Air-Fried Peruvian Chicken Drumsticks with Green Crema image

These air-fried Peruvian-style chicken drumsticks are served with a spinach, lime, and cilantro "green crema" sauce, with some jalapeno to kick the heat up a notch.

2 cloves garlic, grated
1 tablespoon honey
1 tablespoon olive oil
1 teaspoon salt
1 teaspoon ground cumin
½ teaspoon smoked paprika
½ teaspoon dried oregano
¼ teaspoon ground black pepper
6 (4 ounce) chicken drumsticks
1 cup baby spinach leaves, stems removed
¾ cup sour cream
¼ cup cilantro leaves
2 tablespoons fresh lime juice
1 clove garlic, smashed
½ jalapeno pepper, seeded
¼ teaspoon salt
¼ teaspoon ground black pepper

Steps:

  • Brush an air fryer basket with olive oil.
  • Combine garlic, honey, 1 tablespoon olive oil, salt, cumin, paprika, oregano, and pepper in a large bowl. Add drumsticks; toss to coat. Arrange drumsticks vertically in the prepared basket, leaning against the basket wall and one another.
  • Cook in the air fryer at 400 degrees F (200 degrees C) until an instant-read thermometer inserted in the thickest part of the drumstick reads 175 degrees F (80 degrees C), 15 to 20 minutes. Rearrange drumsticks with kitchen tongs halfway through cooking for even cooking.
  • Meanwhile, combine spinach, sour cream, cilantro, lime juice, garlic, jalapeno pepper, salt, and pepper in the bowl of a food processor; process until crema is smooth. Drizzle some crema sauce over drumsticks and serve with remaining crema.

4-5 lb chicken (giblets removed)
3 Tablespoon extra virgin olive oil
2 Tablespoon lime juice
6 garlic cloves
½ Tablespoon kosher salt
2 teaspoon paprika
1 teaspoon black pepper
1 Tablespoon cumin
1 teaspoon oregano dried
2 teaspoon brown sugar
2 Tablespoon soy sauce

Steps:

  • Blend marinade ingredients in food processor until smooth. Set aside.
  • Wash and dry chicken. Rub all over chicken, including under the skin and on the inside. Allow chicken to marinate for 6-24 hours, the longer the better.
  • Place in Air Fryer, breast side down. Cook on 360 degrees Fahrenheit for 30 minutes. Open Air Fryer basket and flip chicken. Then cook on 360 degrees Fahrenheit for 20 more minutes.
  • Your chicken is done when a quick read thermometer in thickest part of chicken registers at 165 degrees Fahrenheit.
  • Allow chicken to rest for 15-20 minutes before carving.

4 pound Whole chicken
1 tbsp Olive oil
1 tsp Italian seasoning
1 tsp Garlic powder
1 tsp Paprika
1 tsp Salt
1 tsp Pepper

Steps:

  • Remove all of the stuff from the cavity
  • Pat dry the chicken
  • In a mixing bowl, add Italian seasoning, paprika, garlic powder, salt, and pepper
  • Mix well and apply the rub on the chicken to season it. Make sure to coat the chicken evenly
  • Spray some oil onto the air fryer basket, then place the whole chicken into the basket
  • Cook at 360F for about 30 minutes. Then flip the chicken and let it cook for another 20 to 30 minutes.
  • Once the skin is crisp and golden brown, remove the chicken from the air fryer and let it rest for 10 minutes before serving. if you have a meat thermometer, make sure the temperature is at 165F.
  • Serve with your favorite sides

Yes, you can do a whole roast chicken in the air fryer! This handy appliance does a great job on most proteins. As long as you adjust the size chicken to the air fryer capacity, it will turn out great! I love to use butter and mixed fresh herbs to prepare chicken. Dried herbs may be used, but you'll use far less, due to the concentrated flavor of the dried herbs. We enjoy this lovely roast chicken with simple potatoes and vegetables, and perhaps a green salad.

1 (5 pound) whole chicken
8 sprigs fresh rosemary, divided
4 sprigs fresh sage
4 sprigs fresh oregano
1 teaspoon salt
½ teaspoon freshly ground black pepper
2 tablespoons unsalted butter, divided

Steps:

  • Pat chicken dry, inside and out, with paper towels. Remove giblets, trim away any excess fat, and discard.
  • Tie 4 sprigs rosemary, sage, and oregano together into an herb bundle with string. Bundle should be about 1/2-inch in diameter. Set aside.
  • Combine salt and pepper in a small bowl. Sprinkle about 1/2 teaspoon seasoning mixture inside the cavity of the chicken and place the herb bundle inside.
  • Gently loosen the skin over the breasts and thighs. Insert 1 teaspoon butter and 1 sprig of rosemary beneath the skin of each breast and thigh. Using your fingertips, rub butter all over the skin of the chicken, and place any excess butter inside the cavity of the chicken.
  • Sprinkle remaining seasoning mixture over the entire chicken. Place in the air fryer basket, breast-side down.
  • Air-fry at 370 degrees F (180 degrees C) for 45 minutes. Using tongs, carefully flip the chicken, breast-side up, and continue to air-fry until skin is crisp and brown, 15 more minutes.
  • Tent aluminum foil over the chicken and allow to rest for 5 to 10 minutes. An instant-read thermometer inserted into the center of one of the thighs should read at least 165 degrees F (74 degrees C). If needed, return to the air fryer and cook in 5-minute increments until safe temperature is achieved.
  • To serve, remove herb bundle and carve.

Steps:
