A creamy lime topping turns angel food cake into these yummy squares that are perfect for potlucks or picnics. "You can eat a piece of this light and airy dessert without feeling one bit guilty," notes Beverly Marshall of Orting, Washington. "I adapted this luscious treat from another recipe. It is super-easy to make."

Ingredients

1 package (.3 ounce) sugar-free lime gelatin
1 cup boiling water
1 prepared angel food cake (8 inches), cut into 1-inch cubes
1 package (8 ounces) reduced-fat cream cheese, cubed
1/2 cup sugar
2 teaspoons lemon juice
1-1/2 teaspoons grated lemon zest
1 carton (8 ounces) reduced-fat whipped topping, thawed, divided

Steps:

In a small bowl, dissolve gelatin in boiling water. Refrigerate until mixture just begins to thicken, about 35 minutes. Place cake cubes in a 13x9-in. dish coated with cooking spray; set aside., In a small bowl, beat cream cheese until smooth. Beat in the sugar, lemon juice and zest. Add gelatin mixture; beat until combined. Fold in 1-1/2 cups whipped topping. , Spread over top of cake, covering completely. Refrigerate for at least 2 hours or until firm. Cut into squares; top with remaining whipped topping.

Ingredients

1 prepared angel food cake (8 to 10 ounces), cut into 1/2-inch cubes
1-1/2 cups cold 2% milk
1 teaspoon coconut extract
2 packages (3.4 ounces each) instant vanilla pudding mix
1 quart vanilla ice cream, softened
1 cup sweetened shredded coconut, divided
1 carton (8 ounces) frozen whipped topping, thawed

Steps:

Place cake cubes in a greased 13-in. x 9-in. dish. In a large bowl, whisk the milk, extract and pudding mixes for 2 minutes (mixture will be thick). Add ice cream and 3/4 cup coconut; beat on low just until combined. , Spoon over cake cubes. Spread with whipped topping. Toast remaining coconut; sprinkle over top. Cover and chill for at least 1 hour. Refrigerate leftovers.

1 1/2 cups cold milk
2 (3 ounce) packages instant coconut cream pudding mix
1 quart vanilla ice cream, softened
1 (8 ounce) carton Cool Whip
1/4 cup toasted coconut

Steps:

Place cake cubes in greased 13 x 9 baking dish.
In mixing bowl, beat milk and pudding mixes on low speed for 2 minutes.
Add ice cream and beat on low just until combined.
Spoon over cake cubes.
Spread with whipped topping, then sprinkle with coconut.
Cover and chill for at least 1 hour.

1 (18 ounce) box angel food cake mix
1 (14 ounce) can lemon pie filling
1/3 cup sliced almonds
1/4 cup flaked coconut

Steps:

Combine cake mix with pie filling.
Put in sprayed 9x13 pan.
Top with almonds and coconut.
Bake at 350F for 30 minutes.
(Lemon pie filling can also be substituted with pumpkin pie filling. Add 1 teaspoons cinnamon sprinkled over top before baking along with the other toppings.).
