GLAZED ALMOND SUGAR COOKIES

Steps:
- Make cookie dough by blending cookie mix, butter, almonds, extract and egg until soft dough forms.
- Roll dough into about 40 (1-inch) balls. Place about 2 inches apart on Reynolds Parchment Paper lined cookie sheets. Bake at 375°F 7 to 9 minutes or until set. Cool; place cookies on cooling racks. Cool completely.
- In small bowl, stir powdered sugar, 1/4 teaspoon extract and just enough milk until glaze is spreadable but thick. Spread glaze onto each cookie; top with 3 almond slices.

GLAZED ALMOND COOKIES
Elegant little tea cookies with an almond pressed into the top. I like to cut the whole almonds in half to put on top of the cookies.

- Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
- In a medium bowl, cream the butter and sugar until light. Beat in the almond and vanilla extracts and the egg yolks. Next, stir in the chopped almonds, flour and salt. Roll the dough into 1 inch balls, dip the balls into the egg whites. Place cookies 2 inches apart on the prepared cookie sheet. Press a whole almond into the top of the ball, flattening the cookie a little bit.
- Bake for 8 to 10 minutes in the preheated oven, until edges start to brown.

- Preheat oven to 400°. In a large bowl, cream butter and sugar until light and fluffy. Beat in almond extract. Combine the flour, baking powder and salt; gradually add to creamed mixture and mix well. Roll into 1-in. balls. , Place 2 in. apart on ungreased baking sheets. Coat bottom of a glass with cooking spray; dip in sugar. Flatten cookies with prepared glass, dipping glass in sugar again as needed. , Bake until edges are lightly browned, 7-9 minutes. Cool for 1 minute before removing to wire racks., In a small bowl, whisk together the confectioners' sugar, almond extract and enough water to achieve glaze consistency. Tint with food coloring if desired; drizzle over cookies. Sprinkle with almonds.

Steps:
- Heat oven to 400°.
- Combine butter, sugar and almond extract in large bowl.
- Beat at medium speed, scraping bowl often, until creamy.
- Reduce speed to low; add all remaining cookie ingredients.
- Beat until well mixed.
- Roll dough into 1 inch balls; place 2 inches apart on ungreased cookie sheet.
- Flatten balls to 1/4 inch thickness with bottom of buttered glass dipped in sugar.
- Bake for 7-9 minutes or until edges are very lightly browned.
- Cool 1 minute; remove from sheets.
- Cool completely.
- Stir together all glaze ingredients with wire whisk in small bowl.
- Decorate cooled cookies with glaze and sliced almonds.
- Glaze sets up quickly.
- Frost and decorate a few cookies at a time.

CHOCOLATE ALMOND SANDWICH COOKIES

- For the sandwich cookies: In a large bowl, combine the almond butter, coconut sugar and butter. Using a handheld mixer, beat on medium speed until light and fluffy, about 3 minutes. Add the cocoa powder, baking soda, almond extract, salt and eggs and mix to combine. Fold in the oats and mini chocolate chips. Cover and refrigerate the dough for 1 hour.
- Preheat the oven to 350 degrees F. Line 2 rimmed baking sheets with parchment paper.
- Scoop 15 heaping tablespoon-size rounds of dough 1 inch apart on each prepared baking sheet. Bake, rotating the baking sheets halfway through, until the cookies are just set around the edges and still soft in the middle, 10 to 11 minutes. Allow to cool for 10 minutes on the baking sheets before removing to a wire rack to cool completely.
- For the filling: In a medium bowl, combine the cream cheese, powdered sugar, butter, cocoa powder and salt. Using a handheld mixer, beat on medium speed until light and fluffy, about 3 minutes.
- Spread a heaping tablespoon of the filling on the flat side of half of the cooled cookies. Sandwich the remaining half of the cookies, flat side against the filling. Store in the refrigerator and remove 30 minutes before serving.
ALMOND FLAVOR SUGAR COOKIE
A not too sweet sugar cookie. Use your favorite frosting- just substitute almond extract for the amount of vanilla extract - a good almond flavored crisp cookie.

- In medium bowl mix dry ingredients. Set aside.
- In large bowl cream butter and sugar with a mixer until fluffy. Add egg, milk and almond extract and beat well.
- Add the dry ingredients 1/3 at a time into butter sugar mixture, mixing until well blended.
- Wrap dough in plastic wrap and refrigerate for at least a 1/2 an hour before rolling out.
- Preheat oven to 360 degrees.
- On a lightly floured surface, roll out 1/3 of the dough at a time. Roll to 1/8 inch thick and cut out with cookie cutters.
- Bake on ungreased cookie sheet for 5-7 minutes. Do not allow to brown.

ALMOND SPRITZ COOKIES
A holiday classic found in nearly every cookie box, these almond-flavored treats are buttery, crisp and all too easy to eat by the handful (fear not, this recipe makes a lot). Spritz cookies also keep well, for up to two weeks stored in an airtight container at room temperature. If you don't have a spritz gun, you can use a pastry bag to form them. Or, for more rustic versions, skip the pressing altogether. Chill the dough for an hour, then roll out 1-inch balls, placing them 1 ½ inches apart on the baking sheets, then use a fork to flatten them. A sprinkle of colored sugar makes everything pretty.

- Heat oven to 350 degrees. Using a stand mixer fitted with the paddle attachment or a hand-held electric mixer and a large bowl, beat the butter and sugar on medium speed until light and fluffy, 2 to 3 minutes. Reduce speed to low, add the egg and almond extract, and mix until well-combined and smooth.
- With speed still on low, gradually add both flours and the salt until just incorporated.
- Fill a cookie press with dough, or use a piping bag fitted with a decorative piping tip with a large opening (about 1/2-inch). Press or pipe the dough onto ungreased baking sheets, leaving about 1 inch between cookies. Sprinkle cookies with decorative sugar or sprinkles.
- Bake until firm to the touch and golden brown at edges, 12 to 17 minutes. Transfer sheets to a wire rack to cool slightly, then use a spatula to remove cookies from the baking sheets when they're still warm (which is easier to do than when they've cooled completely).
