3/4 c. all-purpose flour
1/4 tsp. granulated sugar
1/4 tsp. Coarse salt
6 tbsp. cold unsalted butter
1 tbsp. ice water
For the Filling
3 Rome apples
4 McIntosh apples
1 c. cranberries
c. packed light-brown sugar
1 tbsp. fresh lemon juice
3 tbsp. all-purpose flour
1/2 tsp. salt
2 tbsp. unsalted butter
1 tbsp. heavy cream
2 tsp. coarse sugar

Steps:

  • Make crust: In a food processor, pulse flour, sugar, and salt until combined. Add butter; pulse until mixture resembles coarse meal with a few pea-size pieces of butter remaining. Sprinkle with 1 tablespoon ice water. Pulse until dough is crumbly but holds together when squeezed (if necessary, add 1 tablespoon more ice water). Do not overmix. Form dough into a 1-inch-thick disk, wrap tightly in plastic, and refrigerate until firm, at least 1 hour (or up to 2 weeks). On a floured piece of parchment, roll out dough to 1/8-inch thickness. Refrigerate until firm, about 20 minutes.
  • Make filling: Preheat oven to 375 degrees F. In a large bowl, toss together apples, cranberries, brown sugar, lemon juice, flour, and salt. Transfer to a 2-quart baking dish; dot with butter. Tear or cut dough into pieces (around 3 inches square). Lay dough pieces, overlapping slightly, over apple mixture. Brush dough with cream and sprinkle with coarse sugar. 2 cups all-purpose flour
2 tablespoons baking powder
2 teaspoons coarse salt
4 pints blueberries
1/2 teaspoon cinnamon, ground
1/2 teaspoon nutmeg, ground
3 tablespoons sugar
1 cup light molasses
2 tablespoons unsalted butter
Whipped cream, for garnish

Steps:

  • Preheat oven to 375 degrees.
  • In a mixing bowl, whip the cream until stiff peaks form. In a separate bowl, blend together the flour, baking powder and salt. Fold in the heavy cream until just combined. On a lightly floured surface, roll out the dough to 1/2-inch thickness. Set aside. In a separate bowl, toss the blueberries with the cinnamon, nutmeg and sugar. Transfer to a 9-inch baking dish and drizzle with molasses and butter pieces. Top with dough and tuck into the mixture. Cut vents in the top of the dough. Bake for 30 minutes or until golden. Serve with whipped cream sweetened with molasses.

An old fashioned recipe my mother has made since 1954. You add a cooked syrup over the apples, and top with a flour combination topping. It is a different type of apple cobbler you will really enjoy. You can serve plain or top with milk or ice cream.

4 cups peeled and sliced apples
1 cup brown sugar
¼ cup all-purpose flour
2 tablespoons vinegar
1 cup water
1 teaspoon vanilla extract
1 tablespoon butter
1 cup all-purpose flour
2 teaspoons baking powder
2 ½ tablespoons shortening
¾ cup milk

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 9-inch square baking dish. Layer the sliced apples evenly into the baking dish.
  • Mix together brown sugar and 1/4 cup flour in a saucepan, and stir in vinegar and water until the mixture is well blended and the sugar has dissolved. Bring to a simmer over low heat, and stir constantly until the mixture has thickened, about 3 minutes. Remove from heat, let cool for about 10 minutes, and stir in the vanilla extract and butter. Pour the mixture over the apple slices in the pan.
  • Mix together 1 cup flour and the baking powder in a bowl until there are no more lumps, and cut the shortening into the flour mixture until the mixture forms crumbs the size of peas. Stir in the milk, and spread the batter over the apples and syrup.
  • Bake in the preheated oven until the topping is golden brown and the apples are tender, about 35 minutes.

