1 medium butternut squash, cubed (3/4-inch; about 4 cups)
2 teaspoons extra-virgin olive oil
½ teaspoon ground paprika
¼ teaspoon salt
¼ teaspoon ground pepper
⅛ teaspoon garlic powder

Steps:

  • Preheat air fryer to 400°F for 3 minutes. Meanwhile, toss squash, oil, paprika, salt, pepper and garlic powder together in a large bowl.
  • Lightly coat the fry basket with cooking spray. Add the prepared squash to the basket; cook for 10 minutes. After 10 minutes, open the fryer and lightly toss the squash to redistribute; cook until lightly browned and crispy on edges, about 10 minutes more.

3 tablespoons olive oil
1/2 teaspoon salt

Steps:

  • Preheat air fryer to 350°. Place squash in a large bowl. Add oil and seasonings; toss to coat., In a shallow bowl, mix bread crumbs and cheese. Dip squash in crumb mixture to coat both sides, patting to help coating adhere. In batches, arrange squash in a single layer on tray in air-fryer basket. Cook until squash is tender and coating is golden brown, about 10 minutes.

Honeynut squashes are the tiny brown squashes that look kind of like miniature butternut squashes. The flesh is a bit darker and very sweet. This simple preparation is easy, delicious, and makes a fun presentation for dinner guests on Thanksgiving or for any fall or winter meal. I made mine in my Ninja® Foodi™ digital air fryer, and my instructions are rather specific for that configuration. Adapt accordingly for your oven or air fryer, which also may need to be preheated (the Ninja® Foodi™ heats so fast that no preheating is needed).

2 medium honeynut squashes
4 teaspoons butter
¼ teaspoon ground black pepper
¼ teaspoon sea salt
¼ teaspoon ground Saigon cinnamon
4 teaspoons maple syrup
2 tablespoons chopped pecans

Steps:

  • Scrub any dirt off the squashes, slice them in half lengthwise, remove the seeds, and lay them cut-side up on a cutting board.
  • Put 1 teaspoon butter in the cavity of each squash half, and sprinkle with salt, pepper, and cinnamon. Place them directly on the air fryer basket pan.
  • Set air fryer to air-roast at 400 degrees F (200 degrees C) and cook until the squash is tender, about 25 minutes. Drizzle with maple syrup and sprinkle with chopped pecans if desired.

This is the easiest and fastest way I have found to cook a spaghetti squash. Cutting them in half was intimidating for me until I discovered the microwave trick, which makes cutting them in half a breeze.

1 (3 pound) spaghetti squash
1 teaspoon olive oil
¼ teaspoon sea salt
⅛ teaspoon ground black pepper
⅛ teaspoon smoked paprika

Steps:

  • Using a sharp knife, make a dotted line lengthwise around the entire squash. Place whole squash in the microwave and cook on full power for 5 minutes. Transfer to a cutting board and cut the squash in half lengthwise, using the dotted line as a guide. Wrap one half in plastic wrap and refrigerate for another use.
  • Spoon pulp and seeds out of remaining half and discard. Brush olive oil over all of the flesh and sprinkle with salt, pepper, and paprika.
  • Preheat an air fryer to 360 degrees F (180 degrees C). Place spaghetti squash half skin side-down in the basket. Cook for 20 minutes.
  • Transfer to a dish and fluff with a fork to create 'noodles'.
