Pastry for a double-crust pie (9 inches)
5 cups thinly sliced peeled tart apples (about 5 medium)
1 pint fresh blackberries, rinsed and drained
1 tablespoon lemon juice
3/4 cup sugar
2 tablespoons cornstarch
2 tablespoons butter
1 large egg, room temperature, lightly beaten
1 tablespoon water or whole milk

Steps:

  • On a lightly floured surface, roll out half the dough to fit a 9-in. pie plate; trim to 1 in. beyond rim of plate. Top with a thin layer of apples. In a large bowl, combine blackberries and remaining apples; sprinkle with lemon juice. Combine sugar and cornstarch. Add to fruit mixture; toss gently to coat. Spoon into crust; dot with butter., Roll out remaining dough; make a lattice crust. Trim, seal and flute edges. Beat egg with water; brush over lattice top and pie edges., Bake at 375° for 50 minutes or until filling is bubbly and apples are tender. Cool on a wire rack. Serve warm or at room temperature.

1 teaspoon sugar
1 teaspoon salt
1 teaspoon ground cinnamon
2/3 cup cold butter, cubed

Trim, seal and flute edges. Cut slits in pastry. Add decorative cutouts if desired. Cover edges loosely with foil., Bake at 450° for 10 minutes. Reduce heat to 350°; remove foil. 1 teaspoon salt

Steps:

¼ cup water
½ cup white sugar

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Melt butter in a saucepan over medium-low heat; stir in flour to make a smooth paste. Whisk water, white sugar, brown sugar, and lemon juice into butter mixture. 1/4 cup plus 2 tablespoons granulated sugar
2 tablespoons cornstarch
1/2 teaspoon ground cinnamon

2 1/2 pounds assorted apples (such as Cortland, Empire, Granny Smith, Jonagold, and Macoun), peeled, cored, and cut into 1/4-inch-thick slices
10 ounces (2 1/4 cups) fresh or frozen blackberries, thawed
"Fall Leaves" Pate Brisee
1 ounce (2 tablespoons) cold unsalted butter, cut into small pieces
1 large egg yolk, lightly beaten with 1 tablespoon water, for egg wash
Sanding sugar, for sprinkling

Steps:

  • Whisk together granulated sugar, cornstarch, cinnamon, and salt in a large bowl. Add apples and blackberries, and toss to coat. Pour filling into prepared piecrust, and dot with butter.
  • Preheat oven to 400 degrees with rack in lowest position. Meanwhile, brush rim of piecrust with egg wash. Arrange dough leaves over filling, creating a spiral from the edge into the center, overlapping leaves slightly to cover pie but leaving some openings. Lightly brush tops of leaves with egg wash as you work, to help them adhere. Once filling is covered with leaves, lightly brush top of entire pie with egg wash. Sprinkle with sanding sugar. Freeze for 30 minutes.
  • Place pie on a parchment-lined rimmed baking sheet. Bake until crust is golden, about 20 minutes. Reduce heat to 350 degrees. Bake pie, rotating sheet halfway through, until juices are bubbling in the center and crust is golden brown, 1 hour and 45 minutes to 1 hour and 55 minutes more. Transfer to a wire rack, and let cool completely.

2 cups blackberries (3/4 pound)
1 large Golden Delicious apple, peeled and coarsely grated
2 tablespoons plus 1 teaspoon semolina flour
1/4 teaspoon cinnamon
8 tablespoons sugar
Pastry dough for a double-crust pie
2 tablespoons milk
Special equipment:
2 large (17- by 12-inch) baking sheets; parchment paper

Steps:

  • Cook blackberries, apple, semolina flour, cinnamon and 6 tablespoons sugar in a 2-quart heavy saucepan over moderate heat, stirring frequently, until mixture just boils and is thickened, about 5 minutes. Transfer to a shallow bowl to cool.
  • Put oven racks in upper and lower thirds of oven and preheat oven to 375°F. Line baking sheets with parchment.
  • Roll out half of dough 3/4 inch thick on a lightly floured surface with a lightly floured rolling pin into a 16- by 11-inch rectangle, then trim into a 15- by 10-inch rectangle, reserving scraps. Cut into 6 (5-inch) squares. Place a heaping tablespoon of fruit filling in center of 1 square. Moisten edges of square with milk and fold into a triangle, pressing edges to seal. Transfer to a lined baking sheet and press tines of a fork around edges of triangle. Make 5 more triangles in same manner, arranging them 1 inch apart on baking sheet. Repeat with remaining dough and filling, rerolling all of the scraps together once to make 12 triangles total.
  • Brush triangles with milk and sprinkle with remaining 2 tablespoons sugar. Bake, switching position of pans halfway through baking, until pies are golden, about 30 minutes total. Transfer pies to racks to cool.

