CINNAMON SWIRL BUNDT COFFEE CAKE
A friend of mine gave me this recipe years ago. Sometimes I lower the fat content by using fat-free sour cream or yogurt instead of the sour cream. Enjoy! This can also be made into small loaf cakes which can be frozen easily.

Steps:
- Preheat oven to 400 degrees F (205 degrees C). Grease a 10-inch bundt pan.
- Beat butter and sugar with an electric mixer in a large bowl until light and fluffy. The mixture should be noticeably lighter in color. Add eggs one at a time, allowing each egg to blend into the butter mixture before adding the next. Mix in vanilla.
- Combine flour, baking soda, and baking powder. Pour flour mixture into batter alternately with the sour cream, mixing until just incorporated. Fold in walnuts, mixing just enough to evenly combine. Pour half the batter into the prepared pan.
- Mix the remaining 1/4 cup of white sugar with the cinnamon.
- Sprinkle cinnamon sugar over the batter in the pan. Drop remaining cake batter in heaping spoonfuls over filling, covering it as best you can.
- Bake in preheated oven for 8 minutes. Lower heat to 350 degrees F (175 degrees C) and bake for an additional 40 minutes, or until a tester comes out clean.

AIR FRYER CINNAMON NUT SWIRL MUG CAKE
Steps:
- In a small bowl, mix the flour, brown sugar, baking powder, ground cinnamon, crushed walnuts, melted butter, and milk. Mix well. Pour the batter into greased ramekins.
- In a small bowl, mix the cinnamon swirl ingredients and then mix them into the batter. Place the ramekins into the air fryer basket, set the temperature to 320 degrees F for 5-8 minutes.
- While the cake is air frying, in a small bowl, mix the milk and powdered sugar, and then let the cakes cool for a couple of minutes, and then drizzle the icing over the cakes.

AIR FRYER CINNAMON-SWIRL BUNDT COFFEE CAKE
Steps:
- Start by making the cinnamon swirl, which will be added in later. In a small mixing bowl, mix the brown sugar, ground cinnamon, salt, and sour cream. Mix well. Set aside.
- The cake mixes the cake flour, salt, baking powder, baking soda, and sugar in one mixing bowl. In another bowl, mix the butter, oil, eggs, vanilla extract, and sour cream.
- Mix the wet ingredients into the dry ingredients.
- Spray your Bundt Cake pan with cooking spray.
- Add 1/2 of your batter into the prepared pan. Then add all of the cinnamon swirl ingredients, and then add the rest of the cake batter.
- Place the filled Bundt cake pan into the air fryer basket.
- Set the timer for 15-30 minutes at 320 degrees F. The exact time will depend on which air fryer you own and what size cake pan you are using.
- Let the cook cool completely before drizzling the caramel glaze on top.
- Then plate, serve, and enjoy!

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10-cup Bundt pan.
- Mix white sugar, flour, 3/4 cup cinnamon, and 3 tablespoons non-dairy butter together in a stand mixer until well blended. Transfer to a bowl.
- Mix 1 cup brown sugar, 2 tablespoons cinnamon, cocoa powder, and 1/4 teaspoon salt together in a stand mixer until well blended. Transfer to a separate bowl.
- Measure 1 1/2 cups Lactaid® milk in a 2-cup measuring cup. Stir in lemon juice and cream of tartar.
- Mix cottage cheese, 1 1/2 cups white sugar, and 1/3 cup brown sugar together in a stand mixer. Whip until mixture is smooth and creamy. Add non-dairy butter or margarine and whip until smooth. Add eggs one at a time, beating well before adding the next one. Mix in vanilla and maple extracts and salt. Mix in 2 cups flour.
- Pour milk mixture into the mixer; mix well. Add remaining 2 cups flour and baking powder; blend well.
- Pour 1/3 of batter in prepared Bundt pan. Top with 1/2 of the swirl mixture.
- Pour another 1/3 of the batter over the filling. Top with remaining swirl mixture. Evenly pour in remaining batter.
- Gently swirl the batter with a knife being careful not to overdo the swirl. Top the batter with the cinnamon topping.
- Bake in preheated oven until a toothpick inserted in the center comes out clean, 60 to 90 minutes. Cool and remove from pan.
