ALMOND MILK CUSTARD
Steps:
- Add all the ingredients to the pot and whisk together until it has a smooth consistency.
- Turn the heat on medium. Begin whisking continuously until the liquid is thickened into a creamy texture. This process should take up to five minutes, and you will feel the custard's texture begin to change.
- Once the desired consistency has been reached, remove it from the heat. Stir for one more minute. The custard will continue to thicken off the heat.
- Portion up the custard, pouring in shallow glass jars or sealable containers. Allow cooling at room temperature for 30 minutes.

Steps:
- Preheat your oven to 300°F. Place 6 single-serve ramekins in a baking dish, and fill the baking dish with water reaching half way up the outside of the ramekins.
- In a medium pot, whisk together the almond milk, eggs, honey, and vanilla. Place over medium heat and cook for 1 minute, whisking, but do not boil.
- Remove from the heat and evenly divide the mixture between the ramekins.
- Carefully transfer the baking dish to your oven (you don't want to spill any water!), and bake for 45 minutes, or until the tops of the custards start to feel firm.
- Remove from the oven and place the custards into the refrigerator for at least 3 hours before serving.

Steps:
- Blend the cornstarch with a little of the milk. Add the remaining milk.
- Add the egg and cream, whisk well.
- Pour the mixture into a small saucepan and stir constantly over a low heat until the custard thicks. DO NOT BOIL as your mixture may curdle.
- Alternately, instead of the saucepan mixture-you can use the micro-wave. Use medium low heat and stir at 1 minute intervals until the custard thickens.
- Stir in the ground almonds, vanilla and sugar.
- Serve warm or cold as desired.