Yield Makes 1 large pie, about 25cm/10in (serves 6-8), 2 medium pies, about 18cm/7in each (each serves 3-4) or 4 individual pies, about 10cm/4in each

Number Of Ingredients 12

225g cold unsalted butter , chopped into small pieces
350g plain flour
50g icing sugar
1 large egg yolk (save the white for brushing the pastry)
900g Bramley apple (about 4) peeled, cored, quartered and thinly sliced
140g golden caster sugar , plus extra for sprinkling
1 tbsp fine polenta or ground almonds
1 tbsp cornflour or plain flour, plus extra for dusting
1 ½ tsp ground cinnamon
200g blackberries , halved if very large
egg white , for brushing (reserved from making the pastry)
cream or ice cream, to serve

Steps:

  • Put the butter and flour in a food processor with 1/4 tsp salt and blend until the mixture resembles damp breadcrumbs. Or do this by rubbing the butter and flour together in a big bowl with your fingertips. Add the sugar and briefly whizz again or stir to combine.
  • Whisk the egg yolk with 2 tbsp cold water, and drizzle over the flour mixture. Use the pulse button to blend the mixture once more, keep going until it starts to form larger clumps. If the mixture seems too dry, add a little more water a tsp or 2 at a time, but no more than 3 tsp in total.
  • Tip out onto a work surface and briefly knead the dough to bring it together into a smooth ball. Avoid overworking or it will become tough. Flatten the dough into a puck shape and wrap well in cling film. Chill for at least 30 mins, or for up to 2 days, or freeze for 2 months.
  • Next, make the filling. Put the apples and half the sugar in a large bowl, then stir together until the apples are well coated. Set aside for 30 mins to macerate.
  • Remove the pastry dough from the fridge and divide into 2 pieces, one slightly larger than the other. Re-wrap the smaller piece of dough and set aside. Divide the larger piece of dough into the number of pies you'd like to make, or leave whole for a large one. On a lightly floured surface, roll out the dough to the thickness of a 50p piece, or until large enough to line the base of your pie plate or tin, with a little pastry overhanging. Roll the dough over your rolling pin, lift onto your plate or tins, then press it well into the corners. Scatter the polenta or almonds over the base.
  • Drain any juice from the apples, then toss through the remaining sugar, cornflour and cinnamon. Layer the apples and blackberries in the lined dish, creating a dome effect in the centre. Heat oven to 190C/170C fan/gas 5 and place a baking sheet on the middle shelf.
  • Now choose how you'd like to decorate the top of the pie (see tips below). Once covered, whisk the reserved egg white and brush over the pastry. Scatter with extra sugar, then put the pie on the baking sheet. Bake for 25-30 mins for mini pies, 35-40 mins for medium pies, or 45 mins for a large pie, until the pastry is golden and crisp and the juices are bubbling. Cool for 10 mins before serving with cream or ice cream.

I'm useless at baking, so I mean it when I say 'this easy recipe', which conflates a normal apple pie pastry with a filling inspired by Nigella's 'Apple and Blackberry Kuchen' (in that it also contains almond flakes). I first baked this pie after spending a week in Kent with my girlfriend's family, eating nothing but homemade food, including an incredible apple pie. Upon returning home I was met with great food from my parents yet a lack of dessert, so I made this pie the very next day. While this specific recipe makes a delicious pie, do not think of this as exact instructions, as changes can easily be made to the ingredients to fit personal taste.

350g (or) 3 cups of Plain Flour (plus extra for the filling)
50g (or) 1/4 cup of Golden Caster Sugar
225g (about 7/8 of a stick) of Butter
2 Eggs (+1 for an Egg Wash)

Steps:

  • Preparation: Peel, core and slice into strips the apple, lay out onto a baking sheet and sprinkle over a handful of Sugar. Leave the butter somewhere warm to soften, or if you're feeling brave just microwave for about 20-30 seconds on a low heat. Sift the flour into a large bowl, separate the 2 sugar measurements and whisk the 2 eggs together. This can be messy, so have a cloth at hand ready to clean up the flour. Finally, use a nub of butter to grease the pie dish and line with baking paper.
  • For the pastry: Beat together the softened butter and sugar, or just rub together with hands if the butter is not soft enough. Once combined, add the nutmeg and a capfull of vanilla and mix in the egg until there is little excess liquid and the mixture resembles scrambled egg. Mix in the flour about in 3 parts (makes it easier to mix), just using a wooden spoon, and then your hands when it begins to thicken. Do not overwork the mixture, and if it begins to soften or damped then add a little more flour. Once the mixture is ready, form a clump and roll into a large ball and then sort of flatten into a thick disk shape, about half the size of the original ball. Wrap in cling film and place in the fridge to chill for about 40 minutes.
  • For the filling: Tumble the apples, blackberries and almonds together in a bowl, lined with cling film, then sprinkle the sugar and about 2 tablespoons of flour over and shake through. Add the cinnamon and a capful almond extract over the top of the mixture, then squeeze over the lemon. Put the mixture to one side. Preheat the oven to gas mark 5 (apparently 190°C, 375°F, or 'Fairly Hot')
  • Assembly & Baking: While waiting for the pastry dough to chill, prepare a board and rolling pin with some flour, ready to roll out the pastry. Once the dough is ready, cut about 1/3 off to place back into the fridge and roll the pastry out to a size just large enough to cover the whole dish, leaving a small amount of overhang. Add the filling, then roll out the remaining pastry into a thin sheet. While you could place this whole sheet over the top, I prefer cut it into strips to be placed over the top of the pie in a criss-cross sort of fashion. This stylistic choice also helps the filling cook more evenly and thicken well. Trim the overhang, brush he pie with an egg wash mixed with another capful of Vanilla, and bake for around 40 minutes; it is ready when the pastry is bronzed and crisp.
  • Additional notes: This recipe makes about 8 slices or 6 generous slices (the size of the pie dish I use is, I think, 23cm). Leave to cool for 5-10 minutes befote eating. Any overhang not used can to decorate the pie or can be re-rolled and chilled to make jam tart pastries.
