½ cup unsalted butter (1 stick), frozen
2 ½ cups self-rising flour
1 cup chilled buttermilk
Parchment paper
2 tablespoons butter, melted

Steps:

  • Preheat oven to 475°F. Grate frozen butter using large holes of a box grater. Toss together grated butter and flour in a medium bowl. Chill 10 minutes.
  • Make a well in center of mixture. Add buttermilk, and stir 15 times. Dough will be sticky.
  • Turn dough out onto a lightly floured surface. Lightly sprinkle flour over top of dough. Using a lightly floured rolling pin, roll dough into a ¾-inch-thick rectangle (about 9 x 5 inches). Fold dough in half so short ends meet. Repeat rolling and folding process 4 more times.
  • Roll dough to ½-inch thickness. Cut with a 2 ½-inch floured round cutter, reshaping scraps and flouring as needed.
  • Place dough rounds on a parchment paper-lined jelly-roll pan. Bake at 475°F for 15 minutes or until lightly browned. Brush with melted butter.

3 cups all purpose flour
5 tsp baking powder
1 1/2 tsp salt
1/2 tsp baking soda
1/2 cup cold butter ( or vegetable shortening)
1 - 1 1/4 cup cold buttermilk
melted butter or heavy cream to brush the tops

Steps:

  • Preheat the oven to 450°F and line a baking sheet with parchment paper.
  • Sift together the dry ingredients in a large mixing bowl.
  • Cube the butter or shortening then cut it into the dry ingredients using a pastry blender or pulse in a food processor. Cut until it becomes crumbly and resembles peas.
  • Mix in 1 cup cold buttermilk, just until the crumbs are thoroughly moistened. Add up to 1/4 cup additional buttermilk, if needed. The dough shouldn't be overly wet but, slightly sticky.
  • Roll or pat out on a lightly floured surface about 3/4-1 inch thick. Cut into rounds using a 2-inch cookie cutter dipped in flour. Do not twist the dough with the cutter. Cut the dough, then lift the cookie cutter up. Re-roll any scraps and repeat.
  • Place biscuits 2 inches apart on the baking sheet. Brush the tops with melted butter or heavy cream.
  • Bake biscuits at 450°F for 13-15 minutes until lightly golden and puffed.
  • Brush with melted butter after removing from the oven. Serve immediately.

These Southern-style buttermilk biscuits are deliciously rich, buttery, and flaky.

2 cups all purpose flour, spooned into measuring cup and leveled-off
3 tablespoons cornstarch
1 tablespoon baking powder
¼ teaspoon baking soda
1 tablespoon sugar
1¼ teaspoons salt
10 tablespoons cold unsalted butter, cut into ½-inch chunks
¾ cup buttermilk, plus a bit more if necessary (see note)

Steps:

  • Preheat the oven to 425ºF and set an oven rack in the middle position. Line a 13x18-inch baking sheet with parchment paper.
  • In the bowl of a food processor, combine the flour, cornstarch, baking powder, baking soda, sugar and salt. Pulse a few times to mix. (Alternatively, combine the ingredients in a mixing bowl.)
  • Add the butter and pulse until the mixture resembles coarse sand with a few pea-sized clumps of butter intact. (If making by hand, "cut" the butter into the dry ingredients with a pastry cutter, two knifes, or your fingertips.) Transfer the mixture to a mixing bowl.
  • Add the buttermilk and stir with a spoon or rubber spatula until the dough comes together into a shaggy mass. If the dough seems too dry, add a few more tablespoons of buttermilk. Do not over-mix.
  • Turn the dough out onto a lightly floured work surface. Dust the top of the dough with a bit more flour and bring together gently into a loose ball. Pat the dough into a rectangle about ¾ inch thick.
  • Using a sharp knife, cut the dough into thirds. Stack the pieces on top of one another and pat out into a rectangle about ¾ in thick again, flouring the surface lightly as needed to prevent the dough from sticking.
  • Cut the dough into thirds again. Stack the pieces on top of one another and pat into a rectangle with a final thickness of about ¾ inch.
  • Dust the blade of a sharp knife with flour and cut the dough into twelve even squares (they will seem small). Transfer the squares to the prepared baking sheet and bake for 13 to 15 minutes, until the biscuits are lightly golden on top and a rich, golden brown on the bottom. The biscuits are best served warm out of the oven (though a few minutes in the oven will revive slightly older biscuits).

  • Freezer-Friendly Instructions: The biscuits can be frozen, unbaked, for up to 3 months. They can be baked without thawing; they may just take a few extra minutes in the oven.

Eight simple ingredients in my southern buttermilk biscuits! These buttermilk biscuits have a gazillion flakey, buttery layers! Once you make them at home, you'll never buy biscuits in a can again!

