1 tablespoon white miso
1 tablespoon honey
1 teaspoon minced garlic
1 teaspoon minced ginger
1 lb raw salmon
4 cups Brussels sprouts, trimmed and quartered
1/4 teaspoon kosher salt

Steps:

  • To make the glaze, combine miso, honey, garlic and ginger in a small bowl and whisk well; set aside.
  • Set the air fryer to 350 degrees F and spray the inner basket of the air fryer with nonstick cooking spray.
  • Place salmon in the basket and cook for 6 to 8 minutes.
  • Pause the machine, spread the miso glaze over the salmon.
  • Add the Brussels sprouts to the basket, spreading them around the salmon; season with salt.
  • Continue to cook for an additional 5 to 7 minutes or until salmon is cooked through and Brussels sprouts are slightly tender.

¼ cup unsweetened pineapple juice
2 tablespoons brown sugar
1 tablespoon soy sauce
1 tablespoon wasabi
1 (6 ounce) salmon fillet
¼ teaspoon seafood seasoning (such as Old Bay®), or to taste
¼ teaspoon smoked paprika, or to taste

Steps:

  • Line a baking pan small enough to fit into your air fryer with aluminum foil and spray with cooking spray.
  • Combine pineapple juice, brown sugar, soy sauce, and wasabi in a glass or ceramic bowl large enough to fit the salmon fillet. Add salmon and lightly cover with plastic wrap. Marinate for 20 minutes.
  • Meanwhile, preheat the air fryer to 350 degrees F (175 degrees C).
  • Transfer salmon to the prepared baking pan and spoon sauce mixture over fish. Sprinkle with seafood seasoning and paprika.

We cook the salmon and Brussels at the same time, and make a tangy lemon-honey dressing in the meantime. Pistachios, raisins, mint and dill add to the bright flavors of this speedy and delicious meal.

1/4 cup golden raisins
1/2 cup boiling water
20 ounces brussels sprouts, trimmed and cut into 1/4-inch pieces
1 tablespoon plus 1 teaspoon olive oil
Kosher salt and freshly ground black pepper
Two 6-ounce skinless salmon fillets
Zest and juice of 1 lemon
1 tablespoon honey
1 tablespoon whole-grain mustard
1/2 cup dill, torn
Leaves from 1 bunch mint (about 1 cup), torn
1/3 cup pistachios, coarsely chopped

Steps:

  • Preheat an air fryer to 400 degrees.
  • Combine the raisins and water in a small bowl and set aside to soak.
  • Place the Brussels sprouts in a medium bowl. Add 1 teaspoon of the olive oil and a generous amount of salt and pepper and toss to combine.
  • Brush the salmon with the remaining 1 tablespoon oil, then sprinkle generously with salt and pepper. Place in the center of the air fryer basket and set the timer for 9 minutes. After 5 minutes, flip the salmon and distribute the sprouts around the fillets. Close the air fryer and finish cooking.
  • Combine the lemon juice, lemon zest, honey, mustard and a pinch of salt in a small bowl or in a jar with a tightly fitting lid and whisk or shake to combine. Taste and adjust the seasoning if necessary.
  • Drain the raisins and place them in a medium bowl. Add the sprouts, dill, mint and half of the dressing and toss to coat. Add more dressing to taste. Divide the sprouts between two plates and top with the pistachios and salmon fillets.
