ANTIPASTO PASTA SALAD



Antipasto Pasta Salad image

Number Of Ingredients 14

1/2 teaspoon kosher salt, plus additional for salting pasta water
1 pound fusilli
1/2 cup olive oil
1/4 cup white wine vinegar
1 tablespoon chopped fresh oregano
1 teaspoon honey
4 tablespoons grated Parmesan
Freshly ground black pepper
One 12-ounce jar marinated artichoke hearts, drained and chopped
One 12-ounce jar roasted red peppers, drained and sliced into 1/4-inch strips
One 4.6-ounce jar Kalamata olives, drained and chopped
8 ounces fresh mozzarella, cut into cubes
4 ounces sliced salami, cut into quarters
2 tablespoons torn fresh basil

Steps:

  • Bring a pot of generously salted water to boil and cook the fusilli per package instructions. Drain and set aside.
  • Whisk together the oil, vinegar, oregano, honey, 2 tablespoons Parmesan and salt and pepper in a large bowl. Add the warm pasta, then toss to coat and sprinkle with the remaining 2 tablespoons Parmesan. Add the artichokes, red peppers, olives, mozzarella and salami and toss well to combine. Sprinkle with fresh basil.

PASTA ALLA LADD

2 tablespoons olive oil
1/2 large onion, diced
2 cloves garlic, minced
2 pounds ground beef
1 generous teaspoon ground thyme
Red pepper flakes, to taste
Salt and freshly ground black pepper
Two 14-ounce cans whole tomatoes
1 1/2 to 2 pounds rigatoni
1/4 to 1/2 cup freshly grated Parmesan, plus more for serving

Steps:

  • Heat the olive oil in a large skillet or pot over medium-low heat. Add the onions and cook until starting to turn translucent, a couple of minutes. Add the garlic and stir, cooking 1 minute, making sure not to brown the garlic.
  • Add the ground beef and cook until brown. Drain off most of the excess fat. Add the ground thyme, red pepper flakes and some salt and pepper. Stir to combine. Dump in the canned tomatoes with their juices. Stir, reduce the heat to low and cover the pot. Cook for 30 minutes, stirring a couple of times. Uncover the pot and cook an additional 30 minutes.
  • Cook the rigatoni according to the package directions--don't overcook! Drain and place individual portions into bowls.
  • Stir 1/4 to 1/2 cup grated Parmesan into the sauce. Check and adjust the seasonings. Ladle the sauce over the cooked pasta, top with more Parmesan and serve with extra Parmesan for sprinkling.

1 (16 ounce) bottle Italian salad dressing
2 cucumbers, chopped
6 tomatoes, chopped
1 bunch green onions, chopped

Steps:

  • Bring a large pot of lightly salted water to a boil. Place pasta in the pot, cook for 8 to 12 minutes, until al dente, and drain.
  • In a large bowl, toss the cooked pasta with the Italian dressing, cucumbers, tomatoes, and green onions. In a small bowl, mix the Parmesan cheese and Italian seasoning, and gently mix into the salad. Cover, and refrigerate until serving.

1 (8 ounce) package uncooked tri-color rotini pasta
6 ounces pepperoni sausage, diced
6 ounces provolone cheese, cubed
1 red onion, thinly sliced
1 small cucumber, thinly sliced
¾ cup chopped green bell pepper
¾ cup chopped red bell pepper
1 (6 ounce) can pitted black olives
¼ cup minced fresh parsley
¼ cup grated Parmesan cheese
½ cup olive oil
¼ cup red wine vinegar
2 cloves garlic, minced
1 teaspoon dried basil
1 teaspoon dried oregano
½ teaspoon ground mustard seed
¼ teaspoon salt
⅛ teaspoon ground black pepper

Steps:

  • Bring a large pot of lightly salted water to a boil. Add rotini pasta, and cook for 8 to 10 minutes, until al dente. Drain, and rinse with cold water.
  • In a large bowl, mix the cooled pasta, pepperoni, provolone cheese, red onion, cucumber, green bell pepper, red bell pepper, olives, parsley, and Parmesan cheese.
  • In a jar with a lid, mix the olive oil, vinegar, garlic, basil, oregano, ground mustard, salt, and pepper. Seal jar, and shake well.
  • Pour the dressing mixture over the pasta salad, and toss to coat. Cover, and chill 8 hours in the refrigerator

6 tablespoons salad seasoning mix
1 (16 ounce) bottle Italian-style salad dressing

1 (2.25 ounce) can black olives, chopped

Steps:

  • In a large pot of salted boiling water, cook pasta until al dente, rinse under cold water and drain.

1 jar (10 ounces) pimiento-stuffed olives, drained and sliced

10 to 12 cherry tomatoes, quartered

The salad is great for lunch boxes, or as a side dish served warm or cold. Use three-color pasta, if possible. 5 oz (150 g) pasta bows (farfalle)
2 oz (60 g) green beans
1/2 cup (60 g) sliced carrots
1/2 cup (100 g) frozen corn
4 cherry tomatoes, quartered
2 Tbsp (30 g) grated onion
4 Tbsp vegetable oil
1 Tbsp white wine vinegar
2 Tbsp water
1/2 tsp chopped fresh ginger
1 Tbsp chopped celery
1 Tbsp soy sauce
1 1/2 tsp tomato paste
1 tsp superfine sugar
salt and pepper, to taste

Steps:

  • Bring a pot of lightly salted water to a boil, add the pasta, and cook until tender, about 10 minutes, or according to package instructions.
  • Meanwhile, put the beans and carrots in a steamer and cook for 4 minutes. Add the corn to the steamer and cook for 3-4 minutes, or until tender.
  • Combine all the ingredients for the dressing in a blender or food processor, adding only a little salt and pepper, and process until smooth. Combine the cooked pasta with the vegetables and cherry tomatoes and toss with some of the dressing.
  • Variation: Add 2 Tbsp (30 g) diced cucumber, 1/2 cup (75 g) diced cold chicken or tuna to this salad, and vary the vegetables, according to taste.
