SUNNY'S TATER TOT PIE

3 tablespoons olive oil
1 1/2 pounds ground chuck (80 percent beef, 20 percent fat)
2 teaspoons Worcestershire sauce
1/2 teaspoon hot Hungarian paprika, plus more for sprinkling
Kosher salt and coarsely ground black pepper
2 tablespoons tomato paste
1/2 cup beef stock
1 cup chopped Vidalia onion
2 carrots, peeled and grated
2 zucchini, cut into thin strips
1 red bell pepper, seeded and cut into thin strips
8 ounces shredded Havarti cheese
One 32-ounce bag frozen tater tots, fried as instructed on the package

Steps:

  • Preheat the oven to 375 degrees F.
  • In a large pan on medium-high heat, add the oil. When the oil begins to swirl, add the beef, Worcestershire sauce, paprika, a pinch of salt and a few grinds of pepper. Cook until the meat is browned, 6 to 8 minutes. Stir in the tomato paste and saute for a few minutes to intensify the flavor. Add the stock and bring to a simmer. Season again and remove the mixture to a bowl with a slotted spoon, leaving the fat in the pan.
  • In the same pan, add the onions and cook until almost tender. Then add the carrots, zucchini, bell peppers, a pinch of salt and a few grinds of pepper. Cook, tossing, until the vegetables are tender but still a bit crunchy, 6 to 8 minutes. Remove from the heat.
  • In the bottom of a 13-by-9-inch casserole dish in this order, layer half of the beef mixture, pressing it down to level it, and then sprinkle half of the cheese evenly over the beef. Pour the remaining half of the beef over the cheese and press down to level as well. Add the vegetables, followed by the remaining cheese; press to level. Top with the tater tots in a neat row like little soldiers. Sprinkle the top with paprika and bake until the edges on the tots turn golden brown, 25 minutes.

ANDRé SOLTNER'S ROAST CHICKEN

"I can only roast chicken the way I roast chicken," the chef André Soltner told The Times's Molly O'Neill in 1991. Mr. Soltner, then the chef of the celebrated Lutece in Manhattan, was explaining a controversial step in his recipe for the bird, which results in marvelously juicy, flavorful meat. When the internal temperature of the bird has come up to around 158 degrees on a meat thermometer, he adds a teaspoon of water to the roasting pan, turns off the heat of the oven, and allows the chicken to steam gently for three minutes. "For the soft breast," he said. Thyme, tarragon and onion, along with a shower of salt and pepper and just a little butter, do the rest of the work. Amazingly, perhaps, the skin stays crisp. It's a method well worth trying.

2 sprigs fresh thyme
3 sprigs fresh tarragon, removing and reserving the leaves of 1 sprig
2 small white onions, halved
1 poussin or small chicken (about 20 ounces)
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 tablespoons peanut oil
2 sprigs fresh parsley
1/4 cup white wine
1/4 cup chicken broth
2 tablespoons minced Italian parsley
1 tablespoon butter

Steps:

  • Preheat the oven to 450 degrees. Place the thyme, 2 of the tarragon sprigs, the parsley sprigs and onions in the cavity of the chicken; season inside and out with the salt and pepper.
  • On the stove, heat a roasting pan over high heat. Add the peanut oil and the chicken and brown on all sides, about 1 to 2 minutes per side. Remove from the heat and place in the oven. Roast for 20 to 25 minutes, basting frequently, or until a meat thermometer reaches between 158 and 160 degrees when inserted in the thigh.
  • Immediately drop 1 teaspoon of water in the roasting pan, close the oven door and turn off the heat. After 3 minutes, remove the pan from the oven and place the bird on a platter. Carefully drain the fat from the pan and place on top of the stove over medium heat. Add the wine and, using a wooden spoon, scrape the pan well. Add the chicken broth, the reserved tarragon leaves and the parsley. Simmer for 2 minutes and then remove from heat. Whisk in the butter and serve immediately over the chicken.

Number Of Ingredients 22

2 cups all purpose flour
1 teaspoon salt
3/4 cup (1 1/2 sticks) chilled unsalted butter, cut into 1/2-inch cubes
1 large egg
2 tablespoons (or more) cold water
1 pound white onions, halved lengthwise, thinly sliced crosswise (about 5 cups)
2 cups dry white wine
1/4 cup red wine vinegar
1/4 cup olive oil
2 tablespoons tomato paste
2 tablespoons sugar
1 large fresh thyme sprig
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 Turkish bay leaf
8 ounces fingerling or baby Dutch yellow potatoes
2 large egg yolks
2/3 cup whipping cream
1/8 teaspoon salt
Pinch of ground black pepper
Pinch of ground nutmeg
6 ounces Saint André cheese, cut into 6 slices

