Make-Ahead Pizza Casserole image

Take just 20 minutes to put together this pasta bake, and dinner for the next night is done!

1 lb mild Italian pork sausage
2 cups water
1 can (15 oz) pizza sauce
1 can (14.5 oz) diced tomatoes with sweet onion, undrained
4 cups uncooked rotini pasta (10 oz)
1 can (2 1/4 oz) sliced ripe olives, drained
1 1/2 cups shredded mozzarella or pizza cheese blend (6 oz)

Steps:

  • In 10-inch skillet, cook sausage over medium-high heat 8 to 10 minutes, stirring frequently, until no longer pink; drain.
  • In ungreased 13x9-inch (3-quart) glass baking dish, mix water, pizza sauce and tomatoes. Stir in cooked sausage, uncooked pasta and olives (pasta should be completely covered with sauce). Cover tightly with foil; refrigerate at least 8 hours or overnight.
  • When ready to bake, heat oven to 350°F. Stir casserole; cover with foil and bake 1 hour to 1 hour 15 minutes or until bubbly.
  • Uncover baking dish; stir mixture. Sprinkle with cheese; bake uncovered 5 minutes longer or until cheese is melted.

I can't recall where I got this recipe from, but it is a very simple casserole that is very good too! Your little ones will love it for sure!

1 ½ pounds lean ground beef
1 (15 ounce) can pizza sauce
1 (4 ounce) can sliced mushrooms, drained
¼ cup sliced pitted ripe olives
1 cup shredded mozzarella cheese, or more to taste
1 (10 ounce) can refrigerated biscuit dough

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Stir in sauce, mushrooms, and olives. Cook and stir until heated through, about 2 minutes more. Transfer mixture to a 2-quart rectangular baking dish. Sprinkle mozzarella cheese on top of the casserole.
  • Flatten each biscuit with your hands and arrange on top of the cheese.
  • Bake in the preheated oven until biscuits are golden, 15 to 17 minutes.

1/4 cup sliced black olives
24 ounces (2 1/2 cups) store-bought or homemade marinara sauce
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1 teaspoon dried basil
1 teaspoon dried oregano
2 cups shredded mozzarella cheese
4 ounces pepperoni slices

Steps:

  • Preheat the oven and prepare the casserole dish: Preheat the oven to 375°F. Grease a 9x13-inch casserole dish with cooking spray. Set it aside.
  • Cook the pasta: Fill a large pot with water, season the water generously with salt, and bring it up to a boil over high heat. Cook the pasta in the boiling water according to the package instructions, until al dente. Strain the pasta into a colander placed in the sink and set it aside.

Steps:

I add a little brown sugar to the sauce to cut back on acidity and I like to add minced garlic. I received this through a recipe swap in 2000 from Sharon S. Runyan.

1 onion, chopped
1 tablespoon vegetable oil
1 teaspoon garlic powder
2 (8 ounce) packages shredded mozzarella cheese
1/4 teaspoon onion powder
1 (15 1/2 ounce) can spaghetti sauce
2 cups cooked macaroni
1 (4 ounce) package sliced pepperoni (prosage for vegetarians-YUMMY!)

Steps:

  • Brown beef and onion in oil.
  • Cook until onion is tender.
  • In a bowl, combine spaghetti sauce, garlic and onion powders.
  • Mix well and combine with the macaroni and the beef and onion mixture.
  • In a 2-quart casserole, layer the meat/macaroni mixture with the shredded cheese and pepperoni; ending with the cheese.
  • Bake, uncovered, in a preheated 350 degree oven for 30 minutes or until hot and bubbly.
