Air Fryer Squash (Summer Squash/Yellow Squash) is a great and healthy summer dish that you can whip up in the air fryer in minutes!

2 medium-sized summer squash
1 to 2 tablespoons olive oil
1 teaspoon dried parsley or basil
salt and pepper to taste
Shredded Mozzarella Cheese
Fresh Parsley or Basil

Steps:

  • Start by cutting your summer squash into 1/2 to 1/3 inch pieces. Then place them into a large bowl. Add the olive oil, salt, black pepper, and dried parsley or dried basil. Mix well to coat all of the summer squash.
  • Add the squash into the air fryer basket, set the temperature to 400 degrees F, air fryer setting, cook for 10-12 minutes, or until golden brown. Shake the basket several times during the cooking process so all of the squash gets perfectly cooked.
  • Drizzle the shredded mozzarella cheese over them right after removing the squash from her air fryer basket. Sprinkle with fresh herbs.
  • Plate, serve, and enjoy!

This simple side dish comes together in a flash and is a great way to use your yellow squash abundance from the garden.

2 tablespoons olive oil
½ teaspoon paprika
½ teaspoon garlic powder
½ teaspoon parsley flakes
¼ teaspoon salt
⅛ teaspoon freshly ground black pepper
2 small yellow squash, cut into 1/2-inch slices
3 tablespoons shredded Parmesan cheese

Steps:

  • Preheat air fryer to 380 degrees F (190 degrees C).
  • Whisk olive oil, paprika, garlic powder, parsley, salt, and pepper in a large bowl until smooth. Add squash rounds and stir until evenly combined.
  • Place squash in the basket of the air fryer making sure to not overcrowd. You will likely need to do this in 2 batches depending on the size of your air fryer. Cook for 5 minutes.
  • Flip squash over and sprinkle Parmesan cheese over the top. Cook for 2 minutes more or until cheese has melted and starting to brown.

2 tablespoons freshly squeezed lemon juice
2 tablespoons olive oil
½ teaspoon salt
¼ teaspoon garlic powder
2 medium yellow squash
1 small onion, cut into 1/2-inch wedges
3 tablespoons freshly grated Parmesan cheese

Steps:

  • Preheat the air fryer to 400 degrees F (200 degrees C).
  • Whisk together lemon juice, olive oil, salt, and garlic powder for the marinade in a large bowl.
  • Cut yellow squash into 1x3-inch fingers and add to the bowl with the marinade. Add onion and toss to coat, separating onion layers. Sprinkle evenly with Parmesan cheese. Place vegetables in air fryer basket, taking care not to overcrowd vegetables. You may need to do 2 batches, depending on the size of your air fryer.
  • Air-fry for 5 minutes. Shake air fryer basket, then continue cooking until vegetables are slightly soft and edges are beginning to char, an additional 5 to 7 minutes.
