Nonstick cooking spray
2 1/2 cups all-purpose flour
3/4 cup natural cocoa powder
1 teaspoon baking soda
1/2 teaspoon kosher salt
2 sticks (1 cup) plus 2 tablespoons butter, softened
1 cup granulated sugar
1 cup lightly packed light brown sugar
2 extra-large eggs
1 teaspoon pure vanilla extract
1 teaspoon peppermint extract
1 cup chocolate chips
1 cup mint chips (or chopped Andes Chocolate Mints)

Steps:

  • Preheat the oven to 350 degrees F and lightly coat a baking sheet with cooking spray. Sift the flour, cocoa powder, baking soda and salt into a medium bowl and set aside.
  • With a hand or stand mixer, cream the butter and both sugars until fluffy. Add the eggs, vanilla and peppermint extracts and mix well.
  • Add the dry mixture to the butter mixture and mix well. Stir in the chocolate chips and mint chips.
  • Roll the dough into 1 1/2-inch balls and place them on the prepared baking sheet. With two fingers, press the cookies down to about 1 inch thick, keeping the cookies about 2 inches apart.
  • Bake for 15 to 18 minutes, or until not glossy. Let the cookies cool on a wire rack.

3/4 cup white sugar
1 cup brown sugar
1 cup butter, softened
1 tablespoon vanilla
2 large eggs, slightly beaten
3 cups all-purpose flour
3/4 teaspoon baking soda
3/4 teaspoon salt
3 cups semi-sweet chocolate chips
1 cup walnuts, chopped or 1 cup pecans

Steps:

  • Preheat oven to 350 degrees.
  • Cream sugars and butter.
  • Add vanilla and eggs and mix well.
  • Combine dry ingredients together and gradually add to creamed mixture.
  • Stir in chips and nuts.
  • Roll into 1 1/4" balls and place on non-stick cookie sheets, about 2" apart.
  • Bake for 10 to 12 minutes.

½ cup chopped walnuts
2 cups semisweet chocolate chips

Steps:

  • Thoroughly cream sugars, margarine, oil, egg, milk and vanilla.
  • Add dry ingredients, nuts and chocolate chips.
  • Drop by teaspoon onto ungreased cookie sheets. Bake at 350 degrees F (175 degrees C) for 8-12 minutes. (Cookies are light in color when done.)

300 g/2 1/4 cups All-purpose flour
6 g/1 tsp Baking Soda
6 g/1 tsp Salt (pref. Kosher)
150 g/3/4 cup Sugar
142 g/3/4 cup Brown Sugar
227 g/1 cup Unsalted Butter
1 large Egg plus one egg yolk
1 tsp Vanilla extract
2 cups Chocolate Chips

Steps:

  • **it is key to follow this exactly** Preheat oven to 375 degrees. Melt butter and then allow to cool completely. Beat egg and yolk together and slowly mix in with butter. In a medium bowl - combine flour, baking soda and salt In a mixer - blend sugars and butter/egg mixture. Add vanilla Slowly mix in flour mixture into sugar mixture until combined. Be sure to not over mix!!! This is crucial. Fold in chocolate chips. Using a #20 disher (or an ice cream scoop) - dish onto parchment paper lines sheets. Bake for 15-17 minutes. Allow to sit on cookie sheet for two minutes before removing to cooling rack. Enjoy!

1 teaspoon cinnamon
1 teaspoon baking soda
1 teaspoon salt
1/4 teaspoon freshly grated nutmeg
2 1/2 sticks (1 1/4 cups) unsalted butter, softened
3/4 cup packed light brown sugar
1/2 cup granulated sugar
1 large egg
1 teaspoon vanilla
1 3/4 cups old-fashioned rolled oats
1 1/4 cups sweetened flaked coconut

Steps:

  • Preheat oven to 375°F.
  • Into a small bowl sift together flour, cinnamon, baking soda, salt, and nutmeg. In a large bowl with an electric mixer beat together butter and sugars until light and fluffy. Beat in egg and vanilla and stir in flour mixture, oats, and coconut until combined well.
  • Arrange rounded tablespoons of dough about 3 inches apart on ungreased baking sheets and with moistened fingers flatten mounds into 3-inch rounds. Bake cookies in batches in middle of oven until golden, 10 to 12 minutes. Cool cookies on sheets 1 minute and transfer with a metal spatula to racks to cool completely. Cookies keep in an airtight container at room temperature 5 days.
