APPLE BERRY MUFFINS



Apple Berry Muffins image

These light and fluffy muffins are fabulous with tart raspberries, sweet blueberries and moist apples.

1 large egg
1 cup milk
1/2 cup unsalted butter, melted
2 cups all purpose flour
1/3 cup granulated sugar
1 tbsp baking powder
1 tsp salt
1 tsp vanilla extract
1/2 cup frozen raspberries
1/2 cup frozen blueberries
1/2 cup diced fresh apple

Steps:

  • Preheat oven to 400° F . Line 12 muffin cups with paper liners.
  • Melt the butter in a saucepan allow to continue to cook until it browns gently. Browning the butter will happen suddenly and spread quickly, so don't leave the stove during this time. Remove from heat immediately and let cool for 10 minutes.
  • In a large bowl, beat the egg. Beat in milk and butter until well combined. Stir in flour, sugar, baking powder and salt until just moistened. Gently fold in vanilla, raspberries, blueberries and apples.
  • Divide the batter evenly between the muffin cups -- I like to use an ice cream scoop for this step. Bake for 22-26 minutes, until tops are golden brown and a toothpick inserted in the center pulls out clean.
  • Let muffins cool until they can be touched.

2 cups all-purpose flour
½ cup white sugar
3 teaspoons baking powder
½ teaspoon salt
¾ cup apple juice
⅓ cup vegetable oil
1 egg
1 teaspoon ground cinnamon
1 cup apples - peeled, cored and finely diced

Steps:

  • Heat oven to 400 degrees F (205 degrees C). Grease bottoms only of 12 muffin cups or line with baking cups.
  • In a medium bowl, combine flour, sugar, baking powder, cinnamon, and salt; mix well. In a small bowl, combine apple juice, oil, and egg; blend well. Add dry ingredients all at once; stir just until dry ingredients are moistened (batter will be lumpy.) Stir in chopped apples.
  • Fill cups 2/3 full. Bake for 18 to 22 minutes or until toothpick inserted in center comes out clean. Cool 1 minute before removing from pan. Serve warm.

1 ½ cups all-purpose flour
¾ cup white sugar
½ teaspoon salt
2 teaspoons baking powder
1 teaspoon ground cinnamon
⅓ cup vegetable oil
1 egg
⅓ cup milk
2 apples - peeled, cored and chopped
½ cup white sugar
⅓ cup all-purpose flour
½ cup butter, cubed
1 ½ teaspoons ground cinnamon

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease six muffin cups or line with paper muffin liners.
  • Stir together 1 1/2 cup flour, 3/4 cup sugar, salt, baking powder and 1 teaspoon cinnamon. Mix in oil, egg and milk. Fold in apples. Spoon batter into prepared muffin cups, filling to the top of the cup.
  • In a small bowl, stir together 1/2 cup sugar, 1/3 cup flour, butter and 1 1/2 teaspoons cinnamon. Mix together with fork and sprinkle over unbaked muffins.
  • Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into center of a muffin comes out clean.
