A creamy, fluffy low-carb Matcha latte to start the day with an antioxidant energizing drink.

Steps:
- In a small saucepan, whisk Matcha powder and lukewarm water until no more lumps shows.
- Add in heavy cream, sweetener of choice, and 1/2 cup of almond milk - the remaining almond milk is used later in your milk frother. If you don't have a milk frother, add the entire 3/4 cup almond milk in this step.
- Warm until medium heat, about 2-3 minutes until hot.
- Serve in a coffee mug and top with frothed almond milk on top if desired.
- Decorate with a pinch of extra Matcha powder - this doesn't add net carbs.

- If you are using a bamboo whisk, soften the tines by soaking in hot water. A metal whisk also works.
- Place one teaspoon matcha green tea powder in a bowl.
- Pour hot water over matcha and whisk vigorously until frothy. Using a "W" motion helps.
- Heat your milk (I like almond or soy milk. Coconut milk is good, too, but I have found it does not froth up as nicely) to 140°F - 160°F on the stovetop and use a whisk to froth - I like to use an electric milk frother.
- Sweeten to taste with maple syrup, honey, or sugar.
- Enjoy immediately.

- Heat the milk in an electric milk frother or small saucepan over low heat.
- Using a small mesh strainer, sift the matcha powder into the bowl. Pour the heated milk over the matcha.
- Using back and forth motions (not circular) and keeping the whisk in contact with the bottom of the bowl, vigorously whisk the matcha into the milk until fully incorporated.
- When it looks ready, slow your whisking and gently pull the whisk out of the liquid. Pour into a mug and enjoy!
