BANANA-APPLE CHOCOLATE CHUNK COOKIES
I have searched for gluten-free, sugar-free cookies that didn't taste like hockey pucks and couldn't find any. So I made my own. The banana and the applesauce make these cookies very moist and tasty. They are almost Palo friendly.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
- Mash banana, applesauce, and honey together in a bowl; add almond butter, butter, egg and stir until combined. Add coconut flour, oats, chocolate chunks, tapioca flour, baking soda, cinnamon, and salt to banana mixture, stir until dry ingredients are moist and form a dough.
- Drop rounded tablespoonfuls of dough onto the prepared baking sheet.
- Bake until lightly brown, about 15 minutes. Let cool to room temperature, about 30 minutes.

- Preheat oven to 350. Line cookie sheet with parchment paper.
- Pulse almonds and macadamia nuts in food processor until they are small chunks.
- Add apple and banana to food processor and mix well. Transfer to mixing bowl.
- Mix in the rest of the ingredients.
- Use a cookie scoop to place cookies on pan. Flatten to cookie shape.
- Cook 15-20 minutes until starting to brown on the edges.

BANANA APPLE COOKIES

- Preheat oven to 350 1. Sift together whole wheat flour, baking powder, cinnamon, and sesame seeds; 2. Blend apple, banana, honey and vanilla in blender; 3. mix dry and wet. Stir in oatmeal (and raisins if using); Place tablespoon sized balls of dough 2" apart on cooking-sprayed cookie sheet and flatten. Bake for 20 minutes or until just browning. Cool on rack.
BACON BANANA COOKIES

- Preheat the oven to 400°F. Line a baking sheet with parchment paper and set aside.
- In a large mixing bowl, sift together the flour, baking powder, baking soda, 1/2 teaspoon of the cinnamon, and the salt.
- In a medium mixing bowl, use a hand mixer to cream together the butter and 1 cup of the sugar. Beat in the eggs, one at a time, until they are fully incorporated. Beat in the vanilla. Add the butter mixture to the flour mixture, then stir in the mashed bananas, beating well after each addition. Fold in the bacon.
- Stir together the remaining 1/4 cup sugar and the remaining cinnamon.
- Drop the dough by heaping tablespoons onto the prepared baking sheet 1 inch apart. Sprinkle generously with the cinnamon-sugar and bake for 10 to 12 minutes, until slightly browned. Allow the cookies to cool completely before storing in an airtight container. Cookies will keep for 5 to 7 days.

- Heat the oven to 190C/170C fan/gas 5 and line two baking sheets with baking parchment.
- Heat the butter in a small pan on the hob, or in a heatproof bowl in a microwave on high in 30-second bursts, until melted. Tip the butter into a mixing bowl if melted on the hob.
- Stir the sugar into the melted butter with a wooden spoon, then beat in the egg until smooth. Stir in the mashed banana. Sift the flour, bicarbonate of soda, cinnamon and a pinch of salt into the bowl and mix until it forms a soft dough. Add the raisins, chocolate chips or nuts, if using, and stir well until evenly distributed.
- Use a teaspoon to drop small scoops of the mixture onto the prepared trays, spacing them well apart as they'll spread. It should make about 24 cookies. Bake for 10-12 mins until they are light brown on the edges and feel dry to the touch.
- Leave on the tray for a couple of minutes to set, then lift onto a cooling rack to cool completely. Will keep in an airtight container for up to three days.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a cookie sheet.
- Combine flour, baking powder, and salt in a large bowl. Stir mashed banana, sour cream, and vanilla together in another bowl.
- Cream margarine and sugar in a large bowl with an electric mixer. Beat in eggs. Mix in banana-sour cream mixture until incorporated. Add dry ingredients until well combined. Stir in nuts.
- Drop small spoonfuls of batter onto the prepared cookie sheet; cookies do not expand much in the oven.
- Bake in the preheated oven, checking occasionally, until bottoms are light golden brown and cookies are set but still a tad soft, 10 to 12 minutes. Remove cookies to a rack to cool.
- While the cookies are cooling, prepare frosting: Melt butter in a saucepan over medium-low heat. Stir in brown sugar and reduce heat to low. Stir and bring to a boil. Boil, stirring constantly, for 2 minutes. Remove from heat.
- Stir in 1/4 cup milk and bring to a boil again. Remove from heat and let cool, 10 to 15 minutes.
- Gradually stir in powdered sugar until frosting is desired consistency. If frosting hardens while working, stir in a little bit of milk.
- Spread frosting on cooled cookies.

APPLE, BANANA, OATMEAL TREAT FOR ONE
This is my guilt-free not-to-sweet treat; It is quick and easy in the microwave. I came up with this after falling in love with those new Quaker Oatmeal Breakfast Cookies in apple cinnamon flavor and after eating entirely too many I decided to come up with my own apple induced oatmeal. This makes for a thick oatmeal. Use more soymilk for a thinner oatmeal.

- Mix cubed apple with lemon juice and 1/4 tsp cinnamon, making sure apple is covered evenly.
- Cover, and microwave on high for 3 minutes.
- Remove from microwave and add sliced banana.
- Put aside.
- In separate bowl combine oatmeal, soymilk, and the other 1/4 tsp cinnamon.
- Mix well and microwave on high for 3 minutes.
- Combine apple, banana mixture with oatmeal. Add chopped walnuts.
- Enjoy.
