AWESOME PASTA SALAD
This is the best pasta salad I've ever eaten, and people request it frequently. It's a very easy, light-tasting side dish for a picnic or dinner.

Steps:
- Bring a large pot of lightly salted water to a boil. Add pasta, and cook for 8 to 10 minutes or until al dente. Drain, and rinse with cold water.
- In a large bowl, combine pasta with tomatoes, cheese, salami, pepperoni, green pepper, olives, and pimentos. Pour in salad dressing, and toss to coat.

AMAZING PASTA SALAD
I found this years ago in a cooking magazine, but lost it in a fire. This is my own, revised version, of that recipe. You can tweak everything from the roast tomatoes recipe to what cheeses/ meats and dressings you use. I prefer this recipe because it's a mixture of sweet, tangy, spicy and sour all in one!

Steps:
- Cook rotini pasta according to box directions. Complete the rest of the steps while the rotini is cooking.
- Heat oven to 325 degrees. Dice tomatoes into large squares. Place into a mixing bowl, add some olive oil, basil, parsley, salt, pepper and minced garlic to taste. When satisfied, place tomato mixture in a foil-lined pan (one that has some depth since tomato juices will run) and place in oven until you can smell the tomatoes roasting (about 40 minutes). When they are finished, allow them to completely cool.
- While tomatoes are roasting, cube up the block of mozzarella cheese, as well as the salami.
- When pasta finishes, rinse it WELL in cold water until the pasta is completely cooled.
- Pour pasta into a large bowl. Add mozzarella and salami. Pour entire bottle of dressing over pasta and stir everything. Add blue cheese and cooled tomatoes.
- Stir and enjoy!

AMAZING PASTA SALAD
This recipe was given to my mom at a potluck. She didn't write down the measurements so thankfully I was there to watch and take notes. My mom added her own veggies, and extra goodies that made it super yummy. *NOTE, if you're making this ahead of time I would recommend putting everything in the bowl and setting in the fridge EXCEPT the dressing as the salad will soak it up, so add just before serving.

- Pasta:.
- Cook rainbow pasta until aldente.
- Veggies:.
- Wash all of the veggies.
- Break apart the broccoli floret until you're able to cut into small bite sized pieces.
- Remove seeds from the sweet peppers and chop into bite sized pieces.
- Drain the Articoke Hearts and chop any that are too large into smaller pieces.
- Mince a small red onion.
- Chop zucchinis into bite sized pieces.
- Give the olives a rough chop.
- Leave the cherry tomatoes whole, do not chop or cut in half unles you would prefer to have them cut up.
- Once all of the veggies have been washed and chopped into bite sized pieces put in a large bowl and add the feta cheese if desired.
- When pasta has cooled add to the veggies. At this point you can add half of the bottle of dressing or set in the fridge and chill until ready to serve. If you're not going to serve immediately it would be best to not add the dressing as the pasta will soak it up and end up dry -- then you'll need to add the rest of the dressing at the time of serving.
- This is a nice change from the traditional mac salad or potatoe salad served during bbq's.
