1 cup raisins
½ cup hot water
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups quick cooking oats
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 cup packed brown sugar
½ cup chopped walnuts
2 eggs
¾ cup vegetable oil
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Soak raisins in hot water and set aside.
  • In large bowl, sift flour with soda, salt and spices. Blend in rolled oats, sugar and nuts. In a separate bowl, beat eggs with fork and add oil, vanilla, and raisins and water mixture. Pour into dry ingredients, stirring until well mixed. Drop by teaspoonfuls about two inches apart onto ungreased cookie sheets.
  • Bake 10 to 13 minutes in the preheated oven, until the edges are golden.

1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon ground cinnamon
1/2 teaspoon salt
1 stick unsalted butter, room temperature
2/3 cup packed light-brown sugar
1/3 cup granulated sugar
1 large egg
1 teaspoon pure vanilla extract
1 1/2 cup old-fashioned rolled oats
1/2 cup golden raisins

Steps:

  • Preheat oven to 350 degrees. Sift flour,baking powder, baking soda,cinnamon, and 1/2 teaspoon saltinto a bowl. Beat butter andsugars until pale and fluffy. Mixin egg and vanilla, then flourmixture. Mix in oats, then raisins.
  • Using a 1 1/4-inch ice creamscoop (or 1 tablespoon), dropdough onto parchment-linedbaking sheets, spacing eachscoop about 2 inches apart. Bakeuntil edges are golden, about14 minutes. Let cookies cool ona wire rack.

1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon cinnamon

1/2 cup unsalted butter, room temperature
2/3 cup packed light brown sugar
1/3 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 1/2 cups old fashioned oats
1/2 cup golden raisin

Steps:

  • 1. Preheat oven to 350. Sift flour, backing powder, baking soda, cinnamon, and 1/2 t salt into a bowl. Beat butter and sugars until pale and fluffy. Mix in egg and vanilla, then flour mixture. Mix in oats, then raisins.
  • 2. Using a 1 1/4 inch ice cream scoop (or 1 T), drop dough onto parchment-lined baking sheets, spacing each scoop about 2 inches apart. Bake until edges are golden, about 14 minutes. Let cookies cool on a wire rack.

1 1/2 cups (3/4 pound) unsalted butter
1 cup granulated sugar
1 teaspoon vanilla extract
2 teaspoons sifted baking soda
2 3/4 cups Quaker's old-fashioned oatmeal
2 2/3 cups all-purpose flour
1 1/2 cups raisins

Steps:

  • Preheat oven to 375 degrees.
  • Butter a cookie sheet and line with baker's parchment.
  • Cream butter and sugar until light and fluffy. Stir in vanilla, Add sifted baking soda amd stir in. Add oatmeal, flour and raisins and stir in thoroughly. Mix well.
  • Using your hands, form dough into balls, each just a little larger than a walnut. Place them about one inch apart on parchmentlined cookie sheet.
  • Bake 20 to 25 minutes or until pale golden brown.
  • Remove from paper and cool on rack. Although delicious when warm, these are really meant to be eaten cold.
  • When cookies have cooled completely, pack in airtight containers.

Full of nubby oats and plenty of sweet raisins, these lightly spiced cookies are pleasingly chewy in the center and crisp around the edges, with a hint of butterscotch from the dark brown sugar. They keep really well, so you can make them up to a week in advance and store them in an airtight container at room temperature. They're also great for mailing when a package of cookies is in order.

1 cup/227 grams (2 sticks) unsalted butter, softened, more for pans
1 cup/200 grams dark brown sugar, packed
1/3 cup/66 grams granulated sugar
2 large eggs
1 tablespoon/15 milliliters vanilla extract
1 1/2 cups/187 grams all-purpose flour
3/4 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon ground cardamom or ground ginger
3 cups/270 grams rolled oats (not instant)
1 1/2 cups/225 grams raisins

Steps:

  • Heat oven to 350 degrees. Butter two large cookie sheets, or line them with parchment paper or reusable silicone liners.
  • Using an electric mixer, beat butter in a large bowl until creamy. Add brown and granulated sugars, then beat until fluffy, about 2 minutes. Beat in eggs, one at a time, until fully incorporated. Then, beat in vanilla extract.
  • In a separate bowl, use a wooden spoon or spatula to mix together the flour, salt, baking soda, cinnamon, nutmeg and cardamom. Set mixer on low speed, and beat flour mixture into the butter mixture. Stir in oats and raisins.
  • Spoon out dough by large tablespoonfuls onto prepared cookie sheets, leaving at least 2 inches between each cookie.
  • Bake until cookie edges turn golden brown, about 9 to 13 minutes. Centers will still be quite soft, but they will firm up as the cookies cool. Cool completely on a wire rack. Store in an airtight container at room temperature.
