My husband loves my fried taters. It's just something I've whipped up and the spices are more to the person's taste than anything. They can be a bit spicy so you can hold back on the salt. Let me know what you think.

4 -5 medium potatoes
3 -4 tablespoons lemon pepper seasoning
2 -3 tablespoons garlic salt
2 -3 tablespoons garlic powder
1/8 cup olive oil
1 tablespoon Emeril's Original Essence

Steps:

  • In a large skillet, pour the olive oil and heat on med-high heat.
  • Wash potatoes well and cut with skin on into thin cubes or triangles.
  • Add potatoes to skillet.
  • Next sprinkle the lemon& pepper, garlic salt, garlic powder and essence over the potatoes as you turn them to make sure you get all of the potatoes.
  • Lower your heat to medium and turn potatoes until browned on each side.
  • Takes about 10-15 minutes.

Grilled Taters with Onion and Garlic image

2 pounds red potatoes, cut into quarters
2 tablespoons olive oil
2 yellow onions, sliced
2 cloves garlic, minced
Kosher salt and freshly ground black pepper

Steps:

  • Prepare a grill for medium-high heat.
  • In a large bowl, combine the potatoes, olive oil, onions and garlic. Season with salt and pepper.
  • Cut six 12-inch square sheets of foil and place them on a baking sheet. Put one-sixth (about a cup) of the potato mixture in the center of each piece of foil. Fold the sides of the foil over the potatoes, covering them completely and sealing them into packets.
  • Transfer to the grill and cook until tender, 15 to 20 minutes.

I usually make this after we have scrambled eggs for breakfast, using the leftover scrambled eggs in the rice! For veggie lovers, use the recipe's two cups of rice, but you can add another cup of rice if you like your fried rice more...rice-ier.

2 eggs
3 tablespoons vegetable shortening, divided
1 cup onion, diced
1/4 cup celery, diced
1/2 cup carrot, diced
2 garlic cloves, minced
2 cups cooked rice, cold
1/4 teaspoon ground ginger
1/4 cup soy sauce

Steps:

  • Scramble (finely, little pieces) the eggs in a wok. Remove and set aside.
  • Add one tablespoon of shortening to hot wok (medium high heat) and add onions. Saute (I like mine caramelized a bit) onions to your preference.
  • Add to wok the celery and carrot. Saute for about ten minutes, stirring often.
  • Add garlic and saute for another four to five minutes.
  • Add remaining two tablespoons of shortening to wok and add cold rice.
  • Cook for about fifteen minutes, stirring every three to four minutes. (I let my rice caramelize also).
  • Mix ginger and soy sauce together, toss in with rice.
  • Add scrambled eggs to rice.
  • Cook, stirring, another five minutes or until your preference.
  • Makes 4 one cup servings.

  • Preheat an air fryer to 350 degrees F (175 degrees C) for 4 minutes.
  • Place desired amount of potato nuggets into the air fryer basket in a single layer, working in batches if necessary.
  • Cook in the preheated air fryer for 6 minutes. Shake the basket. Cook until crispy, or to desired doneness, about 4 minutes more.
