AMARETTI
This is the classic Italian almond macaroon. When first baked they are crispy on the outside and chewy on the inside. As they sit, they get crunchy throughout. Delicious with any fruit dessert.

Steps:
- Preheat oven to 300 degrees F (150 degrees C). Line baking sheets with parchment paper.
- In a food processor, grind the almonds into a fine meal. Add the sugar and continue to process for another 15 seconds. Finally, add egg whites and almond extract, continue to process until a smooth dough forms around the blade.
- Using a teaspoon, place well rounded spoonfuls of dough onto prepared baking sheets. Cookies should be at least 1 1/2 inches apart. Bake in preheated oven for 20 to 30 minutes. Cookies should be golden. Allow cookies to cool completely on the paper before removing. Store in a dry place.

Steps:
- 1. Sift flour and baking powder 3-4 times through sieve.
- 2. In a separate bowl, mix food color, saffron and yogurt.
- 3. Now mix yogurt mixture into sifted flour and baking powder. Use warm water (if need). Put aside this batter for 1-2 hours.
- 4. Place a pan with 2 cup water, rose water and sugar on the stove. Cook it till sugar melts and it changes to sticky golden syrup. Turn off stove and add cardamom powder/essence and stir it for a few minutes.
- 5. In another pan, heat oil for wok frying.
- 6. Pour batter in a ketchup dispenser.
- 7. Squeeze batter from dispenser over the heated oil in coiled circles. Do this randomly to make a thick coil. Fry till light golden.
- 8. Remove it from oil and put it directly into the golden syrup.
- 9. Soak it into the syrup for approximately 5 minutes then remove and place it in a dry serving dish.

- To make this simple imarti recipe at home, just grind some green cardamom into a fine powder and keep it aside. Then take a deep bottomed pan and put it on medium flame, and pour water along with sugar. Allow the blend to cook for 10 minutes and once the syrup attains two string consistency turn off the flame and add some cardamom powder and saffron strands.
- Add urad dal to a bowl and pour fresh water into it. Keep the bowl aside for 3 hours to the max. Once urad dal is completely soaked in water and is ready to be used, drain the remaining water out of the bowl.
- Now, add the soaked urad dal to a mixer jar along with water, cornflour and pour 2 drops of yellow food colour in it. Grind all the ingredients into a paste.
- Pour the prepared paste into a pastry bag. Then take a wide-based pan and heat some ghee in it and once the ghee is hot enough, pour the paste through the pastry bag in such a manner that you attain a flower-like shape with circular petals.