Steps:

  • For filling:

  • Place crust atop filling. Fold dough edges under; crimp decoratively. Using small knife, cut eight 1-inch squares in crust, spacing apart and cutting through crust but leaving squares in place.
  • Bake until crust is dry but still pale, about 35 minutes. Increase temperature to 400°F. Sprinkle crust with 1 tablespoon sugar; continue to bake until apples are tender, crust is golden, and juices bubble, about 35 minutes (mixture will be syrupy). DO AHEAD: Can be made 2 days ahead. 4 pounds Pink Lady and/or Granny Smith apples, peeled, cored, cut into 1-inch pieces
2/3 cup (packed) dark brown sugar
3 tablespoons all-purpose flour
1 teaspoon finely grated lemon zest
2 tablespoons fresh lemon juice
1 tablespoon vanilla extract
2 teaspoons ground cinnamon
1 (1/2-inch) piece ginger, peeled, finely grated
1/2 teaspoon kosher salt
1 package frozen puff pastry (preferably Dufour), thawed, cut into irregular 1-inch pieces
Granulated sugar (for sprinkling)
2 pints vanilla ice cream

Steps:

  • Preheat oven to 425°F. Cook butter in a small saucepan over medium, swirling often, until bubbling and golden, about 5 minutes; set aside.
  • Toss apples, brown sugar, flour, lemon zest, lemon juice, vanilla extract, cinnamon, ginger, and salt in a large bowl. Transfer to a shallow 3-quart baking dish. Drizzle all but 2 Tbsp. brown butter over apples. Top with pieces of puff pastry, then brush pastry with remaining brown butter. Sprinkle with granulated sugar.
  • Bake until pastry is puffed and golden around edges, 25-30 minutes. Reduce temperature to 350°F and bake until juices are thick and bubbling and pastry is brown all over, 30-35 minutes longer.
  • Using a spoon, press pastry down into warm juices (but don't submerge); let cool slightly. Serve warm with ice cream.
  • Do Ahead
  • Pandowdy can be made 1 day ahead. Let cool. Cover loosely with foil and store at room temperature. Reheat uncovered in a 200°F oven 20 minutes before serving.

1/2 recipe flaky pie dough
3 tablespoons light molasses
1/3 cup firmly packed light brown sugar
3 tablespoons all-purpose flour
8 Golden delicious apples, peeled, cored and sliced
1/2 cup dried cranberries
2 teaspoons grated lemon peel
2 teaspoons ground cinnamon
1 1/2 teaspoons grated gingerroot
1/2 teaspoon freshly grated nutmeg
1/4 teaspoon ground clove
3 tablespoons cold unsalted butter, cut into bits
2 tablespoons heavy cream
2 tablespoons cinnamon sugar
Heavy cream as an accompaniment

Steps:

  • Preheat oven to 400 degrees F. Make pastry and chill 30 minutes.
  • In large heavy saucepan combine molasses, sugar, flour, apples, cranberries, spices, lemon peel and 3 tablespoons of butter. Bring to boil and simmer 15 minutes, stirring occasionally, or until apples are softened. Transfer to a 2-quart baking dish and dot with butter.
  • On a lightly floured surface roll out pastry into a round about 1/8-inch thick and trim it so that it will just fit inside the baking dish. Cover fruit with pastry, brush with cream and sprinkle with sugar. With the point of a small sharp knife cut three steam vents in the center of the crust. Bake for 25 to 30 minutes, or until golden brown.
  • Remove baking dish from oven and with a sharp knife cut the crust and fruit into 2-inch pieces, pushing crust into fruit with back of a spatula so that juices bubble up over top of crust. Bake 15 minutes more. Serve warm with cream.

3.5 lbs Apples (about 6-7, cut into quarter inch slices)
1 cup Cranberries (fresh, or thawed if frozen)
1/3 cup Brown sugar (packed)
3 Tbsp All-purpose flour
1 Tbsp Lemon juice
1 tsp Cinnamon
1/4 tsp Nutmeg
1/4 tsp Cloves
1/4 tsp Allspice
2-3 Tbsp Butter (cut into pats)
1 Pie crust
1 Tbsp Milk
2 tsp Turbinado sugar

Steps:

