SPICY SAUSAGE SOUP



Spicy Sausage Soup image

Filled with hot Italian sausage, red peppers and tomatoes. This soup packs a powerful flavour punch!

1 onion, chopped
5 Hot Italian sausages, casing removed
2 garlic cloves, minced
4 cups beef broth
2 tomatoes, chopped
1 red pepper, chopped
1 tbsp. tomato paste
2 tsp. paprika
1/4 tsp. pepper

Steps:

  • Fry first three ingredients in a large frying pan over medium heat for about 8 to 10 minutes or until sausage is no longer pink. Drain the fat. Transfer to a slow cooker.
  • Add remaining ingredients to the slow cooker. Stir. Cook covered on Low for 7 to 8 hours.

2 (16 ounce) packages bulk spicy pork sausage
½ cup chopped onion
4 cloves garlic, minced
2 ¾ (32 ounce) cartons low-sodium chicken broth
1 teaspoon dried Italian seasoning, crushed
8 cups coarsely chopped Swiss chard
1 large Roma tomato, chopped

Steps:

  • Cook sausage, onion, and garlic in a large Dutch oven over medium-high heat, stirring to break up lumps, until sausage is browned, 5 to 10 minutes. Drain grease.
  • Add broth and Italian seasoning; bring to a boil. Reduce heat and stir in Swiss chard; cook until chard is just wilted, about 10 minutes. Stir in tomato; cook until softened, about 5 minutes.
