How to make authentic Horchata, Mexico's famous cinnamon-infused rice water drink. It's mild slightly sweet cinnamon infused flavor complements spicy Mexican food. It's one of many delicious aguas frescas prepared in Mexican homes.

1.5 cups rice
1 can (14oz. sweetened condensed milk)
1 cup whole milk
5 cups hot water
2 cinnamon sticks
1 tsp.ground cinnamon (add to taste)

Steps:

  • In a mixing bowl, add the rice, whole milk, sweetened condensed milk, cinnamon sticks.
  • Pour hot water into the mixture and stir until the sweetened condensed milk dissolves.
  • Allow mixture to come to room temperature. Cover the bowl with plastic wrap then refrigerate the mixture for a minimum of 2 hours. Refrigerate up to 12 hours for a more concentrated flavor.
  • Uncover the mixture. Remove the cinnamon sticks and discard.
  • Strain the mixture to separate the rice. Reserve the liquid.
  • Add the rice and 1.5 cups of the strained liquid to your blender. Blend for 3 minutes until the rice is liquefied.
  • Strain the blended rice back into the reserved liquid. Blend the horchata mixture again if the mixture is gritty.
  • Serve over ice with a sprinkle of cinnamon.

1 cup long-grain white rice (uncooked)
1 cinnamon stick (approximately 5 inches, broken into several pieces)
1 teaspoon ​ lime zest
5 cups drinking water (divided)
1/2 cup granulated sugar

Steps:

  • Gather the ingredients.
  • Pulverize the rice in a blender until it reaches a floury consistency.
  • Toss it with the cinnamon stick and lime zest, and let it rest in an airtight container at room temperature overnight.
  • Put the rice mixture back in the blender and blend it until the cinnamon stick pieces get fully broken down.
  • Add 2 cups of water to the mixture and stir it.
  • Put it in the refrigerator to soak for 2 hours.
  • Strain the liquid into a pitcher or bowl through a fine sieve or a few layers of cheesecloth, squeezing frequently to remove as much of the milky rice water as possible.
  • Add the remaining 3 cups of water and the sugar; stir until the sugar dissolves.
  • Refrigerate the horchata until completely chilled.
  • Serve it over ice, if desired.

2 cups long grain rice
1 stick Mexican Cinnamon
4 cups hot water
8 cups extra water to finish the drink
3/4 cup sugar
2 tsp vanilla extract
1 cup milk (2% or whole)
Ice cubes to serve

Steps:

  • Place the rice and cinnamon stick in a large glass bowl and add the 4 cups of hot water. Cover the bowl with a dish or plastic wrap, then let it soak overnight, or at least 8 hours. *Please see NOTES
  • The next day, pour the rice, cinnamon, and water into your blender and process until it becomes a smooth, watery paste.
  • Using a strainer or sieve, strain the mixture into a wide mouth pitcher, stirring to help the liquid pass through.
  • Add the milk (if using), vanilla extract, and the rest of the water. Stir in the sugar, adjusting the amount to fit your taste. Let the drink chill in the refrigerator. Stir the Horchata before serving, since the rice mix tends to settle at the bottom. Serve in glasses with ice cubes.

5 cups water (divided (see note 1))
1 cup long-grain white rice
2 cinnamon sticks (broken (see note 2))
14 ounces sweetened condensed milk
2 teaspoons vanilla extract

Steps:

  • In a medium bowl, add water, rice, and cinnamon sticks. Soak for 2 hours. Transfer to a blender and process until smooth (do not remove the cinnamon sticks).
  • Pour through a fine-mesh strainer. Stir in sweetened condensed milk, vanilla and the remaining 2 cups water. Serve over ice or chill until serving time.

1 cup uncooked long grain white rice
3 ½ cups cold water
1 (12 fluid ounce) can evaporated milk
½ cup white sugar
½ teaspoon ground cinnamon
1 teaspoon vanilla extract

Steps:

  • Place the rice in a bowl with enough water to cover it and let it soak overnight.
  • Strain the rice and discard the water. Stir the cold water and evaporated milk together. Place the drained rice into a blender along with half of the diluted milk. Blend until the rice is finely ground, about 30 seconds. Add the sugar, cinnamon, and vanilla; blend well. Pour in the remaining diluted milk; blend.
  • Line a strainer with two layers of cheesecloth. Place the strainer over another bowl to catch the liquid. Strain the rice milk through the cheesecloth, discard the solids. Repeat the process if necessary. Serve over ice.

2 cups white rice ((long grain))
1 cinnamon stick
4 cups hot water ((for soaking))
1 cup whole milk ((or 2%))
2 tsp vanilla extract
8 cups water ((to make drink))
3/4 cup sugar
Ice ((for serving))

Steps:

  • Place the rice, cinnamon stick, and 4 cups of hot water in a large bowl.
  • Cover with plastic wrap and soak overnight.
  • Overnight is best, or 8 hours minimum.
  • When ready, add the soaking mixture (rice, cinnamon, and water) into a blender.
  • Blend until smooth.
  • Strain into a bowl.
  • Add the liquid into a large pitcher.
  • Add the milk, vanilla, the rest of the water, and sugar to the pitcher.
  • Stir and taste for good measure.
  • Chill in the refrigerator.
  • Stir well before serving over ice.

This Horchata is the kind that is served in "neverias" or ice-cream shops in Mexico. It is creamy and easy to do. Grinding the rice twice brings out all the starch and flavor. Prep time is the time needed for the rice to soak. One reviewer stated that I don't know what I'm talking about and that the rice should be soaked overnight...if you choose to soak it longer, the result will be the same and you will still need to strain it as stated---twice. I do know what I'm talking about: I'm Mexican and live in Mexico.

3/4 cup rice
2 teaspoons ground cinnamon or 1 in cinnamon stick
1 1/2 teaspoons good vanilla (Mexican is best)
1/2-3/4 cup sweetened condensed milk
water, as necessary

Steps:

  • Rinse the rice in a colander. Place in a blender and add enough water to cover by an inch; soak 5 or 10 minutes. Add the vanilla and cinnamon and blend until finely ground. Drain the liquid through colander into a pitcher.
  • Return the ground rice to the blender. Add the condensed milk and about 2 cups water and blend again. Drain into the pitcher. Discard any remaining rice.
  • Add more water to the pitcher, one cup at a time, until it has the right amount of sweetness for you. Add ice and serve cold.
  • Note: you can add 1 cup sugar or so and 1 cup milk, instead of the sweetened condensed milk . I suppose you could use rice or even soy milk, but I haven't tried it.
