These easy to make salmon croquettes are just as tasty as pan-fried but they are grease free and oil free. That's thanks to an air fryer!

1 (14.5 ounce) can salmon, drained and flaked
1 large egg, beaten
¾ cup panko bread crumbs
½ cup diced onion
⅓ cup mayonnaise
½ lemon, juiced
1 teaspoon dried dill weed
1 teaspoon seafood seasoning (such as Old Bay®)
salt and freshly ground black pepper to taste
avocado oil nonstick cooking spray

Steps:

  • Combine salmon, egg, panko, onions, mayonnaise, lemon juice, dill, seafood seasoning, salt, and pepper in a bowl. Mix to combine and shape into 6 equal-sized patties.
  • Preheat the air fryer to 400 degrees F (200 degrees C). Line air fryer basket with parchment paper and spray with avocado oil.
  • Place salmon croquettes into the basket and spray with avocado oil.
  • Air fry until croquettes are golden brown, 8 to 10 minutes. Flip croquettes over, spray with avocado oil, and air fry an additional 4 to 7 minutes. Cook in batches if necessary.

½ cup mayonnaise
1 teaspoon finely minced garlic
½ teaspoon fresh lemon juice
2 pinches Cajun seasoning
12 ounces salmon, minced
1 tablespoon snipped fresh chives
1 teaspoon dried parsley
1 teaspoon finely minced garlic
½ teaspoon salt
1 tablespoon all-purpose flour, or more as needed
1 lemon
cooking spray

Steps:

  • Mix mayonnaise, garlic, lemon juice, and Cajun seasoning together in a small bowl and refrigerate dipping sauce until needed.
  • Place salmon, chives, parsley, garlic, and salt in a medium bowl and mix well. Add flour and mix well. Divide into 4 equal portions; mold into patties.
  • Preheat air fryer to 350 degrees F (175 degrees C). Cut lemon into 4 slices.
  • Place lemon slices into the bottom of the air fryer basket and place salmon patties on top. Lightly spray patties with cooking spray.
  • Place the basket into the preheated fryer and drop the temperature to to 275 degrees F (135 degrees C).
  • Cook in the air fryer until an instant-read thermometer inserted into the center of a patty reads 145 degrees F (63 degrees C), 10 to 15 minutes. Serve with sauce.
