CHOCOLATE CHERRY BOURBON BALLS
This is kind of a cross between a cookie and a candy. My mom used to make these every year during the holidays when I was a kid, although times were different back then, and since this is no-bake, the alcohol doesn't have a chance to cook off. Yeah, don't give these to the kids! Servings are based on two of these per person... Good luck stopping at two!

AMAZING BOURBON BALLS WITH CHERRIES
I make these every year for my family. They are always gobbled up very quickly, so I make multiple batches. You can find the glazed cherries next to the fruitcake fruit. You can make them without nuts, too. Just increase the amount of cherries.

Steps:
- Soak walnuts and cherries in bourbon for 4-5 hours. (The longer you soak them, the more they absorb the alcohol.) Drain well.
- Soften butter. Mix butter with confectioners sugar and add to nuts and cherries. (You might need to add more sugar if the mixture is to wet.) Roll into balls (about half the size you wish your final bourbon ball to be). Refridgerate at least 30 minutes until set.
- Melt chocolate and wax in double broiler. Drop balls into chocolate and put on wax paper. Let set until chocolate hardens. (I always put them in the fridge to speed up the process.).

Steps:
- Place the nuts in a sealable jar. Pour the bourbon over the nuts. Seal and allow to soak overnight.
- Mix the butter and sugar; fold in the soaked nuts. Form into 3/4" balls and refrigerate overnight.
- Line a tray with waxed paper. Melt the chocolate in the top of a double boiler over just-barely simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorching. Roll the balls in the melted chocolate to coat; arrange on the prepared tray. Store in refrigerator until serving.

BOURBON CHERRIES RECIPE - (4.3/5)

Steps:
- If you are using the bourbon, pour the liquid out of the cherries and replace it with bourbon. Let marinate for at least 48 hours. Beat butter at medium speed with an electric mixer until creamy; gradually add powdered sugar, and whipping cream beating well until a "dough" ball forms. Set aside. Drain cherries and reserve the bourbon for sipping later. If there are any stemless cherries in the jar add them to the "cherry infused bourbon" for added flavor. The fondant will be sticky, place a couple of Tablespoons of powdered sugar on a plate to frequently dip hands into while handling the fondant. Shape the fondant around the cherries, by pinching some fondant (about the size of a cherry roll into a ball with sugar powder coated hands. Press the ball into a flat round disc and using your thumbs continue to press into a thin circle. Wrap the circle of fondant around a cherry covering completely. Gently roll the covered cherry between your hands to smooth. Place fondant covered cherry on wax paper. Repeat until all cherries are covered. Dipping: Microwave chocolate chips and shortening in a small microwavable bowl on HIGH for 90 seconds or until melted, stirring twice. Coat cherries by holding stems and dipping them into the chocolate mixture, allowing excess to drip; place on wax paper. Let stand until firm. If chocolate becomes hard to work with, return chocolate to microwave for 30 seconds. Store loosely covered in a cool place 1 week or until centers soften. Cherries can be eaten immediately, but they seem to get better after "resting" a while.

BOURBON BALLS
Bourbon Balls function as the ultimate easy dessert for Southern cocktail parties, and they put a sweet, slightly boozy finish on any get-together. Think of them as an edible digestif. Crushed vanilla wafers hold all the chocolatey goodness together. Buy an 11-ounce box and remove two dozen wafers to save for another use, like Banana Pudding.

Steps:
- Combine the crushed wafers and pecans in a large bowl. Place the chopped chocolate in a separate bowl.
- In a small saucepan, combine the cream, corn syrup, and cinnamon, place over medium heat, and bring to just a boil, stirring constantly. Immediately pour the mixture over the chopped chocolate and whisk to blend in the cream as the chocolate melts. Let cool for 1 to 2 minutes, then whisk in the bourbon.
- Pour the chocolate mixture over the crumb-nut mixture and stir well to combine. Place in the refrigerator to chill for 30 minutes. Form the mixture into balls with a small melon baller (about 2 teaspoons), roll in coatings if desired, and arrange on a parchment-lined baking sheet. Store in an airtight container in a cool place for up to 1 week.
