Mint Chocolate Poke Cake made with a cake mix, hot fudge, chocolate pudding and a mint flavored whipped cream topped with chopped Andes mints. Decadent but easy chocolate cake recipe!

1 15.25 oz chocolate cake mix ((along with eggs, oil and water required))
1 12.8 oz jar hot fudge
1 3.4 oz box instant chocolate pudding mix
2 cups milk
2 cups heavy whipping cream
1/3 cup sugar
1/2 tsp mint extract
green food coloring
1 cup Andes mints (chopped (about an 8.5 oz bag))

Steps:

  • Preheat oven to 350°. Grease a 9X13 pan.
  • Prepare cake according to package instructions. Remove from oven once baked and use the handle of a wooden spoon to poke holes in even intervals all over the top of the cake (about 1" apart). Make sure to only poke the holes about 3/4 of the way into the cake- don't go all the way to the bottom.
  • Remove the lid from the fudge and heat in the microwave for about 30 seconds. Remove and stir and then microwave again for another 30 seconds, stirring until smooth. If the hot fudge is still too thick to pour, you can warm it for another 15-30 seconds. Pour the hot fudge evenly all over the top of the cake.
  • Let the cake cool completely and then make the pudding layer. Mix the pudding mix and milk together for 2 minutes and then pour over the cooled cake.
  • Place in the fridge to set up for 1-2 hours.
  • Whip the whipping cream until soft peaks form and then add the sugar, mint extract and green food coloring. Continue to whip until stiff peaks form and then spread over the cake.
  • Sprinkle the chopped Andes mints on top. Refrigerate until ready to serve.

1 chocolate cake mix (including the ingredients on the box)
1 12.8 oz jar of hot fudge
1 package instant chocolate pudding mix
2 C milk
2 C heavy whipping cream
1/3 C sugar
1/2 TSP mint extract
green food coloring
1 C andes mint chopped candies

Steps:

  • Preheat oven to 350 degrees.
  • Grease and flour a 13x9 inch baking dish.
  • Prepare cake per the package instructions.
  • Pour into prepared dish and bake for 20-25 minutes, until a testercomes out clean.
  • Remove from the oven and poke holes all over the top of the cake.
  • Heat the hot fudge for 30 seconds, until it is relatively smooth.
  • Pour over the cake while hot.
  • Let cool completely.
  • In a bowl mix together pudding mix and 2 cups of milk for 2 minutes.
  • Pour over cooled cake.
  • Place in the fridge and let stand for about an hour.
  • Whip heavy cream to soft peaks.
  • Slowly add sugar and mint extract.
  • Beat until stiff peaks.
  • Add food coloring and stir until combined.
  • Spread whipped topping over the top of the cake.
  • Sprinkle with chopped candies.
  • Store in the fridge.

1 package chocolate cake mix (regular size)
FROSTING:
1/2 cup butter, softened
2 cups confectioners' sugar
1 tablespoon water
1/2 teaspoon peppermint extract
3 drops green food coloring
TOPPING:
1-1/2 cups milk chocolate chips
6 tablespoons butter, softened
1/4 teaspoon peppermint extract

Steps:

  • Prepare cake batter according to package directions, using a greased 15x10x1-in. baking pan. , Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack., In a large bowl, combine the frosting ingredients until smooth. Spread over cooled cake. , For topping, in a microwave, melt chocolate chips and butter; stir until smooth. Stir in extract. Spread over frosting. Refrigerate until set.

1 cup boiling water
2 cups sugar
1 3/4 cups flour
3/4 cup cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
2 eggs
1 cup buttermilk (OR 1 cup milk mixed with 1 tablespoon vinegar)
1/2 cup oil
1 teaspoon vanilla
1 cup Andes Mints, chopped
MINT BUTTERCREAM FROSTING:
2 sticks (1 cup) unsalted butter, room temperature
6 cups powdered sugar
1 teaspoon vanilla extract
1 teaspoon peppermint extract
Green food coloring
1/2 cup milk (may use less)
GANACHE:
1 cup semi-sweet chocolate chips
1 cup heavy cream
1 teaspoon vanilla extract

Steps:

  • Cake: Heat oven to 350 degrees. Line the bottom of three 8 inch cake pans with wax paper and spray the sides of the pan with cooking spray. Bring some water to a boil and keep it simmering while you mix the other ingredients. In a large mixing bowl combine the sugar, flour, cocoa, baking soda, baking powder and salt. Add the eggs, buttermilk, oil and vanilla. Beat with mixer until combined. Add 1 cup of the boiling water and carefully stir until it is mixed in. Beat for 1 1/2 minutes with mixer. Shake the chopped Andes Mints in a ziploc bag with a tablespoon of flour, until they are lightly coated. Fold the mints into the batter and pour into prepared pans. Bake for 20-23 minutes (until toothpick inserted in center comes out clean). Mint Buttercream Frosting: Mix butter, sugar, vanilla, peppermint and food coloring on low speed in large mixing bowl. Gradually add milk until you reach the desired consistency. Keep covered. Ganache: Place the chocolate chips in a metal bowl. Heat cream over medium heat. Watch it closely and immediately remove from heat when it starts to boil. Pour over chocolate chips. Let stand for 1 or 2 minutes. Then slowly stir the mixture until all the chips have completely melted. Stir in the vanilla. Allow the ganache to cool and slightly thicken before you use it. Let it sit at room temperature for a couple hours, or put in the refrigerator if you want to speed things up. Start pouring the ganache over the center of your cake, and slowly move outward in circles. You can actually cut this recipe in half and still have enough to cover the cake. But you will love having leftovers to pour over ice cream, drizzle over cupcakes...so many possibilities! Cover and store refrigerated for up to 2 weeks.

1 1/4 cups water
1/3 cup vegetable oil
3 eggs
1 (14 ounce) can sweetened condensed milk
1 (11.75 ounce) jar hot fudge sauce
1/2 cup butter (softened)
2 Tablespoons milk
2 cups powdered sugar
1 teaspoon peppermint extract
4 drops green food coloring
1 (4.6 ounce) package Andes mints (coarsely chopped)

Steps:

  • Heat oven to 350 degrees. Grease bottom of a 9 x 13 inch pan.
  • Prepare cake mix according to package directions (Betty Crocker calls for the water, oil, and eggs as listed above).
  • Bake for 30 to 35 minutes or until done.
  • Using a fork or spoon handle, poke holes over the entire cake after taking it from the oven.
  • Pour sweetened condensed milk over the cake, letting it soak into the holes.