  • Prepare your favorite pie crust (see recipe notes for mine) as instructed in the recipe, and set aside. Preheat your oven to 375 degrees F.
  • In a large bowl, mix the apples and cranberries together. Top with brown sugar, flour, lemon juice, and spices. Toss until well combined, and transfer the apple mixture to a cast iron skillet, and dot with the pats of butter
  • Roll out the pie crust until it's large enough to fit over your skillet. Then top in one of two ways: Either place the entire crust over top the filling, and use a sharp knife to cut a tiles into the crust, or cut it into 1-inch tiles first, and scatter those over the top of the filling.
  • Brush the top of the crust pieces with milk, and sprinkle evenly with the turbinado sugar. Bake for 1 hour, or until the filling is bubbling, and the crust is golden brown on top.
  • Let cool for at least 20-30 minutes. Serve warm with fresh whipped cream or a scoop of cinnamon ice cream. This is best served immediately, but will keep covered tightly in plastic wrap at room temperature for a couple days. Just warm in the microwave before serving.

Apple Pandowdy image

Apple pandowdy is a bit like an apple pie but with fluffy cake on top. When I was growing up, we had an apple tree in the back yard. The apples were too tart to eat raw, but they were delicious in baked desserts. This is the first one I ever made on my own. You can substitute molasses for brown sugar like I normally do, and I use vanilla paste instead of vanilla extract. You can also omit the bourbon, if desired.

8 apples, preferably Golden Delicious, about 3 pounds, peeled, cored, and cut into 8 slices, each

  • In a large bowl, combine apples, molasses, lemon juice, bourbon, 2 Tbs. flour, cinnamon, 1 teaspoons vanilla and nutmeg.
  • Let stand 15 minutes.
  • Arrange mixture evenly in baking dish; dot with reserved butter.
  • Set aside.
  • Melt remaining butter; cool slightly.
  • Combine ½ cup sugar, baking powder, salt, and remaining flour.
  • In bowl beat together eggs, milk, melted butter, and remaining vanilla.
  • Stir milk mixture into flour batter until ingredients are just combined.
  • The batter will be very thick.
  • Spoon batter over apple mixture, spreading as needed to cover apples and allow batter to drip down between apples.
  • Sprinkle batter with remaining sugar.
  • Bake 40-45 minutes or until crust is golden and filling is bubbly.
  • Serve with cream, if desired.

But why leave the baking to the grocery stores or bakery when puff pastry is a simple, high-quality stand-in for the original? In this Crostada, the sheet dough is baked free-form with ingredients piled on top. Couldn't be easier!

3 tablespoons butter
2 pounds Granny Smith apples (or other firm, crisp apples), peeled, quartered, cored and sliced 1/4-inch thick
1 pound Macintosh apples (or other soft-textured apples that fall apart when cooked), peeled, quartered, cored, and sliced 1/4-inch thick
½ cup sugar
½ cup dried cranberries
1 sheet frozen puff pastry, thawed but still cold (follow package directions)
1 egg white, lightly beaten
1 tablespoon sugar
1 cup Optional: Ice cream or lightly sweetened whipped cream

Steps:

  • Heat butter in a large skillet over medium-high heat. Add apples, 1/2 cup sugar and cranberries; cover and cook until apples release their liquid, about 5 minutes. Remove lid and continue to cook, stirring frequently, until soft apples fall apart and juices thicken to a thin-syrup consistency, about 5 minutes longer. Pour onto a large-lipped cookie sheet or jellyroll pan and cool to room temperature. (Can be refrigerated in an airtight container up to 5 days.)
  • Adjust oven rack to low position and heat oven to 400 degrees. Open puff pastry sheet on a lightly floured work surface. Roll into a rectangle, about 10 by 16 inches. Transfer to a large cookie sheet. (I suggest lining the sheet with parchment paper; this ensures the crostada doesn't stick and allows easy cleanup.)
  • Spread cooked apples over pastry, leaving a 2-inch border. Fold up pastry borders over apples. Unfold corners and form ruffled creases to keep dough from overlapping. Brush pastry border with egg white and sprinkle with the remaining 1 Tb. sugar. Bake until pastry is golden brown, 25 to 30 minutes. Serve warm or at room temperature with optional ice cream or whipped cream.
