2 teaspoons salt
1 teaspoon ground black pepper
½ teaspoon dried thyme
2 pounds cubed beef stew meat
3 tablespoons olive oil
2 ½ cups apple cider
¾ cup water
¼ cup apple cider vinegar
1 large bay leaf
4 carrots, sliced
3 potatoes, cubed
2 onions, diced
2 celery stalks, chopped
1 large McIntosh apple, sliced

Steps:

  • Combine flour, salt, pepper, and thyme in a bowl. Toss beef cubes in the flour mixture.
  • Heat olive oil in a Dutch oven or large pot over medium-high heat. Working in batches, brown beef cubes on all sides. Combine browned meat, apple cider, water, and cider vinegar in the pot and bring it to a boil. Add bay leaf; reduce heat to low. Simmer, partially covered, for 1 hour.
  • Stir in carrots, potatoes, onions, celery, and apple and simmer until the vegetables are tender, about 1 hour more.

4 cups frozen vegetables for stew (about 24 ounces), thawed
1 can (8 ounces) sliced water chestnuts, drained
1 jar (4-1/2 ounces) sliced mushrooms, drained
1 tablespoon dried minced onion
2 envelopes brown gravy mix
2 tablespoons onion soup mix
2 teaspoons steak seasoning
1/8 teaspoon ground cinnamon
2 pounds beef stew meat, cut into 1-inch cubes
1 can (14-1/2 ounces) beef broth
1-1/4 cups apple cider or unsweetened apple juice
1 can (8 ounces) tomato sauce
1 bay leaf
3 tablespoons cornstarch
1/3 cup cold water

Steps:

  • Place the vegetables, water chestnuts, mushrooms and onion in a 5-qt. slow cooker. In a large resealable plastic bag, combine the gravy mix, soup mix, steak seasoning and cinnamon; add beef, a few pieces at a time, and shake to coat. 2 pounds beef stew meat, cut into 1-inch cubes
2 tablespoons canola oil
3 cups apple cider or juice
1 can (14-1/2 ounces) reduced-sodium beef broth
2 tablespoons cider vinegar
1-1/2 teaspoons salt
1/4 to 1/2 teaspoon dried thyme
1/4 teaspoon pepper
3 medium potatoes, peeled and cubed
4 medium carrots, cut into 3/4-inch pieces
3 celery ribs, cut into 3/4-inch pieces
2 medium onions, cut into wedges
1/4 cup all-purpose flour
1/4 cup water
Fresh thyme sprigs, optional

Steps:

  • In a Dutch oven, brown beef on all sides in oil over medium-high heat; drain. Add the cider, broth, vinegar, salt, thyme and pepper; bring to a boil. Reduce heat; cover and simmer for 1-1/4 hours. , Add the potatoes, carrots, celery and onions; return to a boil. Reduce heat; cover and simmer for 30-35 minutes or until beef and vegetables are tender. , Combine flour and water until smooth; stir into stew. 1/4 cup tomato paste
1/4 cup apple cider vinegar
1 1/2 teaspoons Worcestershire sauce
1 tablespoon paprika
1 1/2 teaspoons dried herbs, any combination of thyme, oregano and rosemary
3 pounds English-cut short ribs
1 tablespoon plus 1 teaspoon kosher salt, divided
1 large yellow onion, thinly sliced
1 pound red potatoes, unpeeled and diced small
Freshly ground black pepper
1 tablespoon chopped fresh parsley leaves

Steps:

  • In a large mixing bowl, whisk together the tomato paste, cider vinegar, Worcestershire sauce, paprika and dried herbs. Set aside.
  • Season the short ribs with 1 tablespoon of the kosher salt. Place a large griddle over medium-high heat and once a drop of water bounces off, sear the meat until browned on all sides. Once browned, remove the meat to the bowl with the paste and toss to coat. Transfer to a large piece of heavy-duty aluminum foil and seal tightly. Place the package into a metal pan and put into a cold oven on the middle rack. Set the oven to 250 degrees F and cook for 4 hours.
  • Remove the meat from the oven and carefully poke a hole in the pack while holding it over a heatproof container. Drain the liquid into the container and place it into the refrigerator to cool enough so that the fat separates from the rest of the liquid, approximately 1 hour. After 1 hour, transfer the liquid to the freezer and keep there until the fat cap has solidified, approximately 1 hour. Allow the ribs to sit at room temperature while the liquid is cooling or if serving the next day, place in the refrigerator until ready to finish.
  • Retrieve the liquid from the refrigerator and remove the fat cap that has formed on top. Measure out 1 tablespoon of the fat and reserve the rest for another time. Place the fat into a large saucier and place over medium heat. Once the fat has melted add the onion along with the remaining teaspoon of salt and stir to separate the onions into rings. Allow to cook for 2 to 3 minutes, stirring occasionally. Add the potatoes along with a pinch of black pepper and stir to combine. Next, add the liquid reserved from the meat and stir. Cover tightly and decrease the heat to low so that no heat is escaping the lid. Cook for 30 minutes or until the potatoes are fork tender.
  • Meanwhile, cut the meat away from the bone, removing the connective tissue and discarding. Once the potatoes are tender, uncover and set the meat atop the vegetables. Cover and continue to cook for 10 minutes. Serve sprinkled with the parsley.

1 medium onion, halved and sliced

Steps:

  • Combine flour, salt, and pepper.
  • Add beef and toss to coat.
  • In a large saucepan or dutch oven, brown beef in oil.
  • Add cider, water, vinegar, and thyme.
  • Bring to a boil and then reduce heat and simmer for 1 hour or until meat is tender.
  • Add carrots, potato, and onion.
  • Return to a boil and then reduce heat and simmer 45 minutes or until vegetables are tender.

  • Season the beef with salt and pepper and sprinkle it with the flour. Place a large pot, or Dutch oven over medium-high heat, add the oil and heat until it shimmers, and add the meat in a single layer; don't crowd the meat, you may have to brown it in two batches. When it is browned on the bottom, after about 2 minutes, turn it and brown the other side for about 2 minutes (you do not need to brown all sides of the pieces of meat). Transfer the browned meat to a large plate. Pour off all but two tablespoons of any remaining fat in the pan (if there is a bit less, that's fine, too).
  • Heat 2 tablespoons of oil in the same pot, over medium heat and sauté the onions, leeks and thyme until they are very soft and lightly browned, about 10 minutes. Remove the leek mixture to the plate with the beef.
  • Return the pan to medium high heat and add the brandy, if using. Scrape the bottom of the pan to loosen the browned bits. Add 1 1/2 cups of the cider and continue to stir, scraping up the flavorful bits on the bottom of the pan. Stir in the cider vinegar and tomato paste, then return the meat and leek mixture to the pot. Lower the heat to medium low, and cook the stew at a gentle simmer for, partially covered, 2 hours, until the meat starts to become tender. Add more cider if the stew starts to look dry - you want some good sauciness.
  • After 2 hours, add the potatoes and carrots, and cook for another 30 to 40 minutes until the vegetables are tender. You may need to add still more cider towards the end if the stew looks like it needs more liquid.