4 cups all-purpose flour (see notes)
1 tablespoon EACH: powdered milk AND granulated sugar
4 teaspoons baking powder
¾ teaspoon salt
½ teaspoon baking soda
1 cup salted butter, frozen and grated (see notes) + 3 tablespoons melted
1 ¼ cup cold buttermilk (plus 1-2 tablespoons)

Steps:

  • MIX: Combine the flour, powdered, milk, baking powder, granulated sugar, salt, and baking soda in a bowl. Fold in the grated butter and then using a fork, mix as you pour in the buttermilk. Add half and check and see if the mixture needs more. The dough should be shaggy but not wet, if the dough is really dry, add another tablespoon of buttermilk (up to 2 tablespoons) until the dough is shaggy.
  • DOUGH: Dump the dough out onto a lightly floured surface. Gather the dough into a ball. Roll the dough out into a ½ inch thick rectangle (roughly 9x12.) Then fold in thirds (basically grab each side and fold it towards the middle overlapping the second side over the first.) Like you would a letter to put in an envelope. Then, flip the dough 90 degrees, so one of the sides you didn't fold is in front of you. Roll it out again (½ inch thick.) Then, flip the dough 90 degrees, and repeat this step one more time. Roll the dough out into a 1-inch thick rectangle the last time and then cut out biscuits using a 2 ½ - 3-inch cookie cutter going straight down. DO NOT TWIST THE BISCUIT CUTTER. Gently reshape the dough (using that same envelope method, just once and rolling out the dough so it's 1-inch thick) then cut out additional biscuits.
  • BAKE: Transfer the biscuits to a large baking sheet lined with parchment paper (placing them so they're touching.) And freeze the biscuit dough for 8-10 minutes. Position a rack in the center of the oven and preheat the oven to 375ºF while the biscuit dough is cooling. Brush the tops of the biscuits with a tablespoon of melted butter. When the oven is hot, bake the biscuits for 30-35 minutes or until the tops are golden brown and the biscuits rise nice and tall. Brush with the remaining two tablespoons of butter before serving. Serve warm!

4 teaspoons baking powder
1/4 teaspoon baking soda
3/4 teaspoon salt
2 tablespoons butter
2 tablespoons shortening
1 cup buttermilk, chilled

Steps:

  • Preheat oven to 450 degrees.
  • In a large mixing bowl, combine flour, baking powder, baking soda and salt. Using your fingertips, rub butter and shortening into dry ingredients until mixture looks like crumbs. (The faster the better, you don't want the fats to melt.) Make a well in the center and pour in the chilled buttermilk. Stir just until the dough comes together. The dough will be very sticky.
  • Turn dough onto floured surface, dust top with flour and gently fold dough over on itself 5 or 6 times. Press into a 1-inch thick round. Cut out biscuits with a 2-inch cutter, being sure to push straight down through the dough. Place biscuits on baking sheet so that they just touch. Reform scrap dough, working it as little as possible and continue cutting. (Biscuits from the second pass will not be quite as light as those from the first, but hey, that's life.)
  • Bake until biscuits are tall and light gold on top, 15 to 20 minutes.

This recipe for old-fashioned Southern Buttermilk Biscuits are the best! They come out so thick and fluffy and melt in your mouth!

10 tablespoons unsalted butter (divided)
2 cups all-purpose flour (plus more for dusting)
1 ½ tablespoons baking powder
1 tablespoon granulated sugar
¾ teaspoon fine sea salt
¼ teaspoon baking soda
¾ cup + 1 tablespoon buttermilk (divided)

Steps:

  • Preheat the oven to 425°F. Line a sheet tray with parchment paper.
  • Grate 8 tablespoons of the butter or dice it very small and place it in the freezer for 15 minutes. Add the buttermilk to the freezer during this time as well.
  • In a large bowl stir together the flour, baking powder, sugar, salt, and baking soda. Add the butter.
  • Cut it in with a pastry cutter or you can use two forks. The mixture should appear crumbly with no larger than pea-sized pieces of butter.
  • Pour in ¾ cup of buttermilk (if any of the buttermilk started to freeze, just break it up with a fork). Stir until combined, mixture will be crumbly, with some of the flour not fully mixing in.
  • Lightly dust a clean work surface with more flour. Pour out the dough mixture and work it with your hands to form a ball.
  • Roll the dough out into ½ inch thick rectangle.
  • Fold ⅓ of one side over the center. Fold the other ⅓ on top. Roll it out into a ½ inch rectangle again and fold the same way. Repeat 1 more time.
  • Do the tri-fold one last time but this time roll out the dough into a 1-inch thickness.
  • Using a 2 ½ inch biscuit cutter, cut out the biscuits. DO NOT TWIST THE BISCUIT CUTTER. Place the biscuits slightly touching onto the parchment-lined sheet tray.
  • Roll the scraps back into a ball and roll it out again to cut more biscuits. Keep doing this until you have 8 biscuits.
  • Brush the tops of the biscuits with the remaining 1 tablespoon of buttermilk. Bake for 13-15 minutes until puffed up and the tops are golden brown.
  • While the biscuits are cooking, melt the remaining 2 tablespoons of butter.
  • Immediately brush the tops of the biscuits with the melted butter. Let cool slightly and serve.
