Can you freeze mashed potatoes? You bet you can! I always make these potatoes and give them to my kids when they go away to school. All they have to do is keep it in freezer until it's mashed potato time! -Jessie Fortune, Pocahontas, Arkansas

Number Of Ingredients 7

5 pounds potatoes (about 9 large), peeled and cut into chunks
2 tablespoons butter, softened
1 cup sour cream
2 packages (3 ounces each) cream cheese, cubed
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain. , In a large bowl, mash potatoes with butter. Beat in the sour cream, cream cheese, onion powder, salt and pepper. Transfer 1-1/2 cups to a 2-cup baking dish coated with cooking spray. Bake, uncovered, at 350° for 30-35 minutes or until heated through. , Cool remaining mashed potatoes. Freeze in 1-1/2-cup portions for up to 6 months., To use frozen potatoes: Thaw in the refrigerator. Bake as directed.

10 pounds potatoes
1 pound cream cheese
1 pint sour cream
1/2 cup minced onion
1 1/2 tablespoons salt
1/2 cup butter
pepper to taste
milk to desired consistency

Steps:

  • Peel, cook, drain, and thoroughly mash potatoes.
  • Add rest of ingredients and enough potato water or milk to make softconsistency.
  • Put into greased casserole dishes.
  • Bake at 350 for 45 minutes to an hour or freeze until needed.
  • This amount serves 25.

  • Cut potatoes into slices or chunks and place in large cooking pot. Cover with water, and place the lid on.
  • Bring to boil over high heat. Reduce temperature to medium and cook for about 15 - 20 minutes, or until fork tender. You'll want them nice and soft so they are easier to mash without having lumps.
  • Meanwhile, as you're waiting for your potatoes to cook, you can prepare the brown butter. Place 3 Tbs. salted butter into a saucepan or small skillet. Melt over medium heat, and continue cooking until it smells nutty and looks slightly browned. It may continue browning a bit more after removing it from the heat, so keep your eye on it. You don't want it burned.
