HOME FRIES

Home Fries image

There's nothing like a fresh batch of home fries! The ultimate comfort food, these home fries are like what you get at an old-fashioned diner, straight off the skillet. Use raw or cooked potatoes - the choice is yours!

Provided by Elise Bauer

Categories     Brunch     Side Dish     Breakfast     Quick and Easy     Breakfast     Potato

Time 45m

Yield 4

Number Of Ingredients 13

For home fries made with raw potatoes
2 large raw Russet potatoes, peeled and thinly sliced (about 1/8-inch thick)
1/2 of one large onion, or 1 medium onion, thinly sliced
3 tablespoons or more of extra virgin olive oil
Salt
Freshly ground black pepper
For home fries made with cooked potatoes
2 large Russet potatoes, quartered and boiled for 12 minutes in salted water until just cooked through, drained
1/2 of one large onion, or 1 medium onion, thinly sliced
2 tablespoons of extra virgin olive oil
1 tablespoon of bacon fat (optional, omit for vegetarian version)
Salt
Freshly ground black pepper

Steps:

  • Heat the olive oil and add potatoes, onions, salt and pepper: Heat 2 tablespoons oil in a medium to large skillet on medium high heat until sizzling. Place a single layer of potato slices on the bottom of the pan. Add a light layer of sliced onions. Sprinkle with salt and pepper. Add another layer of potatoes, another layer of onion slices, sprinkle again with salt and pepper. Keep layering until you've used up your potatoes and onions.
  • Lower the heat and cover the pan: Lower the heat to medium and cover the pan. Let cook for about 10 minutes, until the potato layer at the bottom is nicely browned. You can move aside a little bit with a fork to see if the bottom edges are browned. You may need to reduce the heat a little as the potatoes cook so they brown and don't burn.
  • Flip the potatoes: Gently flip the potatoes over, a section of the pan at a time, so that the layer that was on the top is now on the bottom, and the browned potatoes are now on the top. Add another tablespoon of oil. The oil will help the browning. Cover and let cook for another 5-10 minutes, until the bottom layer is now browned.
  • Remove the lid: Once the bottom layer is browned, remove the lid of the pan and let continue to cook for 5 more minutes. This additional cooking will help the potatoes dry out just a little bit more. Serve immediately. Serves 2-4.
  • Heat the oil and sauté the onions: Cut the cooked potatoes into 1/2-inch slices. Heat 2 tablespoons oil in a medium to large skillet on medium high heat until sizzling. Add sliced onions to pan and cook until softened, 3 to 4 minutes.
  • Add the potatoes, salt, pepper, and bacon fat: Add the potato pieces, spread out as much as possible along the bottom of the pan. Sprinkle generously with salt and freshly ground pepper. Cook until nicely browned on the bottom, without stirring (about 7-8 minutes). You may need to reduce the heat a little as the potatoes cook so they brown and don't burn. Add 1 tablespoon bacon fat, or more oil to the pan. Gently flip the potatoes and cook until the bottom of the flipped potatoes are nicely browned. Serve immediately.

3 tablespoons vegetable oil, like soy, peanut, or corn

PERFECT FRENCH FRIES

Perfect French Fries image

In a nutshell, here it is: Soak potatoes, dry potatoes, fry potatoes, drain potatoes, then fry again!

Provided by Ree Drummond : Food Network

Categories     side-dish

Time 2h50m

Yield s: 8 servings

Number Of Ingredients 3

5 pounds russet potatoes
Vegetable or peanut oil, for frying
Sea salt

Steps:

  • Peel and rinse the potatoes. Then cut them into sticks by cutting the potato in 4 or 5 vertical pieces, and then cutting each piece into sticks.
  • Place them in a large bowl and cover with cold water. Allow them to soak, 2 to 3 hours. (You can also stick them in the fridge and let them soak overnight.)
  • When you're ready to make the fries, drain off the water and lay the potatoes on 2 baking sheets lined with paper towels. Blot with paper towels to dry them.
  • Heat a few inches of oil in a heavy pot to 300 degrees F. In 3 or 4 batches, cook the potatoes until soft, 4 to 5 minutes per batch. They should not be brown at this point! You just want to start the cooking process. Remove each batch and drain on new/dry paper towels.
  • Once all the potatoes have been fried at 300 degrees F, turn up the heat until the oil reaches 400 degrees F. When the oil's hot, start frying the potatoes in batches again, cooking until the fries are golden and crisp. Remove the potatoes from the oil and drain on paper towels.
  • Sprinkle with sea salt and dive in!

FRENCH FRIES

Perfect French fries with our easy recipe - you'll end up with lightly golden, crisp fries. They're great as a snack or side dish to a Friday night feast

Provided by Adam Bush

Categories     Side dish

Time 30m

Yield Serves 4 as a side

Number Of Ingredients 2

1kg Maris Piper or King Edward potatoes
vegetable oil, for deep frying

Steps:

  • Peel the potatoes and cut into 1cm-thick batons. Put into a bowl of cold water and leave to soak for at least 2 hrs to remove the starch from the potatoes - this will help them crisp while frying.
  • Drain the potatoes well and pat dry with kitchen paper. Fill a deep pan no more than a third full with oil and heat to 140C, or until a cube of bread dropped in browns in 60 seconds. Fry the French fries in batches for 6 mins per batch until golden straw-coloured, cooked through and lightly crisp. Drain well on kitchen paper.
  • Turn the heat up until the oil reaches 180C, or a cube of bread browns in 30 seconds. Fry the French fries again for 2-3 mins per batch until lightly golden and really crisp. Drain on kitchen paper and immediately season with sea salt.
