HOW TO GRILL HAMBURGERS ON A GAS GRILL

How to Grill Hamburgers on a Gas Grill image

Learn how easy it is to grill the best juicy burgers on your gas grill. We will cover it all from the choice of meat, seasoning, grill temperature, how long to grill, and final internal temperature.

Provided by Dan Mikesell AKA DrDan

Categories     Grill     Main Course

Time 19m

Number Of Ingredients 3

1 pound ground beef ( 80/20. Use 1/3 to 1/2 pound per burger.)
Salt and pepper to taste OR 7:2:2
buns and fixings

Steps:

  • Preheat grill on high. Clean and oil grill grates.
  • Start with 80/20 ground beef and divide it into 1/3 to 1/2 pound balls. They are the size of a tennis ball and then form into patties about 3/4 inch thick and about 4-inch diameter. Safety note: Always wash your hands for safety before and after touching ground meat.
  • Give them a good sprinkle of salt and pepper on both sides. I'm using my 7:2:2 (salt, pepper, garlic).
  • THE BIG SECRET TO GOOD RESULTS. Press one inch round 1/4 inch deep indentation into the center of one side.
  • Grill over direct heat with a closed lid preferred, but you can do open grilling if you prefer. Flip after 5 minutes.
  • Grill another 3-4 minutes and check the temperature. Get to 160° to 165°, then add cheese for about 30-60 seconds if using cheese. Times are given as estimates. You are cooking to the final internal temperature and NEVER by time alone.
  • I don't feel a great need to rest the meat before serving. By the time you place it on the bun and do things to it, it has been enough time.

WELL-DONE HAMBURGERS ON A CHARCOAL GRILL

Well-Done Hamburgers on a Charcoal Grill image

This is from Cook's Illustrated Magazine. I like the burgers made with ground turkey or beef. The bread and milk really keeps them from drying out.

Provided by KathyP53

Categories     Poultry

Time 30m

Yield 4 serving(s)

Number Of Ingredients 9

1 slice good quality white bread, crust removed and cut into 1/4-inch pieces
2 tablespoons milk
3/4 teaspoon salt
3/4 teaspoon ground black pepper
1 medium garlic clove, minced
2 teaspoons steak sauce (like A-1)
1 1/2 lbs lean ground chuck (or ground turkey)
6 ounces sliced cheese
4 hamburger buns

Steps:

  • Mash bread and milk in large bowl with fork until homogeneous (you should have about 1/2 cup). Stir in salt, pepper, garlic, and steak sauce.
  • Break up meat into small pieces over bread mixture. Using fork or hands, lightly mix together until mixture forms cohesive mass. Divide meat into 4 equal portions. Gently toss one portion of meat back and forth between hands to form loose ball. Gently flatten into 3/4" thick patty that measures about 4 1/2" in diameter. Press center of patty down with fingertips until it is about 1/2" thick, creating slight depression in each patty. Repeat with remaining portions of meat.
  • LIghtly dip wad of paper towels in vegetable oil; holding wad with toongs, wipe grill cooking grate. Grill burgers on hot side of grill, uncovered, until well seared on first side, 2-4 minutes. Using wide metal spatula, flip burgers and continue grilling, about 4 minutes. Add cheese about 2 minutes before reaching desired doneness, covering burgers with disposable aluminum foil to melt cheese.
  • While burgers grill, toast buns on cooler side of grill. Serve on buns with desired toppings.
