Our Amish Friendship Bread biscotti recipe is an unexpected hit - the extra sugar in the starter adds just enough sweetness to this otherwise flavorful sourdough crunch.

1 cup Amish Friendship Bread Starter
⅔ cup granulated sugar
½ cup butter (softened)
1 teaspoon vanilla
1 egg
3 cups flour
1 teaspoon baking powder
½ teaspoon salt
1 cup almonds or walnuts (coarsely chopped)

Steps:

  • Preheat oven to 350° F (175° C).
  • In medium bowl, cream together starter, sugar and butter. Stir in vanilla extract and egg.
  • In another bowl combine flour, baking powder and salt. Stir into creamed mixture. Fold in nuts.
  • Divide dough into 2 pieces. Roll each piece out into a log about 10 inches long. Place them on an ungreased cookie sheet and flatten until they are about 3 inches wide.
  • Bake for 30-35 minutes, until firm. Cool on baking sheet for 10-15 minutes.
  • Slice logs crosswise into ½ -inch wide slices. Place slices cut side down on baking sheet.
  • Return to oven for additional 15 minutes, until crisp and light brown. Cool and store in airtight container.

A quick and easy recipe for Amish Friendship Bread Biscuits that will go with any meal.

1 cup Amish Friendship Bread Starter
2 eggs (beaten)
¼ cup oil
¼ stick butter (melted)
2 cups flour
½ teaspoon baking soda
½ teaspoon salt
2 teaspoons baking powder

Steps:

  • Preheat over to 325° F (165° C).
  • Combine all wet ingredients except butter in a medium-size bowl.
  • Combine all dry ingredients in a larger bowl and make a well in the center.
  • Pour the wet ingredients into the well and whisk until the dough begins to pull away from the sides of the bowl.
  • Transfer dough mixture to a lightly-floured surface and roll (or pat with your hands) to 1/2-inch thickness.
  • Using a 3-inch round cookie cutter, cut out biscuits and place on lightly greased cookie sheet.
  • Brush the tops of the biscuits with melted butter. Cover loosely with oiled plastic wrap and let rise for 30 minutes.
  • Bake for 15-20 minutes, removing when the tops are lightly browned. Serve immediately.

2 c. flour (I use all purpose)
1/4 tsp. baking soda
1 Tbs. baking powder
1 tsp. salt
1 tsp. sugar
6 Tbs. cold butter
1 c. buttermilk

Steps:

  • Mix dry ingredients in large bowl.
  • Slice butter into chunks and cut in until crumbly.
  • Add buttermilk.
  • Gently mix until everything is moistened and combined. Do not overmix.
  • Place dough onto a floured surface, and roll or pat into a circle about 1 inch thick.
  • Cut circles with biscuit cutter or cup.
  • Place on greased cookie sheet with the sides touching.
  • Bake at 450° for 11 - 13 minutes.

1 (.25 ounce) package active dry yeast
¼ cup warm water (110 degrees F/45 degrees C)
3 cups all-purpose flour, divided
3 cups white sugar, divided
3 cups milk

Steps:

  • In a small bowl, dissolve yeast in water. Let stand 10 minutes. In a 2 quart container glass, plastic or ceramic container, combine 1 cup flour and 1 cup sugar. Mix thoroughly or flour will lump when milk is added. Slowly stir in 1 cup milk and dissolved yeast mixture. Cover loosely and let stand until bubbly. Consider this day 1 of the 10 day cycle. Leave loosely covered at room temperature.
  • On days 2 through 4; stir starter with a spoon. Day 5; stir in 1 cup flour, 1 cup sugar and 1 cup milk. Days 6 through 9; stir only.
  • Day 10; stir in 1 cup flour, 1 cup sugar and 1 cup milk. Remove 1 cup to make your first bread, give 2 cups to friends along with this recipe, and your favorite Amish Bread recipe. Store the remaining 1 cup starter in a container in the refrigerator, or begin the 10 day process over again (beginning with step 2).

I love this bread and I had a craving for it, but didn't want to wait the month it took for the starter to be ready, so, I modified it a bit. It might not be quite as tasty as the original, but it's great if you want it in a hurry! I like to use butterscotch pudding for a different, but really nice flavor! Hope you enjoy!

3/4 cup milk
3/4 cup flour
1 cup oil
1/2 cup milk
3 whole eggs

2 teaspoons cinnamon
1/2 teaspoon salt
1/2 teaspoon baking soda
1 (5 1/8 ounce) box instant vanilla pudding (or flavor of your choice)
1 cup chopped nuts (optional)

Steps:

  • Mix "starter" ingredients together.
  • Mix oil, milk, eggs, and vanilla with the "starter".
  • In a separate bowl, mix flour, sugar, baking powder, cinnamon, salt, baking soda, vanilla pudding mix, and nuts.
  • Add to liquid mixture and stir thoroughly.
  • Pour into two large well-greased 9x5 inch loaf pans, one Bundt pan, or 48 muffin tins.
  • Bake at 325F for one hour or until done (muffins will take only 30-35 minutes) and enjoy!
