- in a sauce pan combine sugar cornstarch flour and orange rine and whisk til flour is disolved
- add orange juice water lemon juice soy sauce horseradish mustard whisk til combined 3 to 5 minutes
- place the roast into shallow baking pan and tie the roast so it don't fall apart, NO web stockings in a small bowl combine equal parts of thyme, ground ginger, salt and pepper and rub on top and sides of roast. then pour sauce mixture over the roast and bake at 325 for 3 hours
ROAST PORK LOIN WITH BLOOD ORANGE MOSTARDA

- Make the pork: Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Tie the pork with kitchen twine at 1-inch intervals so it keeps its shape. Combine 2 tablespoons olive oil, the zest and juice of 1 blood orange, the garlic, rosemary, coriander, 1 1/4 teaspoons salt and a few grinds of pepper in a small bowl. Rub all over the pork. Set a rack in a large roasting pan; put the pork on the rack and let stand at room temperature, 30 minutes.
- Meanwhile, quarter the remaining 3 blood oranges (do not peel). Transfer to a rimmed baking sheet along with the red onions. Drizzle with the remaining 1 tablespoon olive oil and season with salt and pepper.
- Roast the pork on the lower oven rack until golden brown and a thermometer inserted into the center registers 145 degrees F, about 1 hour 10 minutes. About halfway through, roast the oranges and onions on the upper oven rack until softened and just starting to char, 25 to 30 minutes; set aside until ready to serve. Remove the pork from the oven and let rest 10 minutes.
- Meanwhile, make the mostarda: Combine the blood orange juice, wine, 1 cup water, the raisins, sugar, honey, mustard seeds, rosemary and 1 tablespoon mustard in a medium saucepan; bring to a boil over medium-high heat, then reduce the heat to medium low and simmer until thick and syrupy, 30 to 35 minutes. Remove the rosemary sprig and stir in the remaining 1 tablespoon mustard and the vinegar. Season with salt and pepper. Set aside until ready to serve. (The mostarda can be made up to 4 hours ahead; reheat before serving.)
- Untie the pork and slice; transfer to a platter along with the roasted oranges and onions. Serve with the mostarda.

ONE-POT PORK WITH ORANGE, OLIVES & BAY

- Heat 1 tbsp of the sundried tomato oil in a large, flameproof casserole dish. Toss the pork in the flour, tap off any excess, then brown it in 2 batches, transferring to a large bowl once golden and crusted. Use a splash more oil for the second batch if needed.
- Tip 1 tbsp oil, shallots, onion, bay leaves and thyme into the pan and fry for 5 mins until golden here and there. Stir in the garlic and sundried tomatoes, cook for 1 min more, then tip onto the pork.
- Splash the wine and orange juice into the dish, add the orange zest and boil hard for 5 mins. Add the meat and onions back in.
- When ready to cook, heat oven to 160C/140C fan/gas 3. Stir the stock, canned tomatoes, potatoes and olives into the casserole, then bring to a simmer. Prod the potatoes as far under the surface of the liquid as you can. Cover, leaving a slight gap to one side, then cook in the oven for 2½ hrs, or until the meat is tender enough to cut with a spoon. Spoon away any excess fat and let the stew rest for a few mins before ladling into shallow bowls.

BLOOD ORANGE ROAST PORK LOIN

- Position rack in center of oven; preheat to 450°F. Using vegetable peeler, remove peel (orange part only) in strips from 3 blood oranges. Place pork in large roasting pan. Rub with 2 tablespoons olive oil; sprinkle with salt and pepper. Toss onion, orange peel, and rosemary leaves with remaining 1 tablespoon oil in medium bowl; sprinkle with salt and pepper. Arrange onion mixture around pork. Roast until pork and onion are beginning to brown, about 25 minutes.
- Meanwhile, squeeze enough juice from oranges to measure 3/4 cup; pour juice into small saucepan. Add wine, broth, and garlic. Boil until reduced to 1 1/4 cups, about 7 minutes.
- Add 1/2 cup orange juice mixture to roasting pan. Baste pork with pan juices. Reduce oven temperature to 350°F; continue roasting pork until thermometer inserted into thickest part of pork registers 150°F, basting often and adding more orange juice mixture as needed, about 30 minutes longer.
- Place pork on platter and cover loosely with foil. Place roasting pan over medium-high heat; add remaining 3/4 cup orange juice mixture to pan. Boil until slightly thickened, about 3 minutes. Remove strings from roast. Slice pork; place on platter. Pour sauce and onion mixture over and around pork. Garnish with rosemary sprigs and orange slices.
ROASTED PORK LOIN WITH ORANGE AND SAGE SAUCE
Steps:
- Arrange the pork in a shallow baking dish and coat with 2 tablespoons olive oil. Let stand at room temperature for 30 minutes Preheat an oven to 400 degrees and position an oven rack in the upper portion of the oven. Season the pork on both sides with salt and pepper. Place a medium skillet on the stove over moderately high heat, add remaining oil and when shimmering, carefully add the pork. Brown on all sides, about 3 minutes per side. Transfer the pork to the oven and roast until an instant read-thermometer inserted into the center registers 145 degrees. Transfer the pork to a carving board and leave to rest for at least 10 minutes before carving. Return the skillet to the stove over a medium heat and add the shallots. Saute until softened, about 3 minutes. Add the white wine. Using a wooden spoon, scrape the bottom of the skillet to remove the fond. When the wine has reduced by half, add the broth and orange juice and reduce by half, or until thickened. Finish with butter, if desired. Mix in the chopped sage, taste and season with salt and pepper. To Serve: Carve the pork tenderloin against the grain and arrange between 4 warmed dinner plates. Spoon the orange and sage sauce over and serve immediately.

- Heat oven to 450 degrees or heat broiler, adjusting rack so that it is about 4 inches from heat source. Put an ovenproof skillet large enough to hold pork in one layer on stove top and turn heat to high. Sprinkle meat with salt and pepper. Brown meat quickly on both sides, then transfer skillet to oven or broiler.
- Meanwhile, combine orange juice, cayenne, cumin and shallots in a small saucepan and turn heat to medium. Cook, stirring, until it reduces to about 1/3 cup; taste and add salt as necessary, a touch more cayenne and cumin if you like, and some vinegar or lemon juice if sauce lacks acidity.
- If broiling, turn meat once; if roasting, don't bother. When meat is firm but not tough and a little pink in center (about 10 minutes if broiling, 15 if roasting), remove it to a platter. Combine orange rind with parsley. Spoon sauce over meat, then top with orange rind-parsley mixture. Serve.

- Preheat oven to 300 degrees.
- Do not pound or flour the meat. Heat oil in a heavy skillet over high heat, then sear meat on both sides.
- Meanwhile, in a large roasting pan, combine soy sauce, coffee, bay leaves, garlic, oregano and one of the sliced onions.
- Transfer the browned meat to the roasting pan.
- Top with the second sliced onion.
