in this yummy recipe that celebrates adzuki beans! I love all kinds of adzuki confectionery, and wanted to try making a Western cupcake using the same idea. Your adzuki beans MUST be cooked so cooking them isn't accounted for here; and canned adzuki will do in a pinch. These cupcakes came out delicious though with a little more work than my stand-by cupcake recipe. Recipe #461840 pairs well with it because I love green tea and red bean flavors together, but I'm working on an adzuki frosting next! This yields about 24 cupcakes and 6-7 Texas Muffin sized ones.

1 cup cooked adzuki beans (about 1/2 cup dry)
1 cup sugar
1/2 cup canola oil
3 egg whites (or 2 whole eggs)
2 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon cocoa powder
1/4 teaspoon salt
milk, as needed (or soymilk, almond milk, etc)

Steps:

  • Put the adzuki beans in a food processor fitted with a sharp blade, and do a rough chop a few times.
  • Add the sugar, oil, and egg whites and pulse until they are blended together with no sugar clumps or bean pieces sticking out.
  • Sift the flour, baking powder, cocoa powder, and salt together in a bowl, then pour this mixture into the food processor, and mix until a complete batter is formed. Add enough milk (dairy or otherwise) to the mixture to loosen it up enough to be pourable.
  • Pour the batter into lined Texas muffin or regular muffin tins.
  • Bake at 350F for 20-25 minutes or until slightly browned on top.
  • Let cool for at least 45 minutes, or no longer warm, before adding frosting. I'd recommend my Matcha Green Tea Frosting, a good vanilla buttercream, or better yet an adzuki frosting!
