- Preheat oven to 375 degrees F (190 degrees C).
- In a 9 inch pan, melt 3 tablespoons butter. Sprinkle 1/3 cup brown sugar and 1/4 teaspoon of the cinnamon. Arrange twelve pecan halves, then the apple wedges (as you would for a pineapple upside-down cake. Chop remaining pecans and set aside.
- In a small bowl, mix flour, baking soda, salt and 1 1/2 teaspoons cinnamon. Set aside.
- Beat 3/4 cup butter and sugar until smooth and fluffy. Stir in water. Add flour mixture and mix just until combined. Fold in reserved nuts.
- Spread batter evenly over apples and bake in preheated oven until a toothpick inserted in the center comes out clean, about 30 minutes.
- Cool 10 minutes, then invert onto serving plate.

- Preheat oven to 300°F (135°C). Grease and flour three 8-inch round cake pans, set aside.
- In a medium bowl, mix flour, apple pie spice, baking soda and salt, set aside.
- In a large bowl, cream butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in vanilla, sour cream and applesauce.
- Beat in the flour mixture alternately with the milk. Fold in the shredded apples.
- Divide batter evenly into prepared pans. Bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cake cool completely before frosting.
- Melt the butter in a small saucepan over medium heat. Once melted, add brown sugar and heavy cream. Whisk constantly until sugar is dissolved. Add salt.
- Allow to bubble for about 2 minutes, whisking constantly. Remove from heat immediately, stir in vanilla extract and allow to cool completely.
- Transfer the brown sugar mixture into the bowl of your stand mixer fitted with the whisk attachment. With the mixer on low, add 3 cups powdered sugar, beat until well combined.
- Slowly add 1/2 cup more powdered sugar at a time until you reach the desired consistency. If your frosting gets too thick, you can add an additonal tablespoon or two of heavy cream, if needed.
- Turn the mixer speed up to medium and continue mixing until creamy and combined, scraping the sides of the bowl as necessary.
- Frost cake and decorate as desired.

EASY CARAMEL APPLE CAKE

- Preheat the oven to 175°C/350°F (standard oven setting). Line the bottom of a 20-cm/7-inch spring-form pan with baking parchment and butter the sides of the pan.
- In a large bowl, stir together the self-raising flour, granulated sugar, cinnamon and salt. Add the cubed butter and rub the butter into the dry ingredients with your fingers. At some point, the mixture will start to come together.
- Add the apple pieces and stir to combine. Add the eggs one at a time and stir with a wooden spoon until incorporated. The mixture will now look like thick batter.
- Press one third of the mixture into the cake pan with a metal spoon. Because there are so much apple pieces in the batter, it may need a little encouragement. Drizzle half the caramel over the batter in the pan, then gently press another third of the batter on top of the caramel. Add the remaining caramel, then add the remaining batter.
- Bake in the middle of the oven for about 45 minutes. Sprinkle the tablespoon of sugar on top of the cake and place the cake bake in the oven for 5 minutes.
- Remove the cake from the oven and allow to cool for 10 minutes in the pan. After 10 minutes, use a thin knife to loosen the cake from the sides of the pan. Remove the spring-form collar. Allow to cool to room temperature on a wire rack or serve warm.
- Stored in an airtight container, the cake will keep for up to five days.
AMAZING CARAMEL APPLE CAKE
My husband got this recipe from a former co-worker after she brought the apple cake to a food day. I've made a few adjustments to the recipe and my husband says it's even better than the original (maybe he's just being nice?). Either way, every time we've made it our guests LOVE it and almost always have more than one piece. You can serve with whipped topping or ice cream.

- Mix sugar, butter and eggs together.
- Add remaining dry ingredients (will be thick, like cookie dough).
- Peel and chop apples.
- Add chopped apples to batter, mix well.
- Spread into greased 9x13 pan.
- Bake at 350 for 30 - 40 minutes.
- Shortly before the cake is done baking add the remaining 3 Tbs butter, sugars and whipping cream to sauce pan on medium heat.
- Sir frequently until slightly thick.