Steps:

  • Blend flour and salt in processor. Add butter; using on/off turns, cut in butter until coarse meal forms. Add egg and 2 tablespoons cold water. Blend until moist clumps form, adding more cold water by teaspoonfuls if dry. Gather dough into ball; flatten into disk. Wrap in plastic and chill 1 hour. (Can be made 1 day ahead. Keep chilled.)
  • Preheat oven to 375°F. Roll dough out on lightly floured surface to 1/8-inch thickness. Cut out 5-inch rounds, gathering scraps and rerolling dough as needed to make 6 rounds total. Transfer rounds to six 4 1/2-inch-diameter tart pans with 3/4-inch-high sides and removable bottoms. Press dough onto bottom and up sides of each pan, extending 1/8 inch above tart pan edge. Bake crusts until golden brown, pressing down with back of fork if bubbles form, about 22 minutes. Cool.
  • Preheat oven to 400°F. Mix first 10 ingredients in 13x9x2-inch metal baking pan. Bake until onions are golden and almost all liquid is absorbed, stirring every 20 minutes, about 2 hours. Cool. Remove thyme sprig and bay leaf.
  • Meanwhile, place potatoes in small saucepan. Add enough water to cover by 1 inch. Boil until potatoes are tender when pierced with knife, about 10 minutes. Drain; cool. Cut potatoes crosswise into 1/4-inch-thick rounds.
  • Preheat oven to 325°F. Whisk yolks, cream, salt, pepper, and nutmeg in small bowl to blend. Divide onions among crusts, spreading evenly. Arrange potato slices in single layer over onions. Divide egg mixture among pies.
  • Bake pies until edge of filling is set, about 7 minutes. Top each pie with 1 slice cheese. Bake until cheese melts, about 4 minutes. Cool slightly. Remove sides from tart pans and serve pies warm or at room temperature.

I thought I better post this so that I would know where it is every time I go to make it. I am tired of searching through umpteem books each time. It is my husband's favorite dish and if I have to be honest I really enjoy it as well. It's a supper dish found in both Monmouthshire and the Welsh counties, traditionally served with pickled beets or pickled red cabbage. We like it with crusty brown bread and pickled beets. It's delicious!

2 lbs potatoes, peeled and cut into quarters
1/4 pint milk
1 ounce butter
4 ounces grated strong cheddar cheese (or similar cheese)
salt and white pepper
2 -3 ounces white breadcrumbs, lightly crisped
melted butter, to brush over the top

Steps:

  • Boil the potatoes in salted water until cooked.
  • Preheat oven to 425*F.
  • Drain the potatoes well, add the milk and butter and mash until smooth, then stir in the cheese and seasoning.
  • Butter a 1 1/2 to 2 pint pie dish and sprinkle with the breadcrumbs, pressing them to the base and sides with the back of a spoon.
  • Spoon the potato and cheese mixture into the dish and rough up the top with a fork.
  • Brush with the melted butter.
  • Bake for 20 to 30 minutes or until golden brown.
  • Serve with pickled beets or red cabbage and thick slices of crusty brown bread (buttered of course!).

Pastry for a 2-crust, 9-inch pie
5 ounces thick-sliced mild smoked bacon
1 1/4 pounds smooth skinned Long Island or Maine potatoes, peeled and sliced thin
1/4 cup finely chopped parsley
Salt and freshly ground black pepper to taste
4 hard-cooked eggs, peeled and sliced thin
1/2 cup creme fraiche or heavy cream

Steps:

  • Line the bottom of a nine-inch pie pan with a little more than half of the pastry and chill. Reserve and chill the remaining pastry.
  • Cut the bacon strips crosswise into pieces a quarter-inch wide. Sautee the bacon until just beginning to brown around the edges. Drain on absorbent paper.
  • Wash the potato slices in cold water to remove excess starch. Drain and dry them. Toss with parsley and season to taste with salt and pepper. Make a layer of overlapping slices of potato in the pastry shell, using half the potatoes. Cover with the pieces of bacon, then arrange the egg slices over the bacon and top with the rest of the potato. Spread with the creme fraiche. Refrigerate.
  • Preheat the oven to 400 degrees.
  • Roll out the remaining dough into a circle to fit the top of the pie. Beat the remaining egg yolk with a teaspoon of cold water, brush the edges of the pastry, cover the pie and crimp and seal the edges. Brush the top with egg wash and cut several decorative slits in it.
  • Bake for 20 minutes. Lower the oven temperature to 350 degrees and bake 50 minutes longer, then lower the heat to 300 degrees and bake another 10 minutes. Allow the pie to rest 10 minutes before cutting and serving.
