AIR FRYER FROZEN BURRITO
It's so easy to make a frozen burrito in the air fryer! Crispy on the outside, these frozen burritos make a filling snack that you can enjoy as is or dipped in salsa and/or sour cream!

Steps:
- Preheat the air fryer to 380 degrees Fahrenheit.
- When the air fryer is hot, add in the frozen burritos. There's no need to spray them with oil first.
- Cook the burritos for 13-15 minutes total. Flip them every 5 minutes to allow for even cooking. Your cook time can vary slightly by air fryer and burrito brand. The internal temperature should be 161 degrees Fahrenheit (this can also vary by brand - so check the packaging if you're unsure).
- Once fully heated through, remove the burritos from the air fryer. Let them sit for a minute since the filling can be very hot. You can enjoy them as is or dip them in salsa and/or sour cream.

- Remove the frozen burritos from the packaging and place into the air fryer basket on a bed of foil.
- Air fry frozen burrito for 6 minutes at 180c/360f before serving.
- For large frozen burritos place in the air fryer basket (no need for foil) and air fry for 18 minutes at 160c/320f to defrost in the middle.
- Then finish with a further 17 minutes at 180c/360f before serving.

MAKE-AHEAD AIR FRYER BREAKFAST BURRITOS
Sausage, egg, and cheese burritos made ahead of time that you can grab out of the freezer, pop in the air fryer, and be on your way in no time. Don't forget the salsa!

- Crumble sausage into a large skillet over medium-high heat. Cook until no longer pink, about 10 minutes. Transfer to a large bowl using a slotted spoon.
- Reduce heat to medium. Pour beaten eggs into the skillet and season with salt and pepper. Cook for 3 minutes. Stir and cook for 2 minutes more. Turn heat off. Stir one last time, breaking up larger pieces. Pour into the bowl with the sausage, add cheese, and stir to combine.
- Lay out 1 tortilla on a clean work surface. Place 1/4 cup of the sausage-egg mixture on the bottom third of the tortilla, closest to you. Fold the end of the tortilla over the mixture. Fold in both sides of the tortilla over the filling, making an envelope shape. Tuck, roll, and place on a baking sheet seam side down. Repeat with remaining tortillas and filling.
- Place baking sheet into the freezer for 2 hours. Transfer burritos to a covered freezer-safe container until ready to serve.

AIR FRYER CHILE VERDE BURRITOS
While thinking of a way to use up leftover pulled pork, I remembered a dish I often had growing up in Colorado. While not quite the same, it inspired this recipe which was different and a great way to use it up. Serve with additional salsa verde for dipping if desired.

- Preheat an air fryer to 400 degrees F (200 degrees C) according to manufacturer's instructions.
- Combine pulled pork, salsa verde, and cojita cheese in a bowl. Stir until evenly combined.
- Place a heaping tablespoon of filling into the bottom half of a tortilla. Make 2 folds on either side of the large fold, creating an envelope shape. Roll it up using the tips of your fingers to tuck the filling in as you go. Repeat with remaining tortillas.
- Spray the basket of the air fryer with nonstick cooking spray. Place some burritos in the basket seam side-down, making sure to not overcrowd. Spray the tops of the burritos with cooking spray.
- Air fry for for 6 minutes. Repeat with remaining burritos. Serve with additional salsa verde for dipping if desired.
