Adding grated apple to bulk pork sausage yields tangy, flavorful breakfast patties. - 1 In a bowl, combine the sausage, apple, bread crumbs, cream and egg yolk and stir until well blended. Stir in the salt and pepper. Divide the mixture into 12 equal portions and shape each portion into a patty 2 inches in diameter and 1/4 inch thick. Arrange the patties on a rimmed baking sheet or tray and refrigerate for 15 minutes, or cover tightly with plastic wrap and refrigerate overnight. Bring to room temperature before cooking. 2 Preheat an oven to 200 degrees F. 3 Place a large fry pan over medium-low heat and lightly brush it with canola oil. Place 4 of the patties in the pan and fry until browned on one side, about 3 minutes. Carefully flip the patties and fry until browned on the other side and cooked through, about 4 minutes more. Transfer the patties to an ovenproof dish and keep warm in the oven. 4 Cook the remaining patties in the same way, oiling the pan between batches. Keep warm until ready to serve. Arrange the patties on a serving platter and serve immediately. 5 Serves 6.
GRILLED SAUSAGES WITH CARAMELIZED ONIONS AND APPLES
Apples, onions, and grilled sausages make a perfect meal for autumn. Try it served with boiled or roasted new potatoes, a mix of fresh vegetables, and some warm crusty bread! Use any dinner sausage--bangers, turkey, beef, bratwurst, whatever you like!

- Prepare grill for high heat.
- With a fork, poke sausages several times. Place in a pot, cover with water, and simmer over medium-high heat until cooked through, about 7 minutes. Remove from heat, and set aside.
- Warm butter in a skillet over medium heat. Stir in onions, and cook until soft and translucent. Stir in apples, vinegar, and brown sugar; cook, stirring gently, until caramelized, about 10 to 15 minutes. Season with salt and pepper.
- Meanwhile, place sausages on grill (or under broiler), and cook until well browned. Serve on a mound of caramelized apples and onions.

- Mix ingredients in large bowl. Divide mixture into 16 (1 1/2 x 2-inch) balls and flatten each ball into a 1/3-inch-thick patty.
- HEAT a large frying pan over moderate heat; spray with no-stick cooking spray.
- COOK patties in batches, 3 to 4 minutes each side, until no longer pink in center. Remove from pan; drain on paper towels.
- TRANSFER patties to a serving plate. Serve hot.

PORK SAUSAGE AND APPLE PATTIES
Something different to do with sausage. Makes a very tasty sausage patty with very little effort and simple ingredients. This recipe is from my mother. She made them when I was growing up and I have no idea where the recipe came from.

- Mix all ingredients and form into patties.
- Bake, covered, for 30 minutes at 350° F.
- Uncover and bake for 10 minutes longer.
- Note: If desired, you can slice some additional apples into 1/4 inch thick rings, sprinkle them with a little sugar and bake them at the same time as the patties, covered.
- Serve each patty on an apple ring.

This is a recipe I found online and adapted to suit my family's taste. You can use either Chorizo or regular bulk breakfast sausage, depending on your tastes. They're both good. If you like spicy foods, add a 4 oz can of chopped and drain green chilies.

- Line muffin tins with paper liners, and set aside.
- Fry, crumble and drain sausage.
- Preheat oven to 375 degrees.
- Mix together bisquick, cornmeal, eggs, and milk.
- Add drained sausage, and cheese, and stir well.
- Ladle the filling into the prepared muffin tins, filling almost to top.
- Bake for 11-15 minutes.
- Allow to cool completely.
- Store in freezer in a large airtight container.
- Or place each in a sandwich bag, and then place a dozen in a large ziploc bag.
- Microwave on high for approx 90 seconds.
